it's good to be it's cj's first cooking show and it's there's nobody up here with me feels like it's been a hot minute man truly all by myself of course except for nate who won't shut up that was good dude hey guys thanks so much for hanging out and joining us on the set today we're gonna be cooking a delicious diner style patty melts oh we're taking a classic oh yeah we're taking it americana we're taking it to the roof we're taking it to places you've never seen we laid it on the moon we landed on the moon do me solid go like subscribe hit the bell do all that stuff so you get a notification on when my show is going to be starting back up and you get to watch it and comment on it and make fun of me and shame me and there's that years more therapy in my future welcome to the show [Music] as they say in the biz first thing is first they say they say that's what they say in the business well this biz it's the biz the business the biz the bee's knees the beast knees bee's knees yeah the bees knees guys so we're gonna go ahead and get started with our onions we got some sweet onions today normally if this was nate's show he would show you how to slice this up in a very cool way and make it super super thin and transparent i think what you're doing is really cool i like this trick well thank you because this trick is going to save us a ton of time when it comes save heck of time heck of time all kinds of time time for days guys so we're going to basically get these onions thinned out as thin as humanly possible or at the very least it's like a smash burger we want thin yes we want super duper thin so we the best way i know how to do it is to use a mandolin well essentially what we're talking about is bringing out all the sugar almost like a french onion soup because these are slow caramelized onions that's essentially what we're talking about essentially metaphorically speaking metaphorically speaking okay we could have done that with a knife but that would have been stupid i agree that is reserved for silly shows like nates that waste your time with madness but dude look at that three onions we might have gone a little overboard i don't think so because they're gonna shrink yeah that's the beauty of this process that we're about to do because they're not gonna be uh they're not gonna be crispy they're not gonna be white they're gonna be like this deep brown super soft and falling apart but speaking of that sweet very sweet speaking of that let's go to our uh 36 inch black stone air fryer combo so we've got our air fryer that has been um preheating on low i recommend low because we want to do a low and slow with this has nothing to do with the bacon that's coming in that's irrelevant it's irrelevant so let's get some olive oil we're gonna put our onions over here and honestly once we get cruising with this i might even turn the heat off after a while really if it's too hot if it's too hot so i'm just going to grab a bigger bundle of this you boys ready for that i'm ready here we go [Music] is this going to be another music episode aren't they all i think so i think so too so dude look at that do you smell that immediately so good so freaking good now while that's doing that very first part i'm gonna grab a pinch of some pinch ground coarse yup black pepper i like your style yes sir with some salt okay some kosher salt kosher is the way to go why because it's kosher p-a-r-t why because i gotta p-a-r-t why because i gotta [Music] let's make sure i've got some time you know we talked about this a lot the caramelization literally is the sugar coming out of the onions and the flavor changes into a really sweet onion so for people that don't like onions this is a great way to do that and you know it's funny i talk about that all the time yeah my wife says to me all the time cj will you please shut up about the caramelization talk and the sugaring and the blah blah blah blah you sound like nate i've got some bacon here now in said situation it's up to you how much bacon you seem there's a bit of apprehension in your voice it's up to you you grab the bacon you need but for me i like to be i feel like a boy scout with my bacon i like to be prepared in every situation you know just in case just in case a group of people shows up and wants extra bacon yeah in case uh one piece of bacon goes bad yeah like goes bad yeah on its own completely yeah on its own now you'll see folks down here i'm not watching this let's draw some attention i'm not touching this we are on low you saw it here first you know your uh your heat settings remind me of a song speaking of song episode low do the safety dance do the safety dance you can dance if you want to we can leave your place behind cause your friends don't dance when if they don't dance all that no faking of mine no bacon of mine that's pretty good that's all right e okay i'm putting e on bacon duty you're responsible for what happened to this bacon ethan it's up to you guys hopefully you did if the bacon burns that's on you okay now we can do the sauce but why don't i go ahead and get started on our beef patties okay okay now beef patties this is going to be diner style with diner style we're going to flatten these bad boys out smash burgers smash smash burger so we don't want to have giant uh beef balls and if this is your first time watching us make a smash burger there's a couple simple rules number