this is chickpea hummus we're going to make it with canned chickpeas which we boil in hot water for 15 minutes save about a cup of the boiling water drain them and put them in a bowl with cold water rub the chickpeas between your hands to separate their skin the skin is gonna float on the surface remove as many as you can look at this clean them again then add them to a food processor cut a garlic clove in half remove its core and chop it into the chickpeas add the ground cumin to the food processor so some of the reserved boiling water freshly squeezed lemon juice and the tahini make sure your tahini is made from 100 hulled sesame seeds it's quite runny and light in color blend until you reach your desired consistency and texture adding more water if necessary transfer into a serving bowl swirl it with a back of a spoon starting from the outside and turning the bowl moving the spoon into the inside drizzle with good quality extra virgin olive oil a pinch of paprika some chopped flat leaf parsley and garnish with olives on top
