Homemade fruit vinegars and infused vinegars, whats the difference??

[Music] foreign [Music] [Music] i've had a lot of questions about my fruit infused vinegars and the vinegars that i make out of different berries and stuff like that so i thought i'd do just a little bit of a a short video here and i'm even going to show you how to make some really good vinaigrette out of these uh fruit vinegars now i've got different kinds sitting here you can see i've got them in all different kinds of uh jars and bottles and stuff this one right here is a raspberry that uh been fermenting for about four weeks now and i'm fixing to strain this off now i've been using it off and on but now i feel like i can strain the berries off and it's good to go this right here is some of my blueberry vinegar and you can see that i use it this is a pineapple vinegar and when you do pineapple vinegars you want to use the core of the pineapple or if you want to use uh some of the the fruit off the pineapple you can do that too but the one thing that i don't use is the outer layer the skin or whatever the peel off of a pineapple for one thing i'm not i don't know you know how clean you can even get the outside pineapple so i just don't even go there so i use the core mainly and i use some of the fruit if i have some left over but mainly the core and the core of a pineapple is where a lot of your nutrients come from this jug right here is strawberry vinegar and i've had this for a while um i love strawberry vinegar and i i dearly love the vinaigrette that i make out of it it's just really good especially on a good uh strawberry salad that you've got strawberries and blueberries and some nuts and and different lettuces and stuff it's just so good so i and you can use this in cooking too i've got and i've got to make some more but this is what's left of my pear vinegar and i make my pear vinegar just like you would your apples your apple cider vinegar i just make it out of the peels of my pears and then i've got a little bit of my apple cider vinegar and it's got a really good mother the mother right there on the bottom you probably can't see it but it's it's about an inch and i've got to make some more of it so that's what i've got in my pantry right now and i've got to start making some more for sure now we're going to come over here and i want to show you the difference this is infused vinegar this is where you start with distilled vinegar and you just place your fruit or your herbs in there and you just infuse that distilled vinegar this on this side is where i use my fruit uh and fruit peels to make vinegar and the process is with the fruit water and just a little bit of sugar just to help activate and feed that fermentation so over here i've got this i just put some distilled white vinegar in my jar and i had a pretty good size pineapple core left over and i'd stuck that in there and it's infused vinegar now it's about that easy and it's oh it smells wonderful and it's going to make some really good vinaigrette this right here i took distilled white vinegar and i had some rosemary stems that i put in there because you know the stems even once you take the rosemary leaves off you've got this dried stem and it has so much flavor and and just the aroma of the the rosemary on the stem is pretty stout so i've got rosemary in here and i've got some thyme and i'm just infusing my vinegar so it'll be rosemary and thyme vinegar and i will make vinaigrette regret all this too in fact we're going to do some vinaigrette here in a minute out of it it smells wonderful now i'm going to show y'all this is a jar that's about two years old and this is what i make my cleaner out of my countertop cleaner and it's just lemon and orange peels it's even got some lemon flesh in it not just the peel it's got a mint it's got rosemary um i'm trying to thank all that's in here it may have some lemon balm in it but this jar is about two years old and what i do is i start with my vinegar put vinegar in here and then i start putting my lemon peels and my orange peels you know when you are cooking with lemon or whatever you just start i just start putting them in this vinegar jar and uh maybe one day we had some oranges and i stuck the orange peels in here of course i stuck my rosemary and all that in there and we do know that rosemary and a lot of herbs have a lot of uh good disinfectant bacterial so it's good for cleaning so anyways what i do is i take in my spray bottle and i will take about about a fourth of a cup of this infused vinegar and i'll put it in my little spray bottle and i'll put some tea tree uh essential oil in there about 10 or 15 drops and this has already got like i said rosemary stuff in it so and then i'll fill it up with water and that's what i clean with so it works really well now what i do too is when i take some out i put a little bit more back in here so that's why this jar has lasted me about two years if i take a fourth of a cup out i make sure i put enough vinegar back in here to cover uh the orange and lemon peels and all the herbs and stuff in there so i just keep it going so that's a good thing to have and it cleans really good so what we're going to do is i've got my raspberry and it is fermenting it's bubbling right now it is some going to be some good vinegar it smells really good so what i'm going to do is i want to strain this off let's see i'm thinking i'm gonna strain in here and i'm just gonna hold my little strainer over this jar and look how pretty that is so pretty such a pretty color and i'll feed this fruit to my chickens they'll really like it so we got that strained off and of course miss laurie always makes a mess so that's all you have to do once you got it fermented what i do is i let my fruits and vinegars and stuff i let them ferment anywhere from three to four weeks and then i taste them and if they're good to go then i start using them now if you're afraid to keep them in just with a lid on them in a pantry put them in your refrigerator they'll be good either way so there is my raspberry vinegar um so what i want to do is i want to show y'all how easy it is to make raspberry vinegar strawberry vinegar any kind of these vinegars right here that you're going to start from scratch you're going to use water your fruit a little bit of sugar is always going to take so what i'm going to do is i'm going to reuse this jar and i'm just going to put [Music] probably got about a cup and a half of raspberries here you can fill your jar up with fruit or you can fill it halfway up which whichever is going to work either way it's going to infuse and make vinegar so and i've got