what kind of brownie person are you do you like fudgy brownies or chewy brownies or cakey brownies well after experimenting with lots of different ingredients in different proportions and also trying out different methods and techniques to bake these I created what I think are the best ever brownies that have a texture that everyone will love they have a deep chocolate flavor thanks to the Dutch processed cocoa powder and they are simple and easy to make and I think once you try these you will never want to try a box brownie mix ever again they really are that delicious you gotta try them to believe them so here we go welcome to geeky I'm Jeff Becky bake lions and here at geeky Bakehouse I use the scientific method to create recipes that will get you deliciously perfect results every time let's get to it first let ingredients come to room temperature ingredients that are all the same temperature incorporate more easily and fully here is a great baking tip that will help keep your pan clean and make it a lot easier to remove whatever you bake from the pan I'm using an 8 inch by eight inch pan start with a piece of parchment paper that is about two to three inches larger than the pan on all sides cut two slits on each side that line up with the interior edge of the pan [Music] foreign [Music] next cut out squares from each of the four corners [Music] [Music] next fold each side inward to make a tight crease so the parchment paper will fit cleanly and snugly inside the pan this makes fitting it inside the pan a lot easier [Music] finally put the parchment paper into the pan press it and crease it into the edges to make sure it has a snug fit then fold and crease the paper that overhangs so it doesn't get in the way of what you will put in the pan foreign [Music] you can use those overhangs to easily lift the contents out of the pan after baking [Music] preheat the oven to 350 degrees Fahrenheit with an electric mixer fitted with a whisk attachment whisk the eggs until they are frothy and light yellow that takes about three minutes on medium speed don't over beat them this is key to achieving the perfect texture of these brownies they are chewy slightly fudgy but you can still see and feel a little cake crumb because there is not a lot of leavening in this recipe whisking the eggs adds an air and build structure mix the sugar into the eggs for about one minute on low medium speed foreign [Music] [Music] scrape down the bowl to make sure everything mixes evenly mix in the room temperature melted butter pure vanilla extract and optional instant coffee or espresso powder for 30 seconds on low medium speed pure vanilla extract can be expensive so if you want to use imitation vanilla I highly recommend the Watkins Original Gourmet baking vanilla the instant coffee or espresso powder helps to boost the chocolate flavor [Music] the cocoa powder because cocoa powder has a tendency to Clump together so sifting it helps it mix in more evenly fully whisk together the dry ingredients whisking together the dry ingredients ensures a homogeneous mixture and it breaks up any clumps in the flour also make sure to keep flour in an airtight container in a cool dry place to maintain freshness and prevent spoilage add the dry ingredients into the wet ingredients by halves and mix until just Incorporated do not over mix over mixing can build up the gluten which is a protein and make the finished product tougher and denser I prefer to mix the dry ingredients into the wet ingredients by hand because I can get a better feel of it and have more control to avoid over mixing oven temperatures vary wildly so use an oven thermometer when my oven beeps to indicate preheating is done it is usually 50 to 75 degrees below the target temperature and it takes another 10 minutes for it to reach the desired temperature having the correct oven temperature is critical to baking so an oven thermometer is the best low-cost baking investment you can make if you want to use chocolate chips add them in at this point and gently fold them into the batter until they're evenly distributed make sure not to over mix using a silicone or offset spatula evenly spread the batter into the pan [Music] bake on the oven center rack for 28 to 30 minutes brownies are done when a wooden toothpick inserted into the center comes out with just a few moist crumbs on it after baking place it on a wire rack to cool let brownies cool completely before serving use the parchment paper to lift the brownies out of the pan cutting them with a plastic knife or non-serrated knife produces better and cleaner cuts to store them put them in an airtight container they can be stored at room temperature for three to five days they can be frozen for up to three months I hope
