when you're making wine people will just add to the wine whatever you need to to make it correct so you have a super hot vintage like 2003 where the acidity levels are very low all the analogist in the area were saying just add acid to it add acid add to it and when you do that it doesn't taste balanc and it doesn't taste correct but when we're constrained by natural wine you only using the juice that you have everybody thought at the time that there was no 2003 wines that were going to age U but I've tasted a bunch of wines from him in 2003 that are unbelievable it reminds me of like a [ __ ] composed steak dinner wow it's like Paul the plate of steo Pua this has been Tru beautiful for me thank you man got speaking of Paul Bear now for the popup with more names than the credits for style like art deco poster art this event is very special for me because I wanted to create my dream restaurant Mr bear from Paris institution from Paris like they've been open 25 years I team them up with my friends from H be a local celebrities Duo cooking Vietnamese American food and to complete the Dream Team I have my friends from Le who are wine makers from jur unexpected people coming together organized chaos potato slice with PA bear sauce wow the marriage between us is something that was long needed you know I love this slice yeah this is one of the best slices in the whole neighborhood and probably the whole city and with this sauce it just was enhanced it's like Enz this is like it was it was male enhancement thank you very delicious good there it is we going to stop the fet and SLI that's it no more 26 years in all my my wife this one is is called by a mad villan song in the juice of what I love the most about our project so far is that we've been working with grapes from other regions in Fr and it's something that allows us to have a lot of freedom of creativity you're being free and creative and I love that you're letting nature do the talk very Dynamic
