Add the vanilla extract Whip using a hand mixer I used a Luxel mixer and started off whipping it on high at the 10-12 speed setting for 2 1/2 minutes then lowered the speed to medium at the 7-8 speed setting and whipped it for 2 1/2 minutes and finally lowered the speed to low at the 1 speed setting and whipped it for 1 1/2 minutes to remove the bubbles Check to see that the batter leaves behind a ribbon like pattern when you lift it up Sift in the cake flour and mix Mix the batter up from the bottom of the bowl so the flour won't clump up and will be evenly incorporated Once it is incorporated, add a little of the batter to a bowl containing the melted butter and milk and mix it together For the butter and milk, if you place it in the pot with the hot water previously used as a double boiler for the eggs the temperature should be just right to use for melting it Add it back to the rest of the batter and mix evenly Line an 18cm pan with buttered parchment paper and pour the batter in Thump the bottom of pan to remove the air bubbles then bake for 30 minutes in an oven preheated to 180C Turn out the cake onto a cooling rack and leave to cool after peeling off the parchment paper Once the sheet cake is cool, trim off the top, cut the cake into 3 layers and cut away the browned edges using a 15cm mousse pan Smear a bit of cream on the base of a turntable and place the uncut base of the sheet cake down on top of it Add the whipped strawberry cream and spread it out evenly using a spatula For the whipped strawberry cream, whip the cream until it starts to become frothy, stir the jam and add it in and whip until soft peaks form Level out the cream evenly and remove any cream that overflows onto the sides Place small chopped strawberries on top of the layer After chopping the strawberries, you should place them on paper towels to drain the excess moisture before using them Press down at a slight angle to set the strawberries into the cream Add more cream and repeat the icing process Place the final sheet cake layer on top Add plenty of whipped cream and then while evenly spreading out the cream, pull it down onto the sides of the cake Cover the sides of the cake with the cream If there is not enough cream and you can still see the sides of the cake, add a little more cream and spread it out until the cake is completely covered Once the cake is evenly covered, hold the spatula vertically and spin the turntable to smooth out the icing Swipe from the outer edge inwards to finish leveling out the top edges of the cake Insert two long spatulas under the base of the cake If the spatulas extend past the cake, it might leave marks on the cake when you transfer it to the plate so please place them in carefully Place the cake in the center of the plate and pull out the spatulas Add sugar and whip the cream lightly until it is puffy in texture then pour it on top of the cake Spread it out gently with a spatula and let it flow a little over the sides If you place the cake in the refrigerator for awhile to chill before using the decorative whipped cream, when you pour it on, it should flow down the sides just a bit before setting Lastly, finish it off by arranging diced strawberries on top.
