I'm in Fez one of the great culinary capitals of Morocco today I'm taking you on an ultimate Moroccan food tour wow we smelled this cloud of steam coming from here one of the coolest most ancient tea shops you'll ever see I came to Fez to try this tea we'll try some of the most famous street foods including a legendary stall that people come from all over Morocco just to try as we get lost in the Labyrinth of narrow alleys there's a natural light coming in from the top but then sometimes you duck into almost cave like alleys we'll eat bubbling meaty Tajin and have a Moroccan dinner fit for a sultan what a combination it's unbelievable and I'm going to show you some of the best Moroccan food that you have to eat when you come to Fez hope you're having an amazing day today it's Mark ws and welcome to the beautiful city of Fez we are in great hands we're with Fatima we're with Muhammad on Omar from Moroccan food tours and I mean Fez was one of the Cities I was most looking forward to visiting in Morocco for its ancient history and also being one of the biggest Old City centers preserved in the entire Arab Muslim world but we're beginning first with a huge Fez [Music] breakfast here we are this is the place Jardin sharifa good morning good morning so we're beginning this Fez food tour in this beautiful garden Courtyard family home Courtyard where we're going to have some of the local Fez style breakfast would this be typical of Fez style uh yes yes we call it the Breakfast of Champions Breakfast of Champions this is like f style breakfast you have and like an assortments of all types of breads two different soups cheeses and all the different things we have here bread regular bread uh this one is stopped with like flax seeds flax seeds yes you have three different kinds of lamb s uh this one is plain this one is with this one is is with vegetables peppers and onions all right and here comes one of the the prized dishes of breakfast okay oh wow man this is one of the greatest dishes eggs cooked with Kalia which is the preserved beef with its own fat like C of beef which just dried and just preserves and like condenses the flavor cooked in a Tajin oh we have to try those eggs while they're bubbling hot in the Tajin crispy crispy fresh bread with flax seeds on it oh I can't wait to go in just keeps sizzling in the Tajin oh W oh wow it's boiling steaming W very hot beef fat boiling boiling beef F oh it's so good the preserved beef that just condenses the flavor magnifies the the metin I'll try the The Scrambled version oh wonderful man both good and actually totally different textures from the fried eggs to the scrambled eggs I'm all about Savory porridges so I love there's Tomatoes there's uh rice in there and you can just smell that Aroma of the herb as well it's really good really nicely nice flavor of the tomatoes very mellow tasting and just kind of like warming and comforting yeah something good for breakfast because it's just kind of easy and calming on the stomach as opposed to the the eggs which are really rich and Hearty this uh porridge is just nice and easy on the stomach oh wow that is extraordinary what a way to eat your eggs in the morning next with trying this Moroccan pancake [Music] oh that's delicious really moist and fluffy bubbly just a little bit sweet oh and you taste the flavor of honey I think a little bit of honey in there as well and I'm going to try it with a little bit of this natural Moroccan butter Real Deal butter oh man kind of crumbles yeah w w w w w w [Music] that butter is a real deal unsalted has a sourness to it so rich and buttery I mean it is butter oh yeah yeah that's as natural as it gets okay and then next up for the next bread and this one is stuffed with vegetables oh it's really good nice and savory you can taste the I think onions and carrots in the center maybe a little bit of cabbage but you can taste all those vegetables that really caramelized sauteed down in probably some oil um and then the bread is really thin that is delicious tou the and guaranteed when you're in Morocco you'll have some of the best orange juice and citrus you'll ever have in your life quick breakfast that was delicious I love this Garden but from here we we are off to explore and to go on a street food tour around Fez the old town and we're with Fatima Fatima who's going to guide us around welcome in Morocco thank you very much and thanks for choosing morocca as a destination oh man so GL glad to be here thank you you're welcome so normally we're in Fez now Fez is the scientific capital of Morocco and also is this spiritual City okay it's built in 789 by mul Idris first mulis first is the father of our founder okay we do have more than 9,400 streets in Alleyways is 9,400 streets and it's all those are all walking streets no cars no cars cars prohibited and let me tell you this we do have the narrowest street which is 50 cm 30 cm 50 50 cm yes we're going to pass through one later okay all right awesome yal let's going to discover okay you know what means yala yala let's go y a good all right oh what a what a city already the narrow alleys that's F and we're just getting started so Fatima how do you find your way around Fez all 9,000 lanes and alleys well I think because I'm looking I'm okay with that so you you never need a GPS you always know where you are I am the GPS we're going to visit one oh man I'm already loving just walking around exploring Fez uh one of the things that's so cool is that I mean it is only footw walking there's no motor traffic and so it remains quiet and peaceful and it's just so cool to just look up and just admire the incredible preserved architecture because in an old section okay yeah oh so they have to support the so the walls aren't coming in it's 1,200 years wow 12th century wow and then of of course one of the incredible things about Fez is that it's a living City just people live here