what's up guys it's susie from heygrillhey.com today i'm bringing you another awesome recipe these are my cheesy fajita steak roll-ups you are going to dig them they are total crowd pleasers and i don't want to do this very often but these are actually pretty diet friendly they're delicious i promise let's do it for a cheesy steak fajita roll-ups we're going to start with the steak and we're going to make a really delicious marinade but first let's talk about the meat so when you're going to the grocery store you want to pick out those beautiful really thin sliced pieces of steak sometimes they're sirloin steaks today we ended up with a top round that was sliced really really thin and i also found these chuck eye steaks that looked absolutely beautiful sliced thin you'll need about eight pieces because we're gonna make eight fajita steak roll-ups so i got two different cuts of meat but both sliced really thin they're going to be absolutely perfect and now we need to make our marinade this is a super simple marinade it actually has no sugar added but a ton of flavor we've got a half a cup of fresh squeezed lime juice to that i'm going to add a quarter cup of olive oil six cloves of minced garlic and then our seasoning blend which is simply two teaspoons of salt two teaspoons of chili powder a teaspoon of cumin a teaspoon of black pepper and a half a teaspoon of cayenne powder twist that all together like i said at the beginning of the video this recipe is pretty diet friendly there's no sugar in here and the only thing that you may want to pass on is the cheese later on if you don't eat cheese but otherwise this is great for you guys on keto this is great for people on paleo and if you do skip the cheese it works for like whole 30 too take your steaks super thinly sliced get them into the bag and as you're putting them in i do recommend taking the time to separate each piece of meat instead of just putting in the whole package because you want that marinade and that seasoning to get on all sides of the steak and when they're all stuck together that's not gonna happen so take the extra second to spread them out okay steaks are in just simply add your marinade to the bag press out as much air as you can and then massage the marinade so that it gets in between each of those thin little layers of meat that we have in there and then you're going to want to stick this in the refrigerator you want this to refrigerate for at least two hours you can go up to four hours you can even go eight hours or overnight if that works best for you our marinated meat is out of the fridge that means we're ready for our next step in these fajita roll-ups and i don't think fajitas would be fajitas without that yummy mix of peppers and onions so i have a green bell pepper a red bell pepper and a yellow onion that have been thinly sliced and put in a grill basket and these are just going to go on our grill that's been prepared over about this is about 400 to 450 degree grill and these are just going to go right over the coals now we're gonna let those cook for about five to seven minutes while we prep our next step for the fajita roll-up we're gonna take our steak out of the marinade lay it out flat on a large work surface i like just using a cookie sheet and then we're going to sprinkle a little bit of colby jack cheese that i have shredded onto each piece of steak oh yes that already smells amazing all the garlic that's in there the lime and then all those yummy fajitas spices and seasonings that we put in with the marinade these are gonna be so great camera guy todd coming in clutch with the backup sheet pan start with two cookie sheets we're gonna get all of our steak out here so that it gives us a nice even space to work with and then i kind of am starting to smell these onions so we're gonna give these a quick stir all right give these a quick stir oh yeah we're starting to pick up some color on the peppers and the onions and then one little bonus trick is i'm going to take some of this marinade and actually pour it over our vegetables as they're cooking it's gonna season the peppers it's gonna season the onion and we don't have to worry about raw meat juices because it's cooking over a 400 degree fire so everything's gonna cook off and it's gonna add some really nice delicious flavor to these vegetables okay ready all right close up the lid let those go for a few more minutes while i get the rest of our steak ready so we're just going to take some of our shredded cheese and make a little bit of pile on kind of the thicker end of each of our steak so on the chuck eye steaks they get kind of thicker on one end that's where i'm going to pile up my cheese and then the veggies are going to go on top of that it's going extra i had a little extra cheese i mean it's if you do too much it'll spill out a little bit but i'm just such a sucker for cheese okay vegetables smell good they've been on long enough i think we still want them to have a little bit of a texture and a little bit of crunch to them give them another stir you can smell the garlic from the marinade you're getting all of those aromatic oniony flavors i'm gonna pull those off of the direct heat onto the indirect heat and then i'm just gonna grab a tong full of my peppers and just nestle them right on top of the cheese that i put down on top of the thick part of our steak make sure you get a good mix of onions and peppers inside each one of your pieces of steak now we gotta wrap up each of our steak roll-ups to make sure we get all those peppers and onions and cheesy delicious goodness inside of each steak so have your toothpicks handy and just start rolling rolling rolling and then secure i would say with two toothpicks on each roll up and remember how many toothpicks you use for roll-up because you don't want to forget to take them out at the end and then you have friends who are eating toothpicks instead of delicious crunchy peppers and onions so these cheesy fajita steak roll-ups were actually one of the first recipes that i ever posted when i started hey grill hey and at the time todd was kind of on this no sugar challenge kick and so i had to come up with a recipe that he could eat that didn't have any added sugar but still brought all the delicious flavor and he is a sucker for anything mexican fajitas burritos tacos you name it so i was trying to go low carb and low sugar and this is what we came up with and it has turned out to be one of our family's favorite things um and i think this is one of the things that i see the most from people making and like tagging on social media or they're sharing them in barbecue and grilling groups because they're really accessible but they're really fun and they kind of make the idea of eating a little bit healthy exciting and not necessarily boring so this is one i definitely recommend you give a full try my rolls are all rolled i'm gonna go wash my hands and then we'll get these on the grill we've got our grill rolling at about 400 to 450 degrees fahrenheit i'm running on charcoal today but these work well on gas you can do these on your pellet grill um super duper versatile these are going to take about 10 to 12 minutes to cook i like to rotate them on the grill about every two minutes so two to three minutes per side you're going to rotate them four times you get that nice caramelized char from the grill all the way around fajita roll-ups are looking amazing they're smelling amazing and they are ready to come off the grill oh i love that this little cheese oozing out the sides all the veggies have that nice crispy char from the grill on the ends of them these are going to be absolutely delicious so these are perfect to eat as is remember please please remember to take out the toothpicks before you serve them to people remember we put in two per roll up and i don't want you to forget and feed somebody toothpicks because that would be bad but pull the toothpicks out and then these are good to eat just as is next to some beans or some rice or i guess some cauliflower rice if you're sticking with that whole low carb thing or whatever um you can also wrap them up in a tortilla like a fajita you can just lean over the cutting board and eat them like an animal like i intend to do or you can top them with some salsa a squeeze of fresh lime maybe a little cilantro i'm gonna put some salsa on top of mine all the fixings also would be awesome with guacamole or some sliced avocados anything that you would put on fajitas or tacos would be awesome on these cheesy fajita roll-ups a little extra cilantro on this one because i love cilantro and then i get to cut it open and show you guys what they look like on the inside yummy meat all those veggies and this delicious milk and cheese i love the lime in the marinade that's really coming through straight off the bat and then you get the sweetness from those roasted onions and the bell peppers and then the creaminess from the cheese literally all the flavors that you love in a fajita hot off the grill absolutely delicious i'm just going to keep eating
