hi everyone today I'm gonna show you all how to make red beans and rice who doesn't love red beans and rice here's what you'll need I have five cans of light red kidney beans I like to use the light ones you can use the dark ones if you want it too now I have five cans of those and these are 15 ounces you'll need bacon salt pepper parsley Maggi polio and what Maggie poyo is is it's a chicken flavored Boyan if you um don't have this kind in the powder you can get the cubes and then you just kind of break it up into your dish you'll need coconut milk chicken broth tomato sauce you'll need sofrito you will need Spanish olives you will need 1 clove of garlic chopped you will need cilantro green bell peppers and onions chopped first thing that we need to do yes I have my pack of bacon and I need to cut them up into chunks just like this let me show you just about how big I would like them to be when you're making red beans and rice you can use ham but um or you can use bacon this is the size that I like to use just like that okay not too big not too small and so cut your bacon I always use a whole pack of bacon now I've made this with Italian hot sausage but the way that I prefer it is with a bacon I find that the best way and then I've also made this with chorizo I really like that using the chorizo it was delicious okay here's let's get this cut and then we're going to get this bacon fried up we want this bacon to get nice and golden brown and crispy okay that's the beginning of our dish let me finish cutting this and I'll be right back ok everyone I have the bacon nice and chopped up and now I have just a frying pan here with a little bit of oil in there and what I'm gonna do we're going to go ahead and put the bacon in the frying pan and getting it to brown up right okay let's get this going I have a wok then I'm going let me rinse my hand off real quick is that bacon also there meanwhile what we're going to do is go ahead and start on these beautiful beans now when I make red beans I always use the can I never use the fresh beans for this ok but what I wanted to tell you is I like to use the brine that's in the beans I don't pour mines out I like this juice it gives it a little bit of thickness it has starch in it and it helps for your dish to be nice and and thick not too thick but I always love the brine water pour it in there to get all that goodness out okay so let's put these pans in here put a little bit of water in each one and hit that bottom out just like so all right next I want to show you some tricks to give this so much flavor put some water see that goodness that pick starches down in the bottom we want that we want all of them usually five cans feeds my family for about two days now there are bigger can swell then I cans their jars and you can use two of those and that was beautiful out to be about the amount of five of these cans sometimes you'll see me use those I couldn't find those today so now here's what we're gonna do let's go ahead and season our beans let me get our seasoning here we have salt parsley pepper Maggi poyo chicken broth okay and we have garlic alright now that's what I want to put into my beans right now so let's come over to the beans while this bacon Fries up alright guys let me get a good picture in there we go let's go ahead and put some salt that's good don't put too much salt because you're gonna use your Maggi boil the chicken flavored Boyan and it had some salt in it okay got that much guys parsley we're gonna put black pepper a nice amount all right and I have one fresh garlic chopped up just one clove of garlic all right and then I have one 14 ounce of chicken broth put that right on in there just like so okay you can hear the bacon over here throwing up now last night I made some cheese stuffed hamburgers and I had some onions leftover that I had saute instead of throwing them away I'm just gonna throw those sauteed onions right in there no problem right that way we don't throw them away okay so now let's come over here over here I have my onions and bell peppers chopped up we're gonna go ahead put these right on into the beans and they're chopped up to like a a small you don't want large pieces in okay over here and then I have five Spanish olives yes I said five Spanish olives now what I do with these I like to use them in my red beans but not everyone eats them but what I'll do at the end of my dish I'll take them out because I love they give a really distinct flavor from the brine up there in pink is a really good flavor inside of your beans and then towards the end like I said I'll pick those out here's our coconut milk will do something with our coconut milk when we do our rest okay I have tomato sauce in I have this beautiful sofrito okay once our bacon gets done I'll show you what we're gonna do with the sofrito okay so right now we can come back over to our beans let me get a big spoon stir all of these ingredients into these beautiful beans and I have the heat on a medium-high right now okay we want to bring it up to a boil and then we'll turn it down the low okay now feel free to use a red great red bell pepper or a yellow red pepper red pepper whatever kind you want to use all right let's stir this around just like this let's take a look at our bacon here's the bacon everyone I'm gonna go ahead and we're gonna use some of this grease from this bacon okay that's gonna