Chop the overripe tomatoes into cubes. Chop and crush ginger to remove the fishy stench. Wash the tilapia and slice the onions. Pre-heat cooking oil in a pan. Create an incision in the fish so that the salt can absorb the flavor and fried easily. Rub salt on the surface and inner crevices of the tilapia. Use toothpick to know when the oil is hot, it will start to boil. Fry the fish till a crisp. Observe the bubbles in high heat while frying, if the bubbles of the oil subside and calms down it is indicated that the fish is cooked. Flip it to cook the other side till desired crispiness is achieved. Saute the onions, garlic, ginger and tomatoes. Pour-in fish sauce for the umami and flavor. Add-in water for the sauce and let it boil. Then check the taste if it needs more seasoning. I add ground black pepper. Put-in the fish on the sauce, then flip to cook the other side. Gradually add the beaten eggs and mix it simultaneously. Turn off the heat and transfer it to a serving plate. Try this recipe and let's meet to our next videos. Bye and take care.
