In response to the chap who asked about the advantages of this type of boot construction (the comment is deleted, but I wrote this so I might as well post it!):

I'm no cobbler or cordwainer, but from having owned a number of pairs of shoes with a full leather sole...

As you go through the breaking in period, the warmth, moisture and pressure that you generate wearing them will mould the leather to be a perfect negative impression of your foot. Once broken in they're extremely comfortable.

Also, from what I have learned about shoe construction during the process of finding a pair of mountaineering boots that fit properly:

Partway through you see him refering to a drawing of the owners feet with details of the circumference of various parts of the foot before selecting a last to match.

By re-lasting the upper as he fits the sole, the upper will actually take on some of the job of supporting the heel and arch (removing the need for a highly shaped insole).

Essentially in that respect he's custom fitting the existing boot to his customers foot.

The only downside is that whilst thick, good quality leather does give a comfortable fit, and reasonable cushioning...

For really high-impact activities modern EVA type cushioned midsole do have a real advantage, there's no denying that.

If you look at a modern high-end mountain boot, they're still lasted around a leather insole to take advantage of the superior fit and durability, not unlike what the chap is doing in in the video... but then, will have a much thicker EVA midsole, steel/tpu shank and rubber outsole secured by adhesive only, and a rubber rand rather than a leather welt...

Which shows manufacturerstaking advantage of both the old and the modern together. The cost of that construction is reflected in prices for those boots starting at around £250 for an entry level pair...