businesses of every kind I mean you don't actually ever need to leave The Old City along with the incredible architecture and ancient history where are we at we are in the famous square of uh honey we call it we're going to try different flavors of honey and honey by the way 57 years he he's been here w uh all types of uh honey from all the different flowers and it's used mostly for medicinal purposes okay so the first honey we're tasting this one is carab honey and the Honeys are specially used for medicinal purposes oh man that is so sweet the next Honey this is lemon lemon honey I don't have it I don't have it I didn't taste M wow extremely sweet also but you have the fragrance of the lemon within there yeah you definitely taste the lemon this one this is the this medicine for br oh okay the medicinal medicinal honey so much honey it's it's very old kind and very strong really has the taste of caramel who honey is flying everywhere man that's sweet that's flavorful man that last honey absolutely amazing it kind of like stings your throat a little bit going down but they said that's the the strongest that's the most medicinal oh yeah that was a lot of sweetness but really good sh sh [Music] oh man I love how sometimes there's a natural light coming in from the top but then sometimes you duck into almost cave like alleys with a roof on [Music] top there you go the good thing that you will get a cactus fruit and you will get a free lipstick there is seeds inside chew it but not hard and SW it is healthy M to very good s and it will give you a whole red mouth my mouth is full of juice really good it just kind of liquefies in your tongue a whole mouth full of juice and then you've got these really hard seeds in the center sweet and sour we're getting deeper into Fez into the markets getting busier and busier just things everywhere you look Smoky grills Seafood meat stalls butchers and then you can just buy anything you could possibly need man it's such a cool just Walker only city oh yeah it's getting busy back here oh this smells good oh yes yes yes yes of course uh this is this is a must in FZ wow we smell there cloud of steam coming from here one of them is a mixture of meats you have everything in there uh like beef lamp uh some of the head Parts the cheeks the whatever pieces of meat goes into that big pot of meat and you have here chicken with the rice noodles and spices wow awesome steaming meat parts and chicken with noodles and you can get it two different order two different ways in a sandwich piles everything into a sandwich or you can get it on a plate and then eat it with bread so I think we're going to get the plate option and sit here this is closet sized food stall it literally is closet and then they have a little more seating over here on the other side of the alley oh man what a what a spot all right so we found a table squeezed into the closet fresh meat and what do we have here so here we do have two kind of plates the first one with a steaming chicken with noodles and we have the steaming meat which is mix between beef lamb sometimes you find the goat or camel so it's a mix of meat you smell the aroma of the meat but also you really smell the aroma of the cumin which he sprinkles onto everything cumin chili salt and then you can also add more of your own seasoning as well if you to your liking all right so this one you typically would eat with the the forks instead of the instead of the bread okay also there is veggies Some people prefer it in sand some people and it PL so oh it's really fluffy it just melts in your mouth yeah yeah it's seeming it's not mushy it just melts it's so hot it's so tender and there's some kind of a what is that herb that you really taste in there that there parcel that Pary parley cilantro okay okay and then you can dig into the the chicken oh Ultra tender and I love the cumin on here as well it's so tender yeah okay very good amazing I can't wait to try the steamed meat though rocking we meat yeah for sure for sure oh it's so gooey So Good Very tender so tender you can feel it so gooey said this one is the oh that's the the testicle May the skin potentially the outside skin of the testicle yeah go for it it's very yummy okay I Wasing but I was moving oh it's Smoky yeah before we it's so gooey it's so gooey look it actually sticks to your finger mhm I think that needs a deserves a dip in the tomato [Laughter] sauce [Music] oh the tomato sauce it just brightens it up tomato sauce the freshness of the herb in there like the coriander maybe the parle and the the skin of the testicle is definitely a little bouncy in your mouth it kind of sticks to your to the roof of your mouth a little bit oh that's tasty man everything is good incredibly soft and tender filled with the aroma the spice of the cumin so good so warming so fatty oh it's an honor I'm going to scissor cut the [Laughter] scissors okay yes yes oh man it's a steam bath of meat oh thank you sh Shan what a man this is somewhere you have to eat when you come to Fez Shan thank you st oh what a yeah what a stop that is a oh man that was unbelievable and what a incredible friendly Hospitality what a man oh there's just food everywhere in little hole in the walls man what a what a city and you kind of just totally get lost within this unbelievable maze that is Fez I mean not only your orientation but even the time of the day you just kind of don't have any clue where you are what time of day it is here you're just lost within this unbelievable Labyrinth of Fez Nar streets which is 50 cm there is many n streets in the Medina aest this is one of them okay all right yal ready yal let's go let's go here we go one of the extremely narrow streets in Fez watch your head watch your sides it literally is a tunnel careful to the left oh whoa there's a business in here all right watch your head to the left it's lower okay right side okay and we have