one 80 20. it's great it's got the best ratio of fat to uh lean like the lean protein so that way it's not too greasy but you get that juice that comes out and it cooks in its own juice it's brilliant second thing is is you don't want to pack the meatball tight you want it to be loosely packed so that way when you go put it on the griddle here in a second it's a more tender burger it will smash very lightly and evenly unless it's me doing it in which case are you trying to psych yourself up i'm just letting the viewers know that there could be a problem coming up that i have not foreseen you're your own hype man and i dig that can you be your own hype man well you just did yeah boy [Music] [Applause] i i'm thinking with this i kind of wanted to create these patty melts almost like a shareable so i'm going to be cutting them at the end and popping them on a platter that's my bacon over there dude ethan i'm watching it i'm a little gun shy guys i'm i'm checking for you okay nervous i feel okay about this i'm probably gonna go ahead and flip though why do we flip ethan so it doesn't burn yeah but full safety preferably stopped for safety's sake now if you've also been watching my show for any length of time yes i do have an issue with gorgeous bacon bro but i'm also a multi-flipping bacon kind of guy mainly because i don't want to burn it that that theory is not necessarily proven to be sound should we do here one two three four five we could do a double i'm a single guy i feel like when you start editing yeah you're single we all know that i have children well ethan like that got a giggle out of that you got a giggle out of the opinion gallery over there all right look i'm gonna just i'm gonna make one more do want to double in the rest singles can we do that maybe maybe we can do that we'll see how this goes okay not sure we'll have enough time i don't know i don't know if we'll have gold baby let's go over here with our with our beef patties okay so we're compounding flavors utilizing beef oh hello in the bacon fat we're going to get ice oh you know what look at let's look down here i am going to go ahead and crank this up okay because i want to get i want to get this cream you want to get what you want to get what i'm not going to say it say it delicious say it do it do it my hard reaction hey should we save this guy or just throw him down just throw him down for fun all right hey that was fun hey little cutie i felt like that's not like a lot of fun good times fun for two neat yeah fun good times good times in some circles you could go ahead and smash this without the use of black stone parchment paper however i'm not one of those folks that is capable of doing a very good job this is not cheating this is not a shortcut this is just technique and i dig the technique thank you but i'm glad while we're talking good whiskey burger guys i highly if you have the means i highly recommend it if you have the means i highly recommend picking one up we're gonna go ahead and do a generous dusting of whiskey burger here right before we start smashing and yeah i honestly can't get enough of this evening dude yep yep yup yup what what what what what's going with the yep yep yep yep like yep yep [Music] i'm going to make it for a little guy all right wait am i the little guy i wasn't going to say it you said the little man they call me the little man the german's nickname for me is the little man oh whoa dude good one yeah i did not see that coming okay now our burger patties are not gonna take long okay i'm gonna get scooting along with our sauce no no no no what i'm gonna toss my onions real quick okay let's see how we're doing here oh stunning dude and it's all starting to kind of melt it's almost like a pasta like it all starts kind of getting super thin and uh kind of looks like angel hair pasta she's an angel [Music] now we are going to be making a special sauce the magic maker of this special sauce that's gonna be going on our burger duke's mayo we're gonna do two healthy three healthy dollops okay okay from there we're gonna use some average some average joe yellow mustard now there's nothing average about this mustard but it is average joes nobody makes me bleed my own blood nobody makes me bleed my own blood i like to keep the body guessing you know change it up keep the body guessing it's always in my approach i like to keep my body guessing of course moving on again to just some average ketchup or cat's up oh no i know kind of mad men would actually say that now i am going to do a healthy amount of sweet relish because i really like this sauce to have a bit more of that sweet taste and flavor oh yeah uh and now you know what i'm gonna do a little bit of whiskey burger well of course you are and just like that we're gonna go flip our patties because i'm not burning i'm not burning food today boys whoa gorgeous yeah boy flawless yeah yeah boy beauty little guy oh that's the best looking one check it out we're gonna come back to our sauce in a sec we gotta keep scooping here guys oh we gotta let the cheese melt yep and i want to put the bacon on the patty and let the cheese melt of the bacon to keep the bacon in place hey i got you buddy what get some swiss cheese here thank you for coming thanks guys hey you're welcome yep you're gonna wrap that look oh little guy oh that cheese is immediately going to town on the griddle now