I'm here again Vanjo Merano of PanlasangPinoy.com I know some of you loves chicken in different styles of cooking we have a favorite but we have a super favorite fried chicken is one of my favorites. But I like better the stewed saucy chicken today I'll be cooking Kapampangan style of stewed chicken It's called Chicken Asado are you ready? Wait! Here are the ingredients we need chicken, sliced into serving pieces tomato, seeds removed then chopped chicken liver, chopped into small pieces red bellpepper dried bay leaves tomato paste onion, any color will do garlic lemon. Calamansi will also do soy sauce vinegar onion powder garlic powder potato we also need water, cooking oil, salt and pepper here is the complete list of ingredients. Pour the soy sauce in a bowl of chicken pour vinegar this is white vinegar but you may use cane vinegar aside from these, we'll add onion powder and garlic powder this will serve as marinade ingredients mix all the ingredients in the bowl then marinate the chicken marinate at least 3 hours but I suggest to make it overnight so you can maximize the flavor extraction if overnight, cover the bowl and refrigerate to avoid contamination after marinating, we're ready to cook pre heat cooking oil in a pan once cooking oil is hot, first thing to do is to pan fry the potato potato is sliced into cubes this is an optional ingredient, we may opt not to add potato in our chicken asado pan fry until sides are brown in color cook for 1 min. each side then flip repeat the step until all sides are brown once ready, transfer to a bowl set aside before we formally start cooking the chicken asado, we need to prepare and pan fry the chicken so after the potato, next is pan fry the chicken here goes the marinated chicken marinating overnight is best, to make sure flavor is maximized cook one side for 3 min. after 3 min., flip the chicken cook the opposite side for another 3 min. we don't need to fully cook the chicken, we only need to cook the outer part only if you see blood coming out, that's fine after 3 min. of frying, transfer the chicken in the plate set aside we're now ready to formally cook the chicken asado using the same oil, saute for 20 sec. any color of onion will do this is chopped yellow onion it's good to saute in the oil used in frying the chicken because it has its flavors add crushed garlic the more garlic the better stir fry for 10-15 sec. prepare the tomato here goes the tomato ripe tomatoe. Seeds are removed then chopped continue to stir fry until tomato is soft if I say soft, I mean very soft it's ready next is the chicken liver. Move the sauted ingredients on the side to make space for the liver here goes the chopped liver it should be finely chopped cook until light brown notice it separates from each other while we cook continue cooking all the ingredients for 1 more min. add the marinade it consists of vinegar, soy sauce etc. add water if you want it to be more flavorful, add chicken broth or add 1 pc. of chicken cube mix let it boil cover pan to simmer faster add bellpepper, this is chopped red bellpepper to make it aromatic, add dried bay leaves mix then cover cook for 15 min. in low heat if you think the liquid is drying out, you may add water it's ready, add dried bay leaves we have extracted the aroma and flavor next is an optional step I'll use immersion blender to smoothen the sauce if you don't have this kind of blender, you can use a regular blender like what I said, this is just an optional step. You may opt not to do this step after using immersion blender, add tomato paste let's put everything so we don't waste a thing mix make sure tomato paste blended with the sauce add chicken the chicken was just slightly cooked (for 3 min. only), so we need to fully cook it I'll add more water because we need to simmer the chicken in the sauce we need to add extra water to avoid the sauce from drying cover the pan continue cooking in 18 min. between low to medium heat it's ready. The chicken is cooked add lemon or calamansi juice mix add the pan fried potato mix continue cooking for 3 min. after 3 min., season with pepper and salt here goes the ground black pepper it's up to you how much you want to add same with salt, it's better to try it prior adding seasoning to know how much you need to add mix then continue cooking for 2 min. transfer to a serving plate and serve! here's our Chicken Asado yes! Here's our chicken asado. Smells so good! let's taste it let's waste time no more, let's have a taste alright mmm~ wow! delicious! I tasted immediately the chicken and chicken liver. It's so flavorful! actually the first bite tells it all, very flavorful mmm~ wow! it has chicken bones. Let's set that aside. Awesome! you will keep asking for more even if your not into chicken liver, you will still love how the liver was cooked. It's delicious there's no gamey taste. The vinegar, lime or calamansi juice helped a lot to remove the gamey taste the final outcome turned out so well let me have another one. By the way, potato is an optional ingredient. You may opt not to add potato potato may serve as fillers but the chicken itself is already for-the-win mmm~ I can't say how awesome this is I'm serious. This is really great!
