[Music] onto this menu a delicious noodle recipe that goes from pan to dish in record time this is a delicious 15 minute noodles boil some water for the noodles [Music] chop down about 60 grams of broccolini into bite size pieces soak a quarter pound of them rice noodles in the hot water for about three to four minutes [Music] i'm using about 150 grams of mixed mushrooms here have some fresh shiitake some cremini mushrooms and some shimeji mushrooms but of course you can use whatever mushrooms you like two cremini mushrooms sliced chop up 50 grams of fresh shiitake mushrooms [Music] chop two sticks of green onion into bite-sized pieces one tablespoon hoisin sauce [Music] one teaspoon toasted sesame oil one teaspoon dark soy sauce 2 tbsp soy sauce [Music] stir give the noodles a stir to get rid of the excess starch then drain out the water non-stick pan medium heat a good drizzle of olive oil saute the broccolini for two to three minutes [Music] mushrooms [Music] saute the mushrooms for another two to three minutes [Music] noodles sauce saute for another two to three minutes until the noodles are cooked [Music] plate sprinkle over some white sesame seeds [Music] you can now make this easy and fast noodle dish with absolute confidence [Music] three pieces of garlic roughly chopped [Music] one onion diced [Music] medium piece of ginger diced one tomato diced [Music] [Music] pat dry one pound of from tofu and chop into bite-size cubes [Music] [Music] so [Music] of course this is a really popular dish so this is not the only way or the best way of making it this is simply just one way saute pan medium heat two tablespoons grape seed or veggie oil one teaspoon cumin seeds one teaspoon coriander seeds cook for about 45 seconds onions garlic and ginger one teaspoon salt saute for five to seven minutes tomatoes one long green chili finely chopped saute for 4 to 5 minutes 1 cup coconut cream stir the mixture for about a minute to incorporate the coconut cream one teaspoon turmeric two teaspoons garam masala [Music] stir 200 grams spinach [Music] when the spinach cooks down we can add in the remaining 100 grams [Music] add and cook down the remaining 100 grams of spinach so blender carefully transfer the mixture to the blender blend on medium to medium high for 10 to 15 seconds pour the mixture back into the saute pan [Music] medium heat tofu [Music] gently stir to coat the tofu for about a minute or two [Music] plate [Music] [Music] [Music] you can now make this delicious recipe with absolute confidence [Music] so i have about 250 grams of kind of a mushroom mix that i have here just mushrooms i have in the fridge but of course you can use whatever mushrooms that you'd like and i have these sort of seafood mushrooms of course my crimini mushrooms i really like and one of my favorites the amazing delicious oyster mushrooms slice the cremini [Music] mushrooms chop down the seafood and oyster [Music] mushrooms [Music] set the mushrooms aside [Music] three sticks green onion finely chopped [Music] nonstick pan medium heat mushrooms saute the mushrooms dry for five to eight minutes [Music] [Music] sauteing the mushrooms dry will really bring out that delicious earthiness [Music] three tablespoons olive oil [Music] green onion [Music] one and a half cups left over rice two tablespoon soy sauce saute for another two to three minutes and you're done [Music] plate sprinkle with white sesame seeds you can now make this delicious mixed mushroom fried rice with absolute confidence food processor 2 cups rolled oats [Music] i'm using some gluten free oats today but you can use regular ones or gluten-free they both will work it's up to you [Music] blend the oats for a few seconds [Music] so 100 grams cremini mushrooms roughly chop half of a red onion one cup canned black beans quarter cup corn half of a green bell pepper one large cooked beet one teaspoon salt one teaspoon garlic powder one teaspoon onion powder one teaspoon cumin one tablespoon smoked paprika [Music] pepper [Music] drizzle of olive oil [Music] blend in the fruit processor for about 45 seconds [Applause] [Music] transfer the mixture to a mixing bowl [Music] cut a sheet of parchment paper into six squares about four by four inches [Music] right so this burger mixture is actually very very sticky so we're going to oil our hands up with a little bit of olive oil and if it becomes a little bit too sticky to your hands just add a little bit more olive oil to your hands try not to over shape them because they will just get super sticky [Music] and then you do all your hands shape the patties and place them on the parchment [Music] paper [Music] refrigerate the patties for 15 to 20 minutes before cooking this will help it firm up so while we wait for the burgers to firm up we're going to slice some shiitake mushrooms give them a little saute and melt some cheese now in this episode i'm using the violife cheese that's already sliced it's quite delicious not sponsored by this brand but i really do like their product 200 grams fresh shiitake mushrooms finely sliced [Music] non-stick pan medium heat toast the buns for about 30 seconds on each side set the buns aside [Music] drizzle in some olive oil [Music] saute the mushrooms for four to five minutes season with salt and pepper [Music] set the mushrooms aside [Music] once the burger patties have firmed up they're a lot easier to work with add another small drizzle of olive oil add in the patties and cook for about 3 [Music] minutes carefully flip the patties [Music] place a slice of cheese on the patties place some of the shiitake mushrooms on the cheese cover and melt the cheese for about a minute [Music] this is a delicious chickpea mayonnaise really nice and thick i mean in [Music] couple leaves lettuce burger patty top with some red onion and you're done you can now enjoy this delicious burger with absolute confidence honestly burgers are probably one of the best things ever look at that [Music] man that is just delicious so packed with flavor visually it's beautiful it has some really nice colors the green the red onion the shiitake mushrooms and the black bean burger has this really really nice it just sears really well and it really creates that dark almost uh sort of a burnt sear on the outside and it really stays together definitely does not fall apart at all flavor wise it's really meaty as the mushrooms the cremini mushrooms that we blended up with the black beans and the beets actually is what gives it that sort of slight pink color incredibly delicious with the different aromatics with the spices topped with the sauteed mushrooms the shiitake mushrooms just adds that kind of delicious umami flavor added with the melted cheese really delicious just want to show you a little bit of that delicious patty on the inside i mean look at look at that definitely have to toast the buns beforehand it gives you that really nice charred taste and a crispy kind of bun texture as well really really delicious beautiful visuals and really easy to put together i don't know about you but i can totally eat this every single day that is just