give us a lot of flavor guys if it's too greasy we'll pour some in a grease off but we are gonna use a lot of this creeps okay let that get nice and brown I'm gonna put the video on pause and I'll be back guys okay okay everyone I'm back now let's zoom in on this bacon and I can show you what we're looking for all right see how the bacon is getting nice so let me put it up to the camera see how it's getting nice golden brown this is about what we're wanting all right now if I had a bacon that was really really really fatty it would let off a whole whole lot of grease and we don't want to use too much grease okay but this bacon doesn't have a lot of grease so I'm gonna use most of it and pour the rest off so what I'll do at this point is go ahead and pour off what I'm not gonna use okay be right back guys give me one second because we're going to pour this right into our beans with the oil that we're going to use is that oil is gonna be so much flavor guys okay now get a good look see how much oil I pour it off but yet we still have some oil okay now what we're going to do I made sofrito sofrito is Spanish mixture see this here and you put green bell peppers green onions you put garlic you put oil you put Maggie you put water and you blend it up and you put good now this right here guys this is where the flavour sets in once you start to cook that sofrito oh my goodness and you can you can literally like right now you can smell the garlic you can smell the green onions and the white onions and the bell peppers in there guys that right there there's our flavor guys that's what's about to turn this dish into only that's the only word I can think of this is gonna turn this into a wing oh man okay yeah let's go ahead and put our just a few sprigs of cilantro all right here's our five Spanish olives a little tiny bit Maggie polio just like so guys get that sofrito nice and cooked up with this bacon great hmm this right here is really making my mouth water if you could only smell if you could always smell this right now guys okay let's get back over to the beans here the beans are just simmering they haven't started to boil or anything yet right but let's pour that goodness right into there guys get it all in there don't leave any of it in that pan cuz that's all good flavor you hear me I mean good flavor oh it smells so beautiful guys if you have a size own packet use one size own packet okay I had AI I bought some sass on today and I must have left it at the grocery store but it's okay cuz this dish hey this dish is filled with love it's gonna be good regardless but thought this is a zone but if I had it I would definitely use that one packet of Sal's own okay all right let's do this mix this up very well let me zoom in for you just a little bit all right and now this is got like I told you guys this has to come to a boil then we're gonna turn this on low and just let it simmer we're not gonna put a lid on it just yet okay let me get that cilantro off of there here we go yeah get my other spoon this is a spoon I like to use awesome now you can put a butternut squash in here if you wanted to if you wanted to use butternut squash you would cut it into medium squares and when this is almost done you would put your butternut squash in here all right so now we're going to go ahead and put our eighth ounce cake of tomato sauce this tomato sauces no-salt-added okay that's the one that I like to use alright now I have some extra tomato sauce if I decide to use the extra tomato sauce during the cooking process guys I'll let you know okay but right now we're looking okay okay I'll have to taste it a few times and then like I said if I decide to use more tomato sauce I'll let you know all right now coconut milk we're not gonna put we're gonna put a little bit of coconut milk in our beans but that's gonna be towards the end of the cooking process okay what we're gonna do now is get our I'm gonna get my rice going we're gonna let this simmer and let these vegetables cook down with these beans as soon as this comes to a boil I'm turning it down on low okay this is a slow process recipe just just take your time guys don't rush it when you take your time and you don't rush it it always turns out good guys patience is the key to good food all right just let this go and I'll be back meanwhile I'll start on my rack okay guys I just want to show you they um red beans have came up to a boil and I've turned them down although okay and we're just gonna let them simmer and let those vegetables marry and let this sofrito cook inside of these red beans all right so just wanted to show you and let you know that I've turned this down on low right meanwhile I'm making my rice on the side okay look at this guy's I wish you could smell this right now be right back okay everyone my rice is going and let me give you a secret about my white rice now a lot of times I make regular jasmine rice or regular white rice this is a white rice that's you boil it in a bag you just boil it for 12 minutes guys it's done it's it was not that now it'll be done after 12 minutes you take it out the bag and it's always perfect this is my go-to when I want to make white rice but here's what we're gonna do guys check this out really quick okay so now what I like to do once the rice starts to boil I'm gonna take three-quarters of this can and I'm gonna pour this coconut milk right on in