Luke and Tom here with cats and carp calm and we're here on the tennessee river with fishing guide scott manning and we are catching fish after fish after fish [Music] hey guys welcome to another episode of catfish and carp and today I'm here with my buddy Scott Manny and we're on the Clinch River and we're gonna be going up to the Tennessee River and I have never fished here before we are super excited and if things go well we might even cook up some fish here so this is gonna be a good day I'm gonna be a good day how're you ready go do this thing I'll shut up and sit down let you guys thank you very much I know I know how that goes do you promise somebody gonna take them and you just feel like crap so apparently Scott's telling me that we've got this trash seem you can see where there's kind of little flotsam coming down the river and that scene between where two currents meet it's a really good place for stripers so we're just kind of prowling around taking the sonar and jumping around the sticks yeah see there around the sticks to stay safe there's something underneath them trying to eat them yeah just pull a little drag yeah nice little white bass this is what we're using for the white bass we got one of these little storm swim baits big old looks like a - hot hook coming out the back in a smaller treble hook point to get there you anytime you want to reel em in it's a good one there's nothing little blood on him so you gotta be gentle with them unless we're gonna eat him all right let's put so you take out this big live well they got Tom look at how big that is now can you catch these things all yeah oh ho this is fun man this is just every caste feelings I get striper is it's a Stryper Stryper in a boat look at that beautiful little striper eat him ah yeah we're gonna cook this come with me let's go put them in the live well okay we're kind of like a culinary Noah's Ark here [Music] Tommy Oh oh yeah well we have a pound on that was a strife ride for Zoo whenever you break off look at the line if it's all curly cute means you're not failed if it breaks clean like this means the line line failed so that's always good feedback to let you know if you're doing your knots properly when you're targeting stripers it's kind of like a mix between fishing for white bass and fishing for catfish you can use just bigger versions of the same stuff you use for white bass or you can use the exact same setup so you use for catfish you can fish them with bait on the bottom you can fish with the live bait or cut bait under a balloon or bobber you can throw lures Adam you control for them they're really a versatile fish to catch and there's a lot of different ways to fish form but it's really hard to beat throwing lure at breaking stripers and hooking them up on that that's it's pretty fun [Music] hey guys we're gonna go ahead and Flay the striper now I'm not an expert at playing fish and this is my first striper I've ever filleted so bear with me here luckily for me Scott remembered to bring a fillet knife and it's a pretty decent one here too this is the dexstar eight-inch outdoorsman I love the Dexter knives they're designed for commercial fish processing really good good knives and you'll see me use them in some of my other cash and cook videos what you gonna just do let's get behind the pectoral fin and the gill plate there's a little bone here and just kind of go back till you feel it soft you're missing that bone get down in there and just cut all the way down to the spine then stop turn your blade 90 degrees and then you're just gonna dance along the top of the ribcage here just gonna go along feeling that ribcage until you get to the end of the ribcage and then and just put it all the way through the tail kind of run along the ribs as best you can and you could come back in here and separate the meat from the ribs here's how bloody it is I know guys if you really want to do this gourmet bleed the fish out like cut their gills and you throw them in the live well get all the blood out improves the taste a little bit some people swear by it I think it makes a small difference but alright it'll also make it just less gory if you're that bothers you just go down here I'm gonna try to separate meat from the ribs you see you finally get to a point where you can start to see sunlight through the skin that's when you just call it and then go ahead and cut the fillet off right there there you go tell you the truth guys there's just no substitute for practice and that's the thing is I just don't keep that many fish I don't have a lot of practice but you do this enough you'll figure it out very quickly you'll always leave some meat on the carcass you don't want to waste that one fun little trick let's just take a tablespoon go back here along with the tablespoon you can just scrape off the meat and then you can use it to make like gumbo or stew or fish cakes or something like that rough skin really makes your life easier it doesn't slide across the cutting board not the best but it isn't waste much some guys don't like this red meat on there and they'll go ahead and cut that off there's not enough of it here for me to really worry about it I don't think it's gonna make it stitch a difference but each is on did you have fun I had a great time man whoo you might need some sunscreen though I'm feeling roasted let's go home see mom and Nathan and Jacob and let's go play in the pool but absolute kick in the butt now I'm gonna show you a fun recipe I'm gonna make basically a striped bass po-boy slider now I'm here in a vacation rentals so a little bit limited in my equipment and my ingredient so we ran to the store to grab some stuff hopefully I've got everything I need I might be improvising a little bit but this is a pretty simple recipe it tastes fabulous all right let me show you my ingredients I've got some deboned D skinned fillets got some yellow cornmeal and I've got some buttermilk and then I have about 2 litres of canola oil got pepper salt Old Bay seasoning some diced up peppers and I've got some diced up yellow onions I've got a quartered lime I've got some pureed cilantro I like fresh better but that's got we got some spring greens got some sliced tomatoes and some fresh rolls for the bonds so while I'm getting everything else ready I'm gonna go ahead and start soaking the fillets in the buttermilk they don't need to soak for very long just 5 to 15 minutes is fine but why not get it done now while I'm waiting first things first I'm gonna cook up the cilantro the peppers and the onions add some onions and add some salt just gonna Brown these onions add the peppers the next gonna take some of this cilantro and we're gonna go ahead add that in there okay now we're gonna take the limes and squeeze it in there you just want to cook it enough to kind of get the water off you don't want it to be runny I gotta tell you the lime is in the cilantro and the onions and the peppers this smells amazing right now I wish I had some chunked mango to throw in there a little bit of garlic to add but working with what I got right now we're gonna go ahead and put this on about a three and I'm gonna cut it up into little pieces take the old bay and I'm gonna season this liberally and put the seasoned meat in here there we go there's our Flay's I'll breaded and seasoned now let's take them over to the fryer wait a minute Nathan do you eat my roll okay so we have three and a half po-boy sandwiches now yeah all right let's test it out oh yeah look at that that's popping [Music] there you go guys some delicious fried crispy fresh striped bass so this is all you need to make the sandwiches you can add sauces like tartar sauce or this tajiki ranch sauce but honestly I don't think it needs it this kind of relish I made is super flavorful so I'm just gonna take nice little piece right there take some of this big pile of that all right there we go there is a beautiful striped bass po-boy slider with a little coleslaw some macaroni salad absolutely perfect I wish you guys could smell this you the old bay and the cilantro and the lime and the peppers are just heavenly okay and this is gonna be delicious [Music] I'll tell you what the striped bass and the white bass it looks a lot alike and they taste a lot alike yeah I don't know if people could tell the difference between one and the other yeah you know a lot of people don't like to eat fish my wife is one of them she grew up in the Midwest and just really is not wild about fish but when you actually talk to her about it she hadn't really eaten much fish and when the fish she had eaten was certainly not fresh so catching your own fish and eating it the same day coming up with a really good solid recipe just enjoying it hard to beat in a great way to enjoy fish even if you're not a huge fish fan just remember throw back the big ones eat the little ones and have a great time
