come on now we're going to giant which is a new restaurant from award-winning chef jason vincent and his partner ben and eric williams is going to join me there the chef at virtue and the james beard award-winning pastry chef mindy siegel from her place hot chocolate deserves any shooters i don't eat uni so anything else on any other dietary restrictions or virgins um you know you know my vegan version is people is that i'm a chef and i'm also a picky eater really yeah i mean i think we all probably are in some sort of way i'm not i like everything but then again i'm not a chef no but you like food and we like that you like food that's why i do this i meet a lot of great chefs they can't ride a sitcom right so we all contribute in our way and you want me in your restaurant because you will have no bigger family although owning a restaurant is like having a sitcom just to be honest with you guys 24 7. 24 7. now you this is like uh you're all friends mm-hmm you're not competing chefs you're all buddies yeah you guys work together here at giant we do yeah we work together at nightwood and lula before that you worked with direct yeah i work with eric and mindy actually got me my job thank you on camera on the camera thank you i won't be using it this is actually it's funny yeah this is the pizza dough recipe from a great restaurant in the neighborhood that i grew up in cleveland in cleveland yeah this is our is our pita is that right yeah the pizza dough pita yeah the place is called pizzazz and um it was it's a great name like there was like an arcade in the basement yeah it was a place to go after school and i applied for a job there when i was like 15 and just never left the kitchen i love that this reminds me of knot i also kind of just accidentally ended up cooking i was working in a cafe and kind of not having a great time and so there was a chef who worked next door and he just needed hands like he had no reason to believe that i could do anything which was an accurate understanding of me i mean i knew nothing i could feed myself stickums and grilled cheese what have you but that was about the limit we get along well yeah can i say what ben is really good at somebody because ben ben makes the best friend what in the city ever am i getting in the city it's the sourdough let's go ben out of control don't hold out on me ben it's kind it's coming okay um so eric when did you know you were a chef i'm still trying to figure that out i get it i enjoy cooking from a very young age yeah i worked in and around kitchens and then i met mindy siegel and she pushed me like nobody has ever pushed me in my life yeah it really is the truth mm-hmm yeah she doesn't like to say it but it's the truth she's a lot more mellow now than she even like four years ago i mean she was a psycho it's called medication but that's very nice and i and to be honest with you i wasn't a psychopath i was just a tough jonah krebs what what what this is the i was hoping for some what is that these are tomatoes with strata we've got speck on top and then it's all kind of tucked inside a grilled roti that's beautiful yeah oh yeah it's all good the waffle fries are from ben's genius mind pastas i'm excited this looks like crab am i wrong dungeness calabrian chili butter garlic chives hello this is my favorite dish yes it looks like homemade pasta oh yeah all right there's like a part two to all our pastas which is dunking this homemade bread into the leftovers this is awesome you guys thanks seriously your life is about to change what right now [Music] thanks for leaving me the smallest piece there thank you guys a loaf to take home beautiful soft on the inside and then beautiful seasoning on the crust look at that that looks like a cheese i love that come on how did you get into bread like what made you think like i want to do that now i've always liked him it wasn't until we opened this place that i got really serious about maintaining a sourdough starter it's just very rewarding it's like immediately rewarding everything about it when the dough is right feels right you know when you're it comes out of the oven and it looks right and it smells right it's just there's so many incremental rewards on your on its way to it's primes yeah comfort food yes right yeah what is comfort food comfort food is something that just makes you feel good and it's usually something to do with childhood i'm thinking nostalgia that's what i mean childhood yes right remember the ratatouille that moment at the end yeah every chef i talk to gets cranky face every chef i talk to knows what i'm talking about because that is the center that is the dead center of what it means to hit it yeah with it with a dish uh-huh right to instantly be transported because that's all we do i think in every field is try to chase that feeling we don't even realize we're doing this absolutely do you think that it's possible to take on a comfort food as an adult as a chef to try as a person as a person eating we're looking for it all the time it's all childhood food and when we see it on the menu oh they're selling childhood here but i think what ben's asking is can you create new nostalgia can there be dishes that create an imprint right that's so lastic that as an adult right you crave that moment and every time anything that reminds you of that space right it just brings really warm thoughts it's the definition of delicious isn't it that is the definition of delicious i had mine with sweetbreads when i was like 25 like obviously never ate sweet breads growing up but i had them for the first time in culinary school and it was like one of those holy yeah like that moment i'm going to remember this forever like that's what it was for you sweet bread yeah that's funny i've never heard that before what was it for you oyster oysters when i don't eat oysters on a little girl yeah mine were nantucket-based scallops i'm a black kid who didn't eat a lot of raw food growing up and i thought the chef was out of his complete mind and i was like aren't you supposed to cook those or something and i ate one guy and i was like holy cow like you i believe what are these things yes did you eat one then i smashed them [Laughter] the very cute little patio out back is fantastic until it rains and then you gotta move but that's all right look we can make do we're people here comes mindy what do you got there well let me just explain oh we have here chocolate okay my favorite thing oh oh so this is chocolate cake with chocolate mousse and then it's served with warm strawberries textures and temperatures oh warm strawberries with cream on top of chocolate cake come on life is good look at this smile it's so good see we're kids again that's the thing it's my pleasure i see so yes mindy but don't forget about the hot fudge arugula what these are angel wings angel wings what so is this the chocolate melted out and then yeah and it happened as a mistake but then i was like keep it good this is so good come on that's good it's like my mother made it if she could do anything like this yeah yeah and that's the whole thing right so you're like everybody's mom now you know in kitchen years you're like 20 years actually older than you actually so i'm like everybody's grandmother
