hey guys chef Xavi here in the kettle decor kitchen the today we are gonna show you the most amazing herb-crusted rack of lamb with a luxurious sweet potato puree let's get cooking so rack of lamb one of my favorite cuts of meat because it's marble it's a perfect meat the fat ratio and the flavor is just incredible usually either Soviet you can sear it for me personally when we're doing the earth processes I just like to go with this here because we don't want to overcook it so always for me herbs thyme rosemary some people like thyme some people like rosemary for lamb I like both garlic since for Jewish you have to use margarine I wish we can use butter but still works margarine is a beautiful way to sear and baste it so we have a cast-iron pan beautiful cast-iron pan is the only kosher cast-iron pan that first number one that comes already season which is a big thing and better yet look at this skies I'm holding the pan it's hot very hot and I'm holding it in my hand without a towel and I'm in the kitchen I burn my hands I cut my hands all the time and to have this is such a big throw so let's start off simple full and pepper that's it season it hard because you know you want that salt to penetrate it extra hard extra season okay a little black pepper when it comes to the land that's what it's just salt and pepper because people over flavor it and over that when it's such a beautiful piece of meat you don't want to mess it up so little olive oil get it in the pan about to go into it [Music] now we have the lamb in the pan we want to get a hard hard sear on it if we were cooking it straight up then you would cook it on medium medium high over here I want high the highest it goes so we want to get a quick sear and a quick color remember guys no color no flavor now that the lamb is independent the higher you season it gets much better and all over it season the bones every part of it put a salt a little black pepper now we have a beautiful season Lynn this is how we start step one of an herb crusted lamb chop I can't wait it smells so good in here so after we see it a little bit we don't want to cook it too much we just want to sear it look at that look how beautiful that is get over here now that we seared it off the lamb fat is here it's facing in that land fat so this is the French technique that I love you guys are ready for this take a little rosemary just take a little fat put it on top a little time put it on top a couple garlic cloves put it around margarine throw it in there let it get hot a little let it get it around unbelievable that I could you I don't have to use a towel for this it's unbelievable look how beautiful that is for the holidays I wish you guys were here that smell is so good it is so good in here oh I can't wait I bring though I remember here [Music] if that rosemary over here that sizzle going on to face that lamb over here now my favorite part the basing so after we have this beautiful herbaceous margarine with the garlic and herbs you just want to base it all around we want that fat to going through the bones getting down all over Oh [Music] basically all basin we're basing all there step 2 Irving panko we take parsley thyme cilantro some people don't like cilantro I like cilantro when it comes to this mint a little basil any herb you have would work so we take herbs we take a little panko that look a beautiful that color is that green vibrant color smells so good in here this is my favorite part of it painting we love painting I'm an artist I'm a chef we like me both so we have a little Dijon mustard here could do mustard you can do horseradish today we're going mustard so now my favorite part now we're gonna paint the mustard red the love if you like a little hot sauce or if you like spicy some people put a little hot sauce in the mustard I'm not feeling spicy today I'm feeling a little sweet a nice you know after we have the mustard all over that lamb throw it on baby throw it on let it snow you can have the kids doing it you want to get everyone busy as I'm doing this you want the oven to preheat it around 400 we're gonna cook it between 8 and 10 minutes depending how you like it we're trying to aim for around medium rare medium while we finish this land in the oven I'm gonna show you a creamy delicious side dish I'm a perfect complementary side there's two lamb chops our most luxurious sweet potato puree what I like to do is take the sweet potato peel it cube it put in a pot instead of cooking in water I cook it in soy milk you could put a cinnamon stick in the bay leaf however you like it you know you can go maple you can go and brown sugar I go simple I wanted a sweet potato to do the talking so I just do a little salt pepper and a touch of cinnamon we have a cook down have a boiled once you have it down you want that cream of soy milk to really get a little thick we're gonna go into puree anger I like glow with the hand mixer I think that's much better it's much easier like I said one pot dish is the way they go okay so we just get it around get it in okay we finished puree now it's a good chef always need to try always need to taste it so we just mix it around let's taste it that is so good just a touch of school just to complement the sweet potato it's so good I can't wait to show you the plating so everything turned out beautifully and now for the plating so sweet potato they have a beautiful cutting board put it down on the board go a little more a little less I'm going big time over here you bring it around here [Music] just a little bit now for the rack of lamb I can't wait this uh yes I wish you guys were here bring it over here we always need a little green drive you can do scallion in the Google is a matter of time some people take this and actually use our bow torch very very cool presentation you can put it on over here [Music] so here we got delicious P fry that we got from Burt's burrow you can find to have different flavors brown sugar or maple you name it they have it I love to use this in different elements with sweet potato I think it's a perfect garnish crispy especially with the rack of lamb I think it works perfect get a nice handful let's sprinkle it around put it around the sweet potato especially with orange raining be frying let it rain guys let it rain and now for the final chapter let's dig in there that perfect medium-rare pink I have extra Blanche mouse with the garlic and herbs just finish it on top okay a little salt always like the was covered in chives covered in that green okay let's slice it hold it up [Music] there's a little lambs mouths always finish it cook it right and you season it properly it's always gonna be delicious okay let's dig in
