So I'm going to share to
you a very special recipe. This is our best seller here in our
restaurant when we still have dine in and since for now,
we are still take out only. I'm going to share to you. This is our Chicken BBQ with
Java Rice and Peanut Sauce. Of course, this is inspired from one of our favorite
restaurants that is located in Roxas Boulevard. So you guess what restaurant
I am trying to point out. Very easy to do. So first, I have here 1 to 2 kg of chicken
thigh from Fresh Options Meatshop,. So it's better for you to use chicken thigh
or chicken leg so it will not dry quickly. This is just very very simple. I will put it soy sauce. This is brown sugar. This is the calamansi juice. This is minced garlic. So this is about 1.5 kg,
the chicken I put here. Salt and this is black pepper. Okay. So the next step is you are
gonna put it in your casserole. So there,
you just pour it. I use this technique that I am cooking my chicken,
that I simmer it or I braise it before grilling it because it is very hard if
the chicken is gonna be raw. Sometimes we
get complains that... "The inside is not yet cooked
especially for chicken thigh." So what you want to do is
you want to simmer it like this. Right? You just simmer it like that. I will just cover it a bit,
it will become watery. For around 10 to 15 minutes. Okay. You just leave it there
for about 10 to 15 minutes until your main chicken is
just really gonna be cooked. The flavor will seep off and
then you just grill it for a bit. Okay. Don't throw the sauce because we are also
gonna use that to make the Peanut sauce. Okay. So while we're cooking this,
let us also set up our Java rice. So to make the Java Rice, I have shared
to you several Java Rice recipes. Those are just similarly done. So in my small casserole,
I'm going to put the water. This is the uncooked rice. Turmeric powder. This is banana ketchup,
you can also use tomato ketchup. Red bell pepper. It has butter,
you just put it lastly. If you want to make your
Java Rice extra flavorful, what you can do is you can
put a splash of soy sauce. Just a splash,
so there. For your Java Rice to
become more flavorful. And then you just cook it, you can
even use a rice cooker if you want. Right? So you just cook that and
then this is your Chicken BBQ. So it is braising, it's getting
watery as I said, right? You may flip it up for you to
assure that the flavor really seeps. That's why you can observe
that I am using wide casserole for the chicken to really
absorb the flavor. Okay, and then
I cover it again. So let's go back on it after,
10 to 15 minutes. So it's been 10 to
15 minutes, right? I will just turn off the flame here
in the chicken that I am braising. You don't want to overcook it because
the problem is it will be crushed, right? When you overcooked it. Remember that you are
still going to grill it again. So there, I'll take it
our from the..... braising liquid. It looks like Adobo, right? Actually even now,
it's already delicious. You may eat it already but of course,
you want the grilled flavor. The beauty of this, if you have catering business,
food tray business or restaurants just like us, Right? You may prepare it in advance and
then you put it on refrigerator. It won't be easily damaged because of course,
it's cooked or pre-cooked already, right? So I'm going to use the
same braising liquid. Turn on the flame. For the peanut sauce. You just put it peanut butter. So I have here cream
style peanut butter and then I think I'm going
to get a wire whisk. So there, you just whisk it over
there to make your peanut sauce. As simple as that. This is a stress-free recipe
as usual but very delicious. You may consume all of the peanut butter or
just some depending on the thickness you like. If you feel like it's salty,
you may add a bit of water. If it lack sweetness,
you may add a bit sugar. So here, it becomes stick that
I think I put a lot of peanut butter. I will just taste it first. Perfect. I will put a bit of water,
just a splash. Okay, that's it, this
is your peanut sauce. So I'm going to
set this aside. We can start
grilling the chicken. Let's take a look on it. Oh look, the Java Rice
is nearly cooked already. Just make sure that it
doesn't stick beneath. Just run a spoon. And you can see that it's also nearly
cooked so I'm going to put my butter. You just put the lid back. So let us heat our
griddle already. Of course, you may also
heat into your coal and your chicken thigh, there,
you just skewed it on BBQ stick. There it is, right?
Just like that. Let's put it on BBQ stick so that it
would really look like a barbecue, right? And of course,
you may flip it easily too. So there,
my God! It's actually better if we just
use our bare hands but it's hot. Normally, you will let
it cool down first. Put some oil. And then here, I'm going to get
some sauce so we can brush it there. You can base. You can blender this peanut
sauce if you want it smoother. So I'm mixing it
with wire whisk. See? It becomes smoother. That's because of the fats. The oil from the chicken but all those
oil, okay? Those contribute with the flavor. And make sure that
you brush with the sauce. Don't put the flame on maximum power
because you don't want it to be burnt. Let's take a look
with our Java Rice. Looks good to me. Just a bit. Let's brush this side
with a sauce. There it is, right? So look. Just a bit more,
it still lacks. Just make sure that you brush it
with sauce in every flip of yours. You may also switch it like that because
of course, the heat is not even. Even though your griller on coal
so it's better that if you also rotate it so that all would be able
to get a nice caramelization. It's so fantastic, right? Are you gonna think that
it's just as quick to do that. Restaurant style, you didn't
heat some coal anymore. It's also not obvious that you
haven't cooked it on coal. Even though in non-stick pan. Well of course, you may
also cook it on coal if you want. Okay, so this
looks good to me. I will just put it
final layer of sauce. And perfect since our Java
rice is already cook too. So let us plate on
restaurant style. Let's get some Java Rice. Nice and yellow. Okay. Let's put it garlic from
the farm, just an act. And then the sauce, you put
some sauce on one container. If you find it very sticky,
you add more a bit water. And then your chicken. There it is, right?
Isn't that fantastic? That it really feels like you
have been on a restaurant. You put some garnish. So you put it parsley on that. So this is your Restaurant
Style Chicken BBQ. Very easy to make
and very affordable. You can really do this and of course,
very easy, that's the most important. Now, let's try. Since we're on restaurant,
let's use golden spoon. Surprisingly, the flavor of the
marinade already seep on the chicken. So good. And the Java Rice. So you will really
have it as viand. It's so good. It's very easy to prepare. "Can I use pork?"
Yes, you can use pork liempo. You can even use chicken fillet if you
want if you don't like it to have bones. Chicken legs or any chicken
part that you personally like. So make yours already because it's so good,
