Just some background info: these are "Seidenklöße" or "gekochte Klöße", which are made completely from boiled potatoes.
The most popular or "typical" potato dumplings are probably "halb und halb", which are made from 50% raw potatoes and 50% boiled potatoes. The raw potatoes are first grated (the grater looks like someone punched holes through a sheet of metal with a nail) and then pressed through a kitchen cloth to remove as much juice as possible. You wait for the starch to separate from the juice and add that to the "dough". No flour, no eggs, usually no pepper and obviously no dash of cayenne. Just some salt and nutmeg.
There are also "grüne Klöße" or "rohe Klöße" which are made from 100% raw potatoes, but they're a bit more difficult to make because they tend to fall apart during cooking.
I just made these using potato starch instead of flour and a chunk of medium Cheddar on the inside instead of croutons. They were light and tasty and the cheese went perfectly with the potato.
