saka fett youtube and let us make this gorgeous roast chicken [Music] so guys this is the chicken that i will be using today i'm going to be using this medium whole chicken that i got from littles yesterday and we are going to spatchcock this chicken right we are going to cut out the backbone and all the good stuff so i'm going to remove it from the packaging first of all be very careful not to get all those chicken juices all over your counters as you can see i'm using my red chopping board for raw meat and just discarding all of the packaging into my bin okay so i'm gonna start by just cutting off some of the excess fat that's overhanging i don't like that at all if that's not something that you want to do you don't have to do it but i just feel like some of that excess fat just has to go okay once i've removed all of the excess skin i'm just gonna go ahead and flip it over i'm gonna cut off this tip because i don't like it and i am now going to locate the backbone so if you look you will find the backbone is between my fingers here very easy to locate and you're going to need some kitchen shares make sure these are nicely sharpened and you want to cut on either side of the backbone okay it's very easy to do trust me you have this done in about 30 seconds to a minute but you need very sharp kitchen shares to pull this off or else you'll be there all day so as you can see backbone is off it was actually not that hard and you just want to spin your chicken around use a knife and just cut in between there like so and just pop it open and this is it you have a nice spatchcock chicken you see the chicken actually looks nice and pretty with the legs all crossed and stuff you can choose to bake it with the wing out or tucked in i prefer to tuck in the wing that way it doesn't burn or get black too quickly and this is it my loves very very easy the prep for this is about two minutes so we need to go ahead and wash this chicken get rid of all those hairs all that skin it's a good rinse with lime lemons whatever you usually use sometimes i use vinegar but guys you need to clean it somehow you need to do something to it so as you can see i'm just removing any excess little bits of fat any excess slime skin guys this doesn't take long at all trust me if this is something you're passionate about it wouldn't take you more than five minutes to prep up your chicken get rid of any impurities and all that stuff trust me if it's going in your body you need to clean it you need to you know prep it nice yes for the backbone i tend to like to remove the blood and any you know just listen clean the thing right this don't belong in the chicken take it out clean it out any feathers anything take it out it doesn't belong in there okay so i am just cleaning out that little backbone which happens to be my piece and i also like to take the skin off that is the only part of the chicken that i will take the skin out of because i find that keeping the chicken skin on the whole chicken will keep it nice and moist and all that good stuff the time for washing that was just the prep part okay this is now the second part we're gonna wash it with some limes and we're gonna clean it and rinse it out and listen if you think i took out impurities a while ago because now you're gonna see things you're gonna see skin you're gonna see all sorts of things coming out from that chicken so honey if you don't think it's important to clean your chicken that is on you but trust me if you're gonna eat from my kitchen at any day trust me that chicken gonna have a little lime flavor and everything going on because i'm gonna wash it well sometimes i even put it to soak and everything but today i'm rushing for time so i'm using a little bit more limes than usual so have a look at this have a look at that can you see this from the wing no man wash the thing clean the thing it's a must so guys as you can see i flipped it over and then i'm just using a fresh piece of lime to just rub it all over the chicken because it's like the lime is acting as a scrubbing brush the way that i'm rubbing it on it just really helps to get the slime out trust me that extra liquid step goes a really long way in the way your chicken is going to taste the fact that you know it's cleaned real real good so now i'm using a little bit of water this is just cool water from the tap and i'm just rinsing it out getting rid of any skin that could have come off and just rinsing it out okay now even when i'm renting it out any little spots that i would have missed i'm just gonna take it out look at this look can you see guys so i'm just giving it some last minute touches just ensuring it's all clean and this took me about five minutes so didn't take long at all so i'd say for about the prep and the washing was about 10 minutes in total i'm really not gonna tell you how to run your kitchen how to cook your food nothing like that i'm just sharing what i like to do what has been working for me for a really long time and yeah so this is it my chicken is nicely cleaned nicely washed look at that look at that see guys see look at that so i'm gonna get rid of that and now i'm just gonna put a little bit of fairy liquid into the sink because we need to clean it straight away i don't leave this at all i use a fresh sponge and just clean this off wash it off well make sure to wash the sink any area that i touched although i try my best not to splash water everywhere and after i finish washing it down i still go in with some detail disinfectant and still spray it down leave it for about two three minutes before wiping it down and rinsing it again so that is very necessary okay very necessary so guys once my chicken was nicely washed this is how it's looking i've got quite a few seasonings that i will be using today and let me just show you them one by one as i pull it out okay so as you know salt and black pepper these are my two favorites also gonna be using a little fresh thyme on this roast chicken as well and i have some garlic powder as well as some parsley i'm using my all-purpose seasoning of course and we have our green seasoning some leftover from the batch that i made this week so i'm just going ahead and drizzle a little bit of olive oil onto the chicken as that will help to keep it nice and crispy and then we're gonna start seasoning it up okay so we're gonna put our salt and don't worry the chicken will be seasoned all over guys i've done this so many times so don't worry at all okay put your salt with your black pepper and we'll flip it over in a second and do both sides fresh thyme has to go on the top of there we have the garlic powder actually seasoning the chicken in the tray that i will be baking it in means the seasoning goes the way we also have our all-purpose seasoning beautiful adding a little bit of parsley on there as well last but not least i'm gonna add some of my green seasoning oh my goodness that looks so good so good now it's time to rub it in my absolutely favorite part look at that guys and you know we need to turn it over as well look at that wow i'm just going to put a little bit more all-purpose seasoning on the back instead of adding more salt okay and i'm gonna put some thyme as well okay put some thyme on there very important and we will put just a little bit more garlic powder okay but as for salt not necessary okay beautiful so you want to rub that in rub it in guys we also have that backbone which happens to be my favorite part guys that is my favorite part see this oh my goodness and my glove is coming off and then we're gonna flip it back and for some reason it's like the green seasoning has vanished but that's fine we will put a little bit more from what we have over here on there so just evenly distribute distributed beautiful guys look at that the parsley mixed with that green seasoning is everything so just going to sprinkle just a little bit more time on the top without rubbing it in okay and that will give it that nice herby look when it's all cut because you cannot have too much time on there nope nope see how it looks with the little specks on there i really like that and we will put a little bit of parsley on there too now if you're feeling a little bit more extra then just go in with a little bit of paprika okay so there you have it guys this is how my chicken is looking nicely seasoned oh my goodness it looks absolutely wonderful guys and you know it's seasoned on both sides today i'm actually pressed for time so i'm actually just going to push this into the oven i preheated my oven for 10 minutes so i know it's nice and hot and we are gonna roast this up now this chicken is about one and a half pounds and it will take about an hour and 15-20 minutes to cook so let's go ahead and push it into our oven oh my goodness so good so into the oven we go i'm placing this on the middle rack and guys we're gonna roast it for an hour and 15 minutes but i will come back in about half an hour to show you how it's looking so we can taste it look at that my loves wow see just get all those juices now if you don't have a turkey baster you can always just use a spoon okay and this is how it's been looking it's going beautifully we have my neck bone in the back we have that gorgeous backbone in the back so i need to give it about 30 to 45 minutes i'm gonna come back in about half an hour and paste it again absolutely gorgeous this is going to be beautiful look at that wow see all those herbs and everything keep it nice and juicy beautiful so i'm just going to go ahead and push it back into the oven and i'll come back again in 30 minutes and show you how it's looking so this is it all done my loves all done and the total cook time for this was an hour and 10 minutes i basted it twice at 30 minutes and at one hour and then for the last 10 minutes i just let it get some nice color as you can see the skin is