emerged that is amazing I mean it's more of a a straight up tunnel rather than a lane into a open courtyard and then into another very tiny Alleyway it's a passage way right side to the right it's extremely cool and then we're on to the next Lane so that's actually where are we going we're going to go upstairs exactly to a tea shop okay Mr Abdullah is an icon in please please watch your head oh man these are huge steps going up whoa narrow steps be careful oh you to this little triangular step here go to the to the left side here we go legendary place yes welcome thank you hello thank you has to be one of the coolest most ancient tea shops you'll ever see the water boiling in the copper and he's got this burner that goes below the spet of the water so he just kind of controls that with the fire with the water and he's making concocting a tea with so many different herbs and he uses just a whole handful wat of herbs uh stuffs that into the water and then you can choose different herbs depending on what you want okay and so that that's the tea boiling in the in the little cups and then that goes directly into an entire cup just packed hand packed full of herbs tight wad of herbs just packed into a cup tea goes on so those herbs are just steeping for a little bit and this whole metal canister on the bottom is just to hold it because the cup is so hot but let that just steep for a few minutes before we drink it oh man oh oh man that is so good that's just a full herbal experience mint maram geranium dried herbs fresh herbs that's the most herbal beverage the most herbal tea you'll ever have in the coolest tea shop ever a little bit bitter a little bit sweet all natural just pure pure herb still solid oh look at the color man it's a straight up herbal an herbal Salon in your I came to Fez for this to try this tea oh yes that's so good the richest tea you could ever have oh this one yes it is that's a welld deserved cup of tea that is yes well deserved thank you yeah Cheers Cheers Cheers Cheers oh that was legendary tea some of the greatest purle tea ever and we're right in this Square now we're in the noisiest Square in the Medina office I call it the noisiest because of the hammering oh yeah so this is what we call safarin name of safarin is coming from Asar which is yellow color so here they're producing copper a lot of uh pans and stuff are made from copper here yes okay yeah oh thank you the one you get in your hands this is what we call B and this is almond dough Orange Blossom cinnamon sugar and we use the F dough from outside we shape it like a triangle okay so we're stopping at a very congested little intersection here to taste some of the sweets soaked and honey oh we got a lot of Honey today actually M can I break a little piece yeah go ahead almost looks exactly like a jell bee and it is pretty much similar to a jell bee soaked like a fried fried dough soaked in honey but it still retains its crispiness actually even when it's soaked in honey but just saturated absolutely saturated with honey and you also really taste the like the flavor of the fried oil as well then we have this one slipper a flip slipper it's called slipper slipper okay sesame white flour and also D dipped in Honey y oil Di and honey street food on the go oh yeah you really taste the flavor of the Sesame immediately and again I think all of them are just completely submerged in Honey look man this entire Lane is just filled with sweets this is sweets alley here just mountains of sweets soaked in honey so cool traditional Moroccan toothpick oh really okay we call it B in Arabic okay very old way how people use it as a toothpick oh nice but it is a flower and then use that stem as the yeah whoosh this script we call it Tre and normally it's quite popular forisa or which we normally we cut it small pieces and we put the chicken soup on the top ah okay yes okay so here's the the dough on the bottom ah so it has a really oily texture to it and the process of making it is so incredibly cool how she just spreads out the dough until it's paper thin almost transparent I mean it actually is transparent in areas but the dough is really oily it's amazing how she picks it up and then she just drapes it over this specially designed spherical hot plate that's there's a fire burning under it so it's just this spherical shaped hot plate and then just folds it over drapes it over so you have all the different layers go ahead oh thank you oh you could see that's so fresh and hot thin slightly crispy and gooey yeah it does kind of remind you of filo but it's a bit thicker crispy salty gooey really good hot and fresh and kind of oily [Music] [Music] delicious we've stopped off at another busy intersection here at uh and he sells a variety of dairy including local yogurt locer cheese so we're going to sample it next okay oh it's really really thick and crumbly M very soft yeah very soft soft and cream a little bit sour and creamy yeah yeah yeah that's like cream cheese cream cheese but like on the next level very natural andat okay yeah and then we've got some yogurt here this is the natural yogurt absolutely overflowing oh even separating that's without sugar without sugar okay it's wobbly well it's totally melting your mouth it's like the silkiest yogurt I've ever had just dissolves like Silk and tofu almost yeah it's really nice really light actually yeah compared to that cheese is really thick though the yogurt is so light yeah and refreshing almost puffy yeah you can actually drink it it's so thin mhm it's liquid and then we also have the the with sugar it's also soft but not quite as soft as that other one without the sugar that's good you can feel the differ yeah yeah yeah yeah but I do really like the natural one with no no sugar needed but both really good you taste the freshness of the dairy I'll try the drinking method that's the Moroccan way yeah yeah exactly I barely even