with kelsey [Applause] [Music] [Applause] [Music] yeah uh so anyway welcome back to dinner with kelsey we are here in the kitchen the first video of 2021 the first dinner was kelsey of 2021 the first meal i'm eating today and it is 5 p.m and that is really not okay and i am starving but i didn't really feel well last night a little a little nauseous last night so i didn't feel like eating all day it because cody made it last time but so i'm gonna make it this time and it is the silky sicilian penne i have never cooked mushrooms before so that's a first look at me trying new things and i'm just excited you guys i don't know how else to say it so let's get our bag of ingredients and let's get cooking i was gonna change out of this shirt today and like for this video and i was like what's the point this is what i'm wearing it's not like we have anywhere to go anyone to see are you ready for the ingredient haul the first ingredient hall of 2021 here we go [Applause] penne penne rigate chives hello just kidding it's tomatoes grape tomatoes to be exact mushrooms which i i'm not a huge mushroom fan but i think i need to learn how to love them and the first step is conquering how to cook them i think that's the first step mushroom stock concentrate zucchini get your mind out of the gutter okay this is a zucchini lemon crumb fresh spelled fresh you know what i mean okay italian seasoning [Music] it's on like parmesan this is parmesan cheese [ __ ] first step as always prep this is where i fail every time so first thing we're gonna do i'm gonna go over here i'm gonna bring a large pot of water to a boil salted water to a boil so i'm gonna cut the zucchini we're gonna thinly trim and thinly slice the mushies we're gonna have the tomatoes we're gonna mince the chives and we're gonna quarter the lemon we've got a lot of prepping to do people let's get started okay so i am going to do all of the cutting and all of everything for these let me just wash all these and we're gonna cut i kind of just [ __ ] it all up does that frame look okay i don't know okay trim and quarter zucchini lengthwise what does that mean why am i struggling so much with this wow i didn't know this one was gonna be such a struggle hi okay okay okay um okay it's so it says to trim and quarter the zucchini lengthwise yeah so they want me to they want me to cut it like that yeah there's no part that i need to like throw away okay right okay okay we're cooking bye bye he looked so disturbed when i blew the kiss with a knife okay cut crosswise into half inch pieces if anyone's gonna comment like girl i love you but i can't stand when you cut things um just don't just don't comment it because i know i don't know how to [ __ ] cut guys i'm not a chef i'm learning that's what hellofresh is helping me do okay i'm trying to make sure i don't accidentally cut my finger again and not notice like i did last time zucchini done now it's shroom time so i guess there's so slimy so you trim i'm just gonna assume that that means trim and thinly slice these here we go we're cutting a mushroom it looks disgusting i don't want that okay look big boy okay now to do the tomatoes while i'm not huge on mushrooms i'm huge on tomatoes i really am okay mince chives okay it doesn't look bad i have to quarter my lemon there we go lemon quartered okay now that we're prepped time to take it to the stove [Music] okay i don't have olive oil but i have avocado oil so i'm going to use that now put your zucchinis in zucchini is going in a little soft well pep cooked stirring occasionally until golden brown four to six minutes oh so we're cooking this all separately so i'm gonna keep cooking my zucchini and then we're gonna cook our mushrooms well you'll see won't you you'll just see zucchinis are cooked had a few casualties because i couldn't relax while stirring them but that's fine we're going to transfer them over to this bowl for a bit now we're going to cook the mushrooms look okay these i have no idea when to stop cooking them now my my water is just about boiling so i'm gonna get my pasta in goes the pasta [Applause] out mushrooms are cooking people mushrooms i like really don't even know what to look for here but they do smell good now that they're like cooking and they've they've diminished in size so maybe that's why they gave so many mushrooms i rinsed the pan out that's what it says to do now i'm supposed to heat tablespoon of butter butter in and a little bit of oil this is hot or it's melted so i'm going to put the tomatoes in and putting those in with remember this guy the italian seasoning so we put the tomatoes in with the butter and the oil teaspoon of this in the italian seasoning yum and now some salt and some peppy peps and then you just stir this around oh yeah that smells so good okay so now i'm going to stir in half the chives and juice from half the lemon i love lemon reduce heat to low and stir in stock concentrate oh yeah so i'm putting that mushroom stock concentrate in there yep oh yeah 1 4 cup pasta water i don't know i'm gonna mention here okay so i'm gonna whisk this in to here ready bad i did a bad job at that i'm making the sauce right now i'm starting to to get what's going on whisk whisk whisk did i have crumb fresh on my face i do season the salt and pepper here we go creme fraiche everywhere salt a lot pepper add this this is the zucchini and the mushrooms okay hang on so i have the zucchini in the mushrooms okay so we have another tablespoon of butter going in and i have to add the penne that's probably important to add the pasta into the pasta sauce okay now put the butter back in okay so we're gonna mix that up and then we're gonna plate it you see it looks pretty good let's go back over there and plate it we have our bowls [ __ ] looks dang as [ __ ] oh little penne on the table oops i mean on the pantry on the counter heads are cut off so we will kneel we're gonna sprinkle some chives on eating a chive eating a chive eating chives okay now we are going to sprinkle with some parmesan cheese do you want your lemon squeezed on yes please and now folks please it's time there are our pastas and now mixing it up mix it real good oh my god i think it's totally slimy but it's all right wow god it feels so good like making that sauce you know it's just like because it's not a classic sauce no lemon yeah i mean it's completely [ __ ] up it's so good this is so good it's bad and no time like i feel bad eating this because it's so good i may seem stressed out but it's actually quite easy i just don't know how to control my stress in the kitchen um but this is amazing so that's the end we're gonna eat now um and watch friends oh yeah we're gonna watch friends you
