welcome to the charcoal barbecue kitchen where everything is cooked with charcoal today we're going to be starting with an eye of round roast I found this for $2.99 a pound it is a very very unredeemable cut of meat I've tried to cook it in many many different ways nobody explains how to do it properly well today I am going to and we're gonna explain how to cook properly the steaks from this cut most of the time this is $5.99 a pound or higher I don't understand why it's not even good in a crock pot it's tough it's flavorless it's very very lean so if you can find a cheap folks grab it because I'm going to show you how to do steaks here properly so first thing we're gonna do is cut a few steaks off of the roast and we're going to tenderize it today I've also going to slice the edge of the steaks so that the silver skin and fat doesn't cause the steak to curl when it's on the grill you can see I've made a couple of slices there and I just bought a needle tenderizer and we're gonna start punching the meat with this and this is the only way to cut this marinating is a waste of time only penetrates about three or four millimeters and eight hours doesn't do a thing folks maybe it gives you some flavor if you want to use some kind of a lime marinade or some kind of a balsamic vinegar marinade I think it's a waste of time in my opinion I've tried it all so we're just gonna puncture the Dickens out of this thing here and we're gonna do this on both sides now some people are concerned about the safety of doing this so you have to cook your steak a little bit to a higher temperature [Music] and I'm also gonna use the meat mallet as you see here because we have to do really a pre chew on this or grind the meat in some sense while retaining its form I've tried to cook these steaks many times without doing anything and they're just tough as nails at the chew so I founded them I've tenderized them and we're gonna add my favorite steak rub even ucu salt and pepper if you wish but if you have a favorite steak rub you can use that I'm using the gastro grilling steak rub that I love and we're gonna apply that to both sides I think I've also put some olive oil on there to act as a binder and then I'm going to get my grill fired up here [Music] if you tenderize these you should be able to use a hot cooking method on these steaks and I also use a regular barbecue sauce about half way in just to give it some flavor and a little bit of a caramelization so we grilled them up I've cooked them to 145 degrees or slightly higher internally and it still has a nice pink texture as you can see it's just delicious my wife said it was so much more tender than in the past when we used this needle tenderizer you can see I cooked it up with some french fries and some other sides but it's really a nice steak now enjoy [Music]
