now get ready to sit back and relax as we join a Gino on an Italian adventure yet time to take a trip to Casa de Cameroon I've lived and traveled all across Italy but every summer I pack my bags and head back to one place on the beautiful island of Sardinia in this series I want to show you a little part of my life here in Sardinia starting off with my home is a modest little thing just like me [Music] welcome to Villa de Campo a place for me to escape and spend time with two special friends joke is that a great day and Oreo is a new founder both puppies is about 1 year old and is nine months old smile there you go smile enough messing about with this soup I'm feeling peckish and it's the perfect excuse to show you something else come on don't look at me like this everybody needed is go one of these [Music] one of the best ways to find out what the sirenians 8 is to check out the local dailies and this is mine Bongiorno going man la Benny Benny glad to see one of the things that I'll have a BA Italian dailies the first thing is the smell now its first thing in the morning and I'm sure one thing joosep is gonna do to me is to let me try a huge amount of all these beautiful chases pecorino in all sorts of ways then all the hams we go to mortadella we go to porchetta this is sliced pancetta with truffle this is the local surged Indian bread is called Panna cottas are which is a very thin breads I think I've done enough tasting I need to get on with shopping at peh-chu Bavarian body bachata perfects a poem but pets to the pecorino [Music] I've asked for a pecorino that is not too mature but good for grating I'm thinking of the recipe now shower chop a lot even hitch its back to the villa to cook some lunch so now that I go Giuseppe's pecorino Sardo that is only one recipe that I've got in mind which is panetta alla Carbonara okay I know usually carbonara is made with spaghetti actually to be traditional is with bucatini but I love to do it Panetta because number one is easier number two my children loves it because they don't get all messy okay so good pecorino Sardo now where we start is frying the pancetta put the heat after because otherwise you're gonna burn it too quickly couple knobs or butter very important to add the olive oil because then the butter doesn't burn look at that the bubbling of the butter with the pancetta you know that it's going to get all beautiful and crispy and all the flavors is gonna come out now is the time to cook the pasta first of all use a large pot three liters of water one and a half tablespoon of salt otherwise the past is gonna be tasteless now connect to the garden I have a look at the ridges on the Pinet then you know what those ridges are gonna do the sauce we acted upon check to the piggery you're gonna stick onto the regions fantastic you can use Parmesan cheese but I always suggest if you can use a good pecorino because you get a beautiful mature flavor which really works well with the carbonara crack two eggs get a fork and just lightly fit it like this okay not too much very important always to check the pasta to make sure that is al dente the last ingredients I'm going to use parsley flat leaf parsley don't use any of those curly parsley because is they tasteless that is gonna go into the eggs when you are at the stage like this when you see all the bubble going around switch it off because you don't want it too crispy otherwise you don't get the best flavor after the pancetta drain the pasta let me show you how we put it the carbonara together the first thing that goes in is the eggs as you can see the pan is away from the heat now what we're relying on is the heat from the pancetta and from the pasta keep moving the pasta because otherwise you're gonna end up with scrambled eggs in your pasta add half of the cheese and stir now once you mix everything together there is one big tip that I can give you is to make sure that you serve it straight away and there you go guys this is how you make penne alla Carbonara join me next week for another Sardinian adventure oh I look stunning you know does doesn't it yes still a hobbit I could do that for later you
