I know that there's many of you who's craving and are trying to make the cheesy milky donuts, that we have made yesterday. But I also receive a lot of messages that, "We're just going to buy yeast now", "We're just gonna order yeast" "or we're just waiting for timing before making since the process is quite long and very tiring" So this afternoon, what I am going to teach you is just very easy. Okay? You're also not gonna need an oven and I'm sure that you have mostly of the ingredients in your house. So this is Easy Puto. What is Puto? Puto is rice cake. Why it's called rice cake? Because traditionally, like here in Biñan. Our recipe of our puto, we spoil or ferment the rice first to produce it's natural fermentation and the main starter would came from it that's why it will rise because it's fermented. Just with the story already, it's already a long process when you think of it. So there's a lot who develop an easy puto recipe by just using flour instead of using rice. So what I'm gonna teach is like muffin, steamed-muffin recipe that is just very easy to make. Let's start it with the ingredients. So first, baking powder. Strictly, you need to use baking powder so baking soda is not acceptable, okay? Salt, why is there a salt? When we bake, salt is considered as flavor enhancer. So that would be the one who'll show the flavor of the ingredients. Sugar, cake flour. So I know that the next question would be like "What if I don't have cake flour, may I use all-purpose?" It would also be okay. Water, evaporated milk and melted butter, 1 tablespoon. I will put the ingredients on the caption of the video, okay? How quick this easy puto to make? Put all of your dry ingredients on the mixing bowl. Baking powder, salt, sugar and flour. And, wire whisk. So you're not gonna need mixer on making this. When you put that one, pour the water. Evaporated milk, "But what If I don't have evaporated milk?' If you're confused, what you can also use is fresh milk. So the water, your water is half a cup, right? and your evaporated milk is half a cup also. Half plus half is one cup. You may also use one cup of fresh milk. The reason why I'm just using evaporated milk because of course, during the quarantine season. I'm sure that most of us kept canned foods, okay? And melted butter. Again, you may also use oil. Of course, it's more delicious when it's butter. This is the main technique here. When you're making muffins or easy-to-make cakes, you need to mix it quickly. When the flour disappear and the mixture becomes smooth, you stop mixing because if you keep on mixing it, you will overmix the butter. What will happen when you overmix the butter? Your cake would harden, your product would harden because you will overwork the flour. Okay, so look at this closely. It's already smooth, once it become smooth, you stop mixing and then I have here puto molds. The puto molds, I'm going to arrange on to my bamboo steamer. Because it would be better if we use bamboo steamer, why? Because it does not wet during steaming. Because when your steamer sweats, and the water drips on to your puto, the outcome wouldn't be good. So using a bamboo steamer, you can prevent the condensation a bit. And then, you put your puto butter. You don't need to grease the puto molds. Why are we not greasing it? So that your puto would rise better. Because when you put oil on your molds, the butter would slide. So when your butter slides, it wouldn't really rise. It would be better if it sticks, it's a pulled-up quote, right? When you have something to hold, it would worsen like puto. So you put it there evenly. I'm using an ice cream scooper. It's more even and precise and of course, we would consume it entirely. I already know your next question, "What if I want to make that as Ube?" Just put ube flavoring, about 1 tablespoon. Although me, I like using the natural ube powder. There's something you can bought like dried ube, that's what we use, you can also put 1-2 tablespoons. And you steam, my water, I put it at full boil. It's full boiling. And of course, the partner of puto, you put cheese. I'm putting quick melt cheese on top. Okay. You may also make it as puto pao, just put pork inside. You may also do that and then I'm going to put it here. Okay, look at it closely. Put it here. And the beauty of using bamboo steamer, actually it adds aroma to the puto and then you cover it, your fire needs to be high. Because full boil, we call that as blast cooking. It's very hot, you will do a temperature shock. When you set up your puto on a boiling water, it would be really heated so it would rise very quickly. That's why when you see the top of puto, it's like it cracked a bit because it really rise because of the high flame or the high steam, high heat steam. So I'm going to leave this here for around 10-15 minutes. Avoid that you're peeping it, I know that since I also do that. "Have the putos risen already?" and then you're gonna peep it. Avoid doing it because once the temperature drops, that means that when the heat decrease inside the steamer, there's a chance that your puto may not really rise. So I will see you in 10-15 minutes. Okay, so it's steaming for five minutes already and when you peep it, the cheese you put before, it would sink in the middle. So what I am going to do, I'll just put on a bit of slice of cheese the top, you can see that it's already rising it, right? You put a small slice of cheese and then you steam it again for five more minutes. Let's get back here again. After 10-15 minutes, I'll prioritize this because I switched it before, this is the bottom part before and then I'm going to bake this one for two more minutes. So as you can see there, the cheese has totally melted. This one, I made this earlier and while it's hot, you may already remove that from the mold. See how nice? This is I'm telling you that it won't really stick on the mold and then you can just put it like that here in the container. And this one, I can show you what's inside. Ooops, as you can see it, the cheese is oozing out and you see how nice and moist and how fluffy the puto. I'm going to try it. "Do you know what's lacking?" Dinuguan or Filipino Pork and Blood Stew. But the problem is, I'm not good on cooking Dinuguan. My mom is the one whose good on cooking Dinuguan so I'm going to ask her, maybe I'll ask her on how to make it and then she'll teach it to me and I'll show it to you.
