welcome to a view to a grill i'm johnny today we're going to smoke some cod on the z grills pellet grill first let's start off with a little fish prep in today's video i wanted to use a fish that anyone could find in their local grocery store i chose alaskan cod one thing i like about buying fish like this is that they come individually wrapped and you can smoke as many as you like i'll get those unwrapped and onto a sheet pan and then i'll put them into the refrigerator to let them defrost while our fish is in the refrigerator defrosting let's do some grill maintenance now i like to keep all of my grills cleaned i'll go to my go-to grill cleaner which is citrus safe i'll get that sprayed on all the surfaces of my z-grills and then wipe everything off thoroughly and now let's make our rub for our first ingredient we'll use two parts of kosher salt next we'll need one part of thyme and then we'll use one part of oregano and for the star of this rub we're going to be using craves ancho love where i'll have a link and a discount code in the description below we're going to need two parts of ancho love just get everything mixed together and when you're done you should have something that looks like this once our fish is defrosted we're going to start our z grills pellet grill we're not going to need a lot of pellets for this cook so i'll just fill the hopper up to the grate inside the hopper turn the z grills on and with the lid open i'll set the dial to smoke i see pellets dropping into the fire pot so i'll get the z grills put back together then i'll just follow the instructions and the z grills manual says that once i see white smoke to close the lid and set to the desired temperature for this cook i did set it on high but when i do this in the future i'll just set it to 375 degrees so our z grills is hot now i'm going to preheat two cast iron casserole dishes while our casserole dishes are getting hot it's time to season our fish before i season the fish i'll pat it dry after i've patted the fish dry i'll hit it with just a little bit of spray canola oil and then i'll get that side seasoned i'll flip the fish hit it with a little more canola oil and get that side seasoned as well i'll season the sides with the rub that fell onto the tray and when i was done i had some seasoned fish that looked like this and now it's time to get the fish on i did get these cast iron pans almost up to 400 degrees before i started this i'd say 375 would have been perfect i'm going to coat the bottom of the cast iron pans with some canola oil now i'll get both fish fillets into their own cast iron casserole pan i'll get the lid closed this fish is going to cook fast i'm going to give this fish four minutes four minutes later we're gonna flip our fish now this first fillet i can tell that it is not ready yet but the second fillet now that fish is already done i'm going to remove the second fish and check this out it's still bouncy to the touch and you can see that the white flesh is glistening and if you look in the crevices you'll even see some juices pooling and now two minutes later we'll go check on the other fish and judging by the bounciness i'm going to go ahead and remove this one from the grill as well and now i'll take one of those cast iron casserole dishes and put it back in the z grills pellet grill now it's time to prepare our sauce now this sauce is going to go very quickly you're going to want to have all of your ingredients prepared and ready to go for the sauce we're going to use about a half a teaspoon of garlic two pats of butter two tablespoons of lemon juice some chicken broth and our leftover rub i'll be using a whisk and the first thing we're going to add is our two parts of butter i'll stir that and melt it about halfway when that butter is halfway melted i'll add my garlic and i'm going to stir this in until the garlic is fragrant and once i can smell that garlic i'm going to add about two or three tablespoons of that chicken broth and now i'll scrape off all the fond that was on the bottom of the cast iron skillet this is going to flavor the sauce and then once i've done that i'll add about two tablespoons of fresh lemon juice i'll whisk that around and close the lid to bring this sauce up to temp now while that sauce is getting hot i'm going to need two more pats of butter and the leftover rub that we made earlier now the sauce has been in for about two or three minutes we're gonna open the lid and give it a taste i think it needs more flavor so we're going to add the rest of that rub i'll stir that in and close the lid we're going to give this another two or three minutes and while that sauce is heating up i'll go ahead and plate my fish two or three minutes later we'll get the lid open and add one of those pats of butter i'll stir that in while it's still on the heat once that butter has melted i'm going to take it off get it onto the board and then i'll use the residual heat that's still in the cast iron pan to melt that last pat of butter and you don't want that to sit around because the sauce will break you want to immediately serve it on your fish and now the results i'll just spoon on a couple of tablespoons of that sauce right over the top of my fish once i have the fish coated in sauce well now it's time to put on a little bit of chopped parsley and the parsley is for flavor it's not just for show it's going to give us this nice fresh taste and there you have it grilled cod on the z grills pellet grill now this looks totally delicious let's dive right in you can see that this cod is cooked perfectly it is opaque it is shiny and let's take a bite of this so i just started eating this cod for some reason i totally forgot that i was doing a taste test and right here you can see i'm like oh yeah i'm doing a taste test and it looks like you kind of caught me doing something i wasn't supposed to be doing the fish came out delicious now if