check it out boys back up so i'm going to start getting my onions kind of out of the way here because i need to make room so i can start working on the bread the bread for said burger now today we are using a wild stallion of sorts texas toast garlic garlic bread pre garlic pre-toasted or not pre-toasted pre-buttered pre-buttered we're gonna go ahead and throw this down it's got all the goods on it oh dude look at this guy whoa wow look at we're gonna set down one two three okay we've got enough for four burgers because that's how much bread we have okay so we've got our sauce all of our ingredients in there all that's left to do is mix this guy up i like it that's real easy oh yeah dude uh this is this the special sauce it's like a it's a homemade thousand island essentially is what you what you're getting oh sure if you got a little bit of sugar a little paprika yeah you'd hit 8 000 exactly but today we decided to go the whiskey burger route because i really like whiskey burger and i want to add it i always wanted to see a blue duck to be honest with you i wanted to see a blue duck that is done out of the way now i'm in a situation here okay my burgers are done but my bread is not it should be getting close though right yeah but look at my cheese here my cheese cuts oh no okay here's what i'm gonna do i'm gonna definitely kill this you know what you could just flip them now they're probably toasted enough on one side and let the bottoms toast well that's definitely the option we're going to have to go with okay because that's an audible option calling an audible [Music] on an audible yeah there's a little toast on there i think we're going to be okay here cj fraser we're good we're oh i don't know dude pills pills are good [Music] so would you have done bread sooner i i would have done bread sooner i should have done bread sooner i would i should i wish i could i didn't but i didn't i shouldn't now i think that we probably should go ahead and put a little bit of sauce down what what sauce meat sauce should i eat i'm down with some special sauce oh dang oh yeah you do both sides with sauce i don't know i don't know if i should do both sides it's a lot of bread i don't like to talk about my flair i really like talking about my flair let's grab some onions is there is there too much is there so much such a thing as too much oh man not on a patty milk no dude no and let's let's move some patties guys because they're they're officially at that point we're doing one of these a double no i don't know we'll see what happens here we have six what just mind your own business okay here we go man yeah my mind your business now we're gonna take this guy we're going to go to the right of that burger boys okay oh jeez are you as big a fan as cheese curds as i am oh yeah that's a good looking skirt yes it's a good looking skirt it's a short skirt and a long [Music] [Laughter] these burgers are just sitting so delightful you know you make one a double okay fine this one up front i'm gonna stay right here this one needs to be a double that's really yeah all right you know we typically have enough for one more devil well technically we okay look at that little cutie how about we which one e tell me hurry hurry hurry hurry hurry hurry hurry hurry hurry hurry okay dude that shoe is pretty cool whoa whoa it's like a ravioli look at that thing well done oh yeah but nothing wrong with that no we're definitely throwing this guy back here because why not right yeah why not bread getting toasted oh [Music] i'm going to move this guy over here into a little bit more of a toasty zone how about we top her let's talk these guys off i was a naysayer on that shortcut but i think i stand corrected yeah dang right you do i am on the way boys i don't trust myself you should because that was a pro move right there don't worry we got one more we got one lone ranger back here over there we have the overachieving bacon and then we have the slow guy yeah doesn't mean they're not special like nate nate is special even though he's short and slow and although dangerous behind the wheel still can serve a purpose senior citizens although slow and dangerous behind the wheel can still serve a purpose all right here we go i'm bringing it and we'll be back and this guy's done now that these bad boys are done let's go ahead and slice them like i said earlier i kind of wanted to make this like an appetizer shareable platter so we're going to cut these in half and then we're going to put some of that leftover special sauce in a bowl because who doesn't like to dip right right right yes look at that guy wow we've got layers that onion down there you know what the sneeze right the last thing you're gonna post dust of course i am of course of course i am sorry now that bread it has that uh that garlic butter up top so we should be getting some a little bit of uh grip for our post seasoning here and dang into the sauce into the sauce you're a madman madman there it is dude just like that you've got some wicked what do we call these diner style patty melts patty melts me dude let's taste them bacon swiss patty milk bacon swiss patty melts what do you wanna where are we we can go to the bar yeah let's go okay dude the crust on both sides nice and crispy oh i kind of want to i kind of just want to let's just start off with what some with some dipping wow man you gotta you gotta go