there okay I'm not gonna pour it all in there okay because I'm gonna use some of this coconut milk for our red beans I said yes yes yes this here guys this is my curveball that I'm throwing at you guys and I want you all to try it this makes the most delicious rice you have ever had mmm just like this guys and try it with jasmine rice it is so beautiful it smells so good it tastes so good it's lovely okay so now we just let our rice boil for the 12 minutes that it acts for okay meanwhile let's take a peek in at these beautiful beans remember to save some of that coconut milk because we're gonna put some in here but now what I want you to know is that coconut milk is not sweet there is a coconut milk that you can buy in the stores that is sweet that maybe you could use for desserts this one right here is not sweet at all you taste the coconut flavor but there's no sweetness at all okay so don't worry about that all right here's these just simmering away all right guys we'll let everything go and I'll be back here in a little bit okay everyone it's been 12 minutes and art rice has been cooking in the water and coconut milk I'm getting ready to take it out and put it in a bowl and I'll show you how fluffy it is be right back guys okay everyone here's our rice look at this rice let me zoom in a little bit so you can see it a little better look at this rice guys nice fluffy not sticky not mushy perfect every time and with that hint just the hint guys of that coconut milk Oh beautiful there we go if you all know me you know I love to put parsley in everything parsley on everything parsley makes everything beautiful okay and we'll just set this aside I'm not going to cover it okay just set this aside let's take a peek in on our beautiful beans guys great let me zoom out a little bit so you can see the whole bowl for the whole pot awesome all right and you can see that our green bell peppers and onions are starting to cook down that fresh garlic in there the beans are getting nice and soft this is just what we're wanting guys this is just what we're wanting mmm look at this guys take a look at this mmm remember we have those five Spanish olives in there and they're gonna let off a beautiful note in here and like I said feel free only put five in that way I can find those five and take them out like if my husband wasn't eating it I'd leave it in cuz I don't mind eating olives but he doesn't care for so I just take them out and still we're left with that beautiful flavor that then that they let off in this bacon guys member the bacon grease we put in there that sofrito tomato sauce and right at the end we're gonna finish it off with this beautiful coconut milk okay let's let this go and I'll be back guys after a while okay everyone our beans are exactly where we want them let's go ahead and put the rest of this coconut milk right on in put the whole can in scrape that goodness out guys whoops we want all of that goodness okay and one thing that I wanted to tell you guys was make sure make sure when you're putting your sofrito in make sure you use four tablespoons okay sofrito is a big key for this taste that we're looking for guys look at this oh my goodness we're gonna let this coconut milk simmer in here for seven to ten minutes and then we'll be ready to taste this plate it up and give it a taste oh man I am so excited turn my stove off over on this other side look at this guys but look how thick it got see this it's just beautiful this is exactly what we're wanting guys this right here mmm oh man I can't wait to taste this my family's ready oh look at that perfect and like I said earlier in the video make sure that you guys save the juice or the brine that the beans were in alright and it helps you to get this same consistency I love this consistency I hate to have red beans and rice that are really watery this right here is just perfect with a nice little gravy then it makes from that brine alright and the starch that comes out of that brine from these beans awesome guys just let this simmer for a few more minutes and we'll be plating this up I'll be right back okay everybody let's plate this up I've let the coconut milk cook in these red beans for about seven to ten minutes and we are absolutely ready guys the flavoring of that coconut milk gives is outstanding you would not believe it it gives it like a what do I want to say like a island flavor oh my goodness like you're in the islands but yet you can still taste the Spanish flavor that's in with these red beans and rice oh I mean it is so delicious let's go guys okay let's come in over here where I've put my rice zoom in a little bit and I just took this little ramekin here guys I packed my rice in really tight just like so and then just kind of flipped it over really quick onto my plate if you want that effect okay so let me get a good spoon I don't think I want to use the slotted spoon just a second here I just don't it's a spillage juice everywhere okay here we go guys let's go in this here is really making my mouth water alright guys let's do this oh my goodness oh my goodness make you want to cry oh my goodness look at that guys you know you know you know oh you guys know you know this right here looks so delicious right now guys oh my goodness let me put my beautiful parsley on here like always I am so excited for this guys this right here guys this is red beans and rice
