hi everyone and welcome back to my kitchen today of a brand new and delicious cheesecake recipe for you and i'll be making my german chocolate cheesecake with a coconut and graham cracker crust a rich and silky smooth chocolate cheesecake with just a little bit of coconut flavor and we're going to top it off with a classic german chocolate cake filling add a little bit of chocolate buttercream this chocolate cheesecake has it all it is super chocolatey super rich and delicious you guys are going to love it from the very first bite let's get started i'll show you how to make this incredible cheesecake and i'm going to start this recipe with my coconut graham cracker crust you guys are going to love this crust it is so delicious with the little bits of coconut in there so into my food processor i'm going to be adding in eight graham crackers just drop those right in and then pulse the cookies for about a minute until fine crumbs form next i'll add in a third cup of sweetened coconut flakes drop those in and i'm going to pulse this for about 30 seconds just until they're finely chopped and my final ingredient a third cup of melted butter and i'm using unsalted butter today and then mix this just until the crumbs are well coated and for today's recipe i'm going to be using a 9 inch springform pan i wrapped the bottom of the pan with foil because we will be using a water bath for this recipe and i don't want any water to leak into the actual cake itself i'm going to transfer these crumbs into the pan and then i like to use a potato masher to press the crumbs firmly into the bottom of the pan you could also just use a large spoon or the back of your hand you want to make sure that that crust is really firm and even and my coconut graham cracker crust is all done so now i'm going to switch gears and make that chocolate cheesecake batter so for this recipe i'm going to be using four eight ounce packages of cream cheese i've softened this cream cheese at room temperature and i'm going to drop it into my mixer bowl and the key to getting a really nice and creamy cheesecake is to mix the cream cheese all by itself for anywhere from seven to ten minutes on medium speed until the cream cheese is really light and creamy and you want to scrape down the sides of that mixing bowl very often every couple of minutes to make sure that all the cream cheese is mixed and nice and creamy and my final break of cream cheese going into the mixer going to turn this mixture up to medium speed and mix for about seven to ten minutes until that cream cheese is really light and creamy and don't forget to stop your mixer every couple of minutes and scrape down the sides of your mixing bowl to make sure that every bit of cream cheese gets beaten nicely and once the cream cheese is beaten i actually like to switch over to the whisk attachment i find that it makes the cheesecake batter even smoother and creamier next into the cream cheese i'm going to add in 4 large eggs 1 cup of white granulated sugar 1 teaspoon of vanilla extract and one teaspoon of coconut extract it's going to add this really mild coconut flavor and i'm going to mix this all together for about two to three even four minutes until it's really well combined stopping about halfway to scrape down the mixing bowl and now for my final two ingredients i have half a cup of a melted semi-sweet chocolate chips i'm going to pour that melted chocolate directly into the cheesecake batter and 1 3 cup of dark cocoa powder and i'm going to start this out on a slow speed so that cocoa powder doesn't go everywhere once it's incorporated i'm going to mix this on medium speed for about two to three minutes scraping down the bowl halfway through until i have a smooth and creamy batter and my cheesecake batter is all done and check this out it is so rich and creamy i cannot wait to enjoy this cheesecake once it's done baking and this cheesecake batter is ready to be poured over our prepared crust pour this batter over that coconut graham cracker crust [Music] and i'm going to grab an offset spatula and spread the cheesecake batter evenly to the edges you want a nice and level top on this batter and my cheesecake is almost ready for the oven the last thing i'm going to do is prepare my water bath so i've placed my cheesecake onto a large baking sheet and i'm going to fill the tray with some water you can actually do this with the tray in the oven it's a little bit easier so you don't have to transport it and the extra moisture is going to help bake the cheesecake more evenly and help prevent any cracks from forming on the top and my chocolate coconut cheesecake is ready for the oven i have mine preheated to 300 degrees fahrenheit and it's going to bake at that temperature for two hours once it's done baking it's still gonna have a little bit of wobble in the center i'm going to turn my oven off and then prop the oven door open with a wooden spoon and let the cheesecake cool really really slowly until it drops down to room temperature it's going to take just a few hours and then i'm going to transfer it into my refrigerator and let the cheesecake chill overnight meanwhile i'm going to get started on that classic german chocolate cake filling it's going to be so good on the top and for that iconic cake filling that we're going to use for the top i'm first going to melt a third cup of unsalted butter in a medium sized saucepan and into my melted butter i'm going to add in three egg yolks five ounces of evaporated milk one teaspoon of vanilla extract a quarter cup of brown sugar and a quarter cup of white sugar i'm going to grab my whisk and mix this all together until it's really nice and smooth and i'm going to cook this mixture over low heat whisking or stirring constantly until it thickens into a custard it should take about three to four minutes and once the custard thickens you want to remove it from the heat don't let this custard boil and into the custard we're going to add in three quarter cups of chopped pecans and one and a half cups of sweetened shredded coconut and then just use your spatula to coat the pecans and the coconut in that amazing custard and now let's put together this incredible cheesecake so i actually baked a second cheesecake last night i let it sit in the refrigerator overnight so it's good to go i have my filling or my topping completely cooled and you do want it completely cooled otherwise it will melt the chocolate buttercream i made a small batch of my chocolate buttercream recipe it's one of my back to cake basic series recipes i'm going to include a link down for in the video description box below i'll also include the ingredients with this cheesecake up on my website and now let's bring it all together so the first thing i'm going to do is transfer the cheesecake onto my cake stand and this cheesecake turned out so perfect and to transfer the cheesecake i'm first going to slide my spatula underneath the crust and you want to make sure that it's um underneath the crust all the way around the cheesecake oh and this one is sliding right off and we're just going to gently transfer onto the stand i've transferred my chocolate buttercream into a pastry bag and today i'm using a front star tip number four going to go around the edge of the cheesecake add nice large dollops and this buttercream is going to help keep all of that german chocolate cake filling on the inside do and i'm going to grab a fork and just transfer that filling on top of the cheesecake and i'm going to fluff it up as i'm adding it to the top and this cheesecake is so pretty i almost don't want to even cut into it to ruin the beauty i'm going to grab a sharp knife this cheesecake is going to taste phenomenal slice right through it let's check out what it looks like on the inside and this cheesecake is just wow it's just so rich and creamy the cheesecake itself and i love this
