this is red lentil Curry to a large pot or Dutch oven add a drizzle of olive oil and a finely chopped onion fry for a couple of minutes then add freshly grated Ginger and freshly grated garlic and fry for another minute then let's toast the spices we're going to add curry powder cumin seeds or ground cumin and red pepper flakes optionally you can also add ground coriander turmery powder and of course black pepper toast on low heat while stirring for about a minute or until you smell the amazing Aroma of the spices then add the vegetable broth a can of crushed tomatoes then rinse the red lentils and add them to the pot season with salt stir and cook for about 20 minutes or until the lentils are almost done in the meantime you can cook the rice then after about 20 minutes when the lentils look like this add the coconut milk stir well and finish cooking for another 10 to 15 minutes until the lentils are fully cooked then when the lentil Curry is ready add the garam masala and turn the heat off stir gently until fully Incorporated serve the curry almost basmati rice squeeze with lemon sprinkle with cilantro or parsley