feel it going down it's just goes by uh slides down now you're Moroccan from here we have a dinner it's going to be a big dinner planned welcome thank you welcome thank you hello thank you very much thank you very much sitting down for the full meal tonight but we're going to wash our hands the traditional the traditional way first okay and then a little soap in the center and this is done for special guests so it's an honor an honor to be [Music] here we're beginning this meal with the salads and I'm beginning to realize that in Morocco the best meals are at homes oh yes yes ex some of the best dishes that you get some of the variety are at homes oh and such a massive variety plants which are stuffed or they in a tomato sauce preserved okay W beautiful obun roasted in it's the in man there's like 15 different salads from chard to that eggplant scoop it all up with bread oh the Swiss chart is wonderful roasted Smoky juicy pumpkin oh nice okay pumpkin M oh yeah mhm yeah like nice and spiced as well cinnamon okay yeah swein orange blow some water oh okay oh pumpkin is amazing is this one uh fennel okay oh oh the fennel is wonderful really refreshing and Crisp that's try the pastia oh this one is really nice no with the chicken with the crunch of the almonds sweet and savory and you got so many textures going on something that's truly a delicacy oh that one is very tasty that great balance that Harmony of sweet and savory oh here comes the main course wow oh [Laughter] nice oh another giant tray and this this is what we callisa is like a shredded bread oh is that the bread we saw in being made the exactly on the egg exactly that like uh on top of it is chicken cooked in onions and lentil sauce what a gigantic is this a Tajin also massive Taj this is call it it's like a super sized exact super sized super sized it's like an entire ecosystem almost with chickens there's even nests there's a nest in there there's dates with walnuts the chick or the the lentils um and then all that bread which we saw being made in the market cooked on kind of an egg-shaped uh Hot Plate a little piece of chicken mix in with some of the bread on the bottom exactly oh some of those almonds as well okay here we go m m oh wow oh what a dish wow good wow benan benan Ben oh the bread is so thin and then it's absorbed all of that sauce the onion reduction right again the onions just simmer down to like give their full sweetness potential the flavor of the almond and garlic it's like that bread has been fried then soaked in the juices and the sauces M mama so rich and Hearty you can tell how rich and Hearty it is you can taste all the flavors together mhm yeah try with a clove of garlic yeah oh garlic just slides up like butter oh the garlic is amazing just disintegrates on your tongue melts oh this is a spectacular dish and even the sweetness of the garlic it's so sweet too oh man it's straight butter garlic butter digging around you will find figs it's been steam so it's so puffy sweet fruity with the walnut in there with the flavor of the chicken and the juices oh that figure is incredible next main course next dish oh yes another construction absolute Mountain yeah incredible oh yeah yeah yeah got actually here lamb shunks okay also parts of the shoulder as well this is what is called mamar mamar actually in two different dimensions mamar in terms of color and mamar which means also roasted okay so mamar it's like reddish because it's a different it's like with a little bit of reddish sauce it's a different like with the paprika uh and onions again and muham roasted in the oven uh yeah again the onions reduction sauce and you have of course many other things decorated with you have the apricots we have the pear yeah and also okay so for this you go in with going with bread scoop scoop in oh some of the Lamb oh man I think what's truly incredible about Moroccan food and these massive platters is just the complexity of every individual ingredient all made into it it's they're almost like dishes on their own but then combined together to create even more complexity [Music] W very good oh wow M oh that sauce the onion yeah oh yeah we call it mhm that's the onion sauce y yeah yeah oh wow the onion sauce is unbelievable you can tell like the onions have just been cooked for so long to the point where they just melt the fruits in here it's the perfect it's just an incredible Harmony of fruity sweet Savory alog together oh man that lamb just roasted until it so so tender oh man another spectacular dish every dish is a celebration I got a bite of pair in that bite try to mix the fruit that's just totally unique as well the way the use of dried fruits and fresh fruits in the cooking oh man what a sensational dish digging into that almond butter paste with the pear the D what a combination it's unbelievable all just embedded into the lamb that is like a that is that is a masterpiece an unbelievable culinary creation desert is served yes thank you to try first all right okay so we're sitting down now for dessert a whole tray of dessert and then a lot of fresh fruit but we're going to try some of these some of the traditional desserts this one is a whole coil that looks like a I mean kind of like wrapped around like a snake a coil filled with almond paste and uh similar again to felo dough on the outside and almonds and and lots of Honey has that like wetness from the honey sugary extremely sweet but with that crunchy F dough with the nuttiness of the almonds and really has that fragrance from maybe Orange Blossom try that very this is a special type of Y local Berry yeah that's only available during this season really soft on the inside is almost like jam and almost kind of has a flavor of apricot almost wow talk about convenient being able to finish your meal and then just go straight to your room to go to sleep but that was an unbelievable meal the hospitality the variety the
