This is the season for grilled dishes since It's summer may it be pork, fish, name it, it's perfect for this season so today, I'll be showing you how to make simple Chicken Inasal and here are the ingredients we need for this dish Chicken Leg Quarters diced ginger garlic vinegar lemon lime soda lemon grass Knorr Liquid Seasoning aside form these we also need annato seed, margarine, lime or "calamansi", and turmeric powder or "pinulbos na luyang dilaw" and here is the complete list of ingredients with their measurement Are you guys ready to cook Chicken Inasal?
Let's start cooking! let us prepare the ingredients first, just like this lemon grass ot "dahon ng tanglad" slice so this would be shorter I do this since later we'll mince this so this would fit in our pestle slice both lemon grass we have we are now ready to pound this It's necesary to have this pound so the flavor could easily be extracted pound all lemon grass we have now mix lemon lime soda with other marinate ingredients in a mixing bowl here goes the vinegar, I'm using white vinegar but much better if you will be using coconut vinegar here goes our crushed ginger and then the garlic this is also diced, as you notice all solid ingredients were diced so the flavor could easily be absorbed by our liquid
and here goes our lemon grass mix so to make sure that all flavor are well extracted then season this with Knorr Liquid Seasoning this would complete our marinate this gives flavor to our Chicken Inasal so I do use this the more the seasoning added, the better so our Chicken Inasal would be tasty mix well after this, we may now marinade our Chicken Leg Quarters I do use 2 resealable plastic bag just like this since we'll be grilling 5 chicken, we need enough room so we are using 2 bags I put 3 in a bag and the remaining on the other divide marinade for equal distribution start with the solid ingredients first transfer with the use of a tong make sure to distribute the marinate equally use a measuring cup in transfering the liquid it's smaller so we could make sure that nothing is waisted there, so we could now transfer this easily make sure that each bag have enough marinate because to maximize the marinade flavor to our chicken there you go then seal I usually use reasalable bags for marinades, especially for chickens, so I could makes sure that the it is coated all throughout marinating this in a bowl need a lot of marinate so this could be marinated all throughout using reasalable bags makes uses less marinate but if the same results be sure that air is removed and this is sealed well so we could be sure that this is well coated put in the fridge overnight after which, let's do the basting sauce we will now be making annao oil or "achuete" oil these are annato seed place in a saucepan put vegetable oil put ot heat this will start to bubble onced heated meaning, the annato seed starts to be cooked put under low heat high heat would burn this once this starts to bubble, remove from heat the color is now being extracted from the annato seed and that's what we like to happen cook for 30 seconds to a minute and then transfer to a bowl, strain seeds get a strainer then pour the annato seed and oil mixture we just need the oil this is now our "achuete" oil or annato oil let us now continue making our basting sauce put melted margarine on oil annato oil you may melt this using either by microwave oven or by pan mix well until annato oil and margarine are well blended then add the turmeric powder this is "pinulbos na luyang dilaw" this gives color to our inasal slice a lime then squeeze on our basting sauce I also include Knorr Liquid Seasoning here so this would be tasty we already included some in our marinate but adding this to our basting sauce helps in making our dish more flavorful mix well prepare the chicken afterwards remove the chicken from the marinate and transfer to a plate and then we may now grill this make sure that no marinate ingredients were included prepare grill then place the chicken I made incision so that the inside of the chicken is cooked well grill one side for 2 minutes and then flip it over put basting sauce on the side which we had grilled after this, follow the same procedure, flip it over after 2 minutes we don't want the chicken burnt so we have to flip this over every now and then the chicken is slowly being cooked in each turn grilling this longer darkens the chicken the chicken may be cooked, put is not presentable but still, it depends on how would like this to be continue this step until the chicken is cooked If you have a meat thermometer, stick it on the chicken and make sure it's 165F so the chicken is cooked or, you may manually check it manually by looking at the incisions we made, make sure that the chicken meat is not pinkish anymore and thenn transfer to a serving plate then serve this is now our Chicken Inasal let's have a taste! Chicken Inasal let me place the dip here let's assemle the dip first let us put some lime, but using calamansi is better but if you don't have any, lime or lemon will do, just mix it with soysauce let us now have some chicken here goes our chicken let's eat! let's have a taste you know what, making Chicken Inasal is easy, it's only the grilling that takes a lot of effort and the ingredients we used are widely available, except for the lemon grass
but you may still cook this without it anyway let's now have a taste, dip it here in our soysauce with lime Mmm~ It's really delicious! some put chicken oil with this, you may actually do that as well Chicken oil is made from the fat drippings when grilling, I mix that with annato oil season it a little and that already is chicken oil but now I didn't made any this is simply soysauce Mmm~ So delicious! let me have a little "achara", perfect combination Mmm~ So delicious!
