now I'm going to show you the ultimate dessert a tiramisu a classic recipe that is meaning my family for over 50 years now the ingredients are very simple and we all started into a large bowl with choux egg yolk in the egg yolk we're going to put a couple of tablespoon of castor sugar and we want to start to whisk the castor sugar and the egg yolk together and make sure that the sugar melts and the color becomes nice and pale and the reason why you want to be egg yolk and sugar to be pale color so the sugar melts into the egg yolk and is not great in your teeth okay now once you are at this stage very simply we start to fold in the mascarpone cheese and this is a great cheese for a tiramisu because hasn't got a lot of flavor and it's kind of a vehicle for added flavor so you put the mascarpone into the egg yolk and the sugar they just mix all together okay so once you mix the mascarpone with the egg yolk and the sugar we got a little bit of double cream just this one are just slightly whipped it you don't want to overdo it otherwise it will become a little bit like butter so pick it up and go straight into the mascarpone egg yolk and sugar and again fold everything together and straight up to the whipped cream what we need to add is the amaretto liqueur and I do believe that a miraculous cure is the only liquor to use for the perfect tiramisu if you don't have amaretto you can use Marsala but I do believe that this is the one put half of it in there and we're going to keep half to put into the coffee later fold everything together and just to finish off the last thing you wanted to add is whipped egg white so I've got a couple of egg whites in here you just want to whip them until nice and firm now guys to check if the egg white is ready there is only one way to do it on your head for three second one to three egg white is perfect now you get your egg whites and it goes straight into the cream and what's gonna happen the egg white is gonna give a beautiful and fluffy texture to the cream so it's light and it's absolutely amazing so folder in all in one go that's absolutely fine so unhappy with the cream now let me show you how we put the tiramisu together the biscuit we're going to use is called subway Rd which is a biscuit you can find everywhere is go sugar on top and the sponge on the bottom now to put it on so of course we need coffee what I got here is called espresso coffee and it's very important the coffee's cold because when you build a biscuit in there if it would be hot the biscuit gets all soggy so you want to keep the biscuit nice and al dente the rest of the amaretto a cure goes into the coffee like this just give it a good tool around so then you get also the flavor in the coffee and the way I serve it is in a glass yes you can put them in a large trays by fund them in a glass very very easy it's much more Italian it's a cooler way to do it what you want to do you get your biscuits into the coffee very quickly three or four second maximum so one two three take it out and you start to cover the base of the glass now cover the first layer with one layer of cream and then we're gonna do exactly the same thing again so one more layer of biscuit and one more layer of cream and it's very important when you make a tiramisu that you've got at least two layer or biscuits if you can put it three even better now at this stage you can leave at the top just ways or you can use a spatula to make sure that is all nice and smooth okay and this the reason why I like to do the melody is because then when you're guests arriving you just have to pick them up off the fridge serve them very very easily now once you are at this age the only thing that you have to do you can cover with cling film if you want and put it in the fridge for one hour now after one hour this is exactly what you're going to get a beautiful tiramisu the last thing we want you to do is to put a little bit of cocoa powder on top and the reason why we do this now because if I put cocoa powder before it goes into the fridge then the cocoa powder is going to become bitter because the fridge is you mean so you really want to dust it with the cocoa powder and last second just before you serve it and this is how you make my perfect tiramisu Oh fantastico