just a little over half a jar is what i had left and you know that's a good thing if you if you have some fruit and stuff left that you're not going to be using make you some vinegar out of it so now all we're going to do is fill the jar up with water and i'm just going to put just about a teaspoon of sugar and all that's going to do is just feed your fermentation just help get it going so all you got to do now is put your lid on here and i'm going to steal this lid and i'll get me another one and i'm going to put this in my pantry and i'm just going to let it sit up there and let it ferment and let it make me some more raspberry vinegar and you can use any kind of old jars i always save my old jars just for doing this or you can buy you some pretty jars whichever you want to do so now what we're going to do we're going to make some vinaigrette let's see i think the first one i'm going to make i'm going to make out of my infused rosemary and thyme vinegar and all we're going to need to start out i know you're looking at my kitchen you're thinking you've changed your kitchen around and i have done a few things and you can tell i've had a little bit of different colors and i brought the old settler's cabinet in that danny bought me and this cabinet back here was bought in an old auction or an auction and it's an an old civil war pie cabinet and y'all can't see it but on the side of the cabinet there's little holes that's got it's not chicken wire it's some kind of wire so that you know there's air coming through that cabinet but i brought all these in to go along with the old farm sink that come out of danny's mama's house and i just wanted to incorporate it all together now i still have my white cabinet and my picture of my sadie cow that everybody loves my big picture of my cow and i'll show you that at the end of the video i didn't get rid of that stuff it's just on that side of the kitchen now but anyways let's get started on our vinaigrette and we're going to need about a third of a cup of extra virgin olive oil now when you're making vinaigrettes you want to to try to use extra virgin olive oil it just it makes a better vinaigrette you want a fourth of a cup of whatever fruit vinegar that you're going to use and you can even do apple cider vinegar this makes it just makes a really good uh vinaigrette and i've got a little bit of my pear vinegar left and i think i'm going to use it so we're going to use a fourth of a cup of vinegar i need two teaspoons of dijon mustard and the mustard is what emulsifies it which gives it that that really thick really good taste i need a tablespoon of garlic powder and i've got roasted garlic powder it's what i've got i'm gonna put about a teaspoon of salt and i'm gonna put about a half a teaspoon of pepper and i think that's all that goes in my vinaigrette so we got that done and all you have to do now is put your lid on here and i'm fixing the bar of this lid because i didn't bring one over and all you got to do is shake this up i love good fresh vinaigrettes especially in the summertime and during the fall when we plant our greens out in the beds and i tell you we were so blessed last winter we ate greens all winter plum up to hot weather this summer when they started boating and we and we had to pull them up but it's just wonderful vinaigrette yum that is so good it's to be good on salad okay our next one we're going to make is our rosemary infused vinaigrette and we need a third of a cup of olive oil so you can tell that these uh vinaigrettes are pretty much the same i mean same amount and you can always double this recipe but you know vinaigrette goes a long ways and like i've said before i really don't like keeping homemade dressings or vinaigrettes in the refrigerator more than five to seven days after that i'm ready to make some more fresh so a third cup of olive oil and this one right here i'm going to put a third of a cup of my infused rosemary vinegar so i'm going to use my strainer here to catch my rosemary my time put it back in there oh it smells so good okay now i've got some local honey here we live in the north northeast corner of arkansas and um just over the line is donovan missouri and this is where this honey come from and it's really good honey so i need a tablespoon of honey we try to buy local as much as possible and you know our part of the world here is pretty easy you find it pretty much anywhere your local honeys and stuff like that we even have sorghum so i'm gonna put my tablespoon of honey this one's got garlic powder too so i'm gonna guess at it and i'm gonna put a good teaspoon i'm gonna cut back on my salt on this one i'm gonna put about a half a teaspoon of salt half a teaspoon of pepper and we need two teaspoons of dijon mustard in this one too and all we gotta do is shake this one up too so i'm gonna borrow this lid we're just gonna shake this up real good so here we got our vinaigrette made with the pear vinegar and this one here is with the rosemary and thyme infused vinegar oh yum the rosemary and thyme is is pretty intense but not so intense that it just will overwhelm your salad or anything i tell you put this on a good salad with maybe some grilled chicken roasted chicken oh it'd be wonderful so there's two of our vinaigrettes you've seen how easy it was to make i hope you'll understand the difference between my infused vinegars and my homemade fruit vinegars over here when you make your homemade vinegar you start with fruit uh water and a little bit of sugar if you're making infused you start with a distilled vinegar and then use whatever fruit or herb you're going to be using in about two or three weeks i always go three or four though they'll be good and infused and you'll be able to make you some really good vinaigrettes and like i said you can cook with these too so i hope y'all like this these all very much so anyways i'm gonna get off here and i want to share all this with y'all because it's been a very asked question and uh i wanted to try to do as much as i can to help y'all out on the vinegars so if you've not ever made any kind of fruit vinegar start out with apple cider vinegar all you got to have is some preferably maybe organic apple peels from you know maybe you're making an apple pie or you're putting apples up and it don't have to be organic but if you don't get organic make sure that you clean them peels off really really good but uh start off with that and go from there but any of it's really easy your strawberries i just wash them really good and uh just do like i've done my raspberry and it makes a wonderful vinaigrette or makes a wonderful vinegar and then a
