guys it is coming in faster than i can keep up with at this point i am don't get me wrong i'm super super grateful but looking at this right now i'm like i can feel a little overwhelmed like how do i catch up fast enough so a storm came through the other day and knocked down all of our corn so we harvested that big bucket of peppers to process but today's video is about more tomatoes we started a tomato preserving playlist for you guys all my ideas in there on what to make and how to make your tomatoes really extend your pantry today it's about barbecue sauce so we are going to be taking a different process with our barbecue sauce i'm not sure that i've ever shown it on a video on youtube so we're gonna head into the kitchen and take care of these [Music] i'm breaking out the victorio food mill yep how long ago did we get this thing like four years ago no since before we lived here oh my mom used to run a um my mom and i stepped at a resale shop and they had this there you snagged it up real quick it's great for things like applesauce and things like that things that you need to puree we've used it quite a bit and we've even used it for tomatoes before but i've told you guys i'm the biggest champion for you don't need to peel your tomatoes you don't need to seed them and i totally stand by that for everything but just about this recipe so um todd is kind enough to say i'll help you if you want to do it because while i'm sitting there looking at that sea of tomatoes it felt overwhelming so he's gonna run the mill and i'm going to keep the scraps and the pulp going sounds good are you ready yes switch me spots though okay so if you've been following us on well i think we posted on our community page and uh facebook as well we've been without power for two days now and it is pouring out right now it is definitely pouring rain again outside and while rachel was coring and quartering all these tomatoes seems like we got power back yeah odd i've checked it with my meter i know down the street a couple hundred yards there's there is a power line down on the ground but yet our power is restored well we think because it's done this before and it goes right back out so we'll see i don't know what's going on yeah if uh we're filming and it suddenly goes dark that's why yeah but we're kind of prepared we got our generator ready so which way does this thing go i think it goes this way yeah well we'll put a tomato in there and find out oh it goes that way [Music] so this does get if you don't have one of these i have a towel underneath the the bowls just because it does get messy a bit no no it just needs more more stuff okay yeah there we go oh yeah all right no this is going to suck didn't we use your drill last time yeah we did use the drill let me go get that all right because otherwise uh i'm gonna lose patience okay then i'm gonna lose my helper i don't want that i can probably run this while you stuff tomatoes [Music] okay [Music] [Applause] [Music] so so [Music] so tip when you get to this stage run your peels back there's still a lot a lot of beat on there so we will run it back through one or two times until we get everything off the skins so [Music] that was a lot wasn't it do they feel dry now todd yeah okay all right so we will i will save those skins and i will make some tomato powder with them all you need to do is spread them out on a thin layer i won't do a video on that just spread them out on a thin layer and put it in your dehydrator and then grind it up and make your own tomato powder [Music] something change yeah i don't know if we lose power we'll be right back we'll be right back we're prepared so how much did we end up with that's a lot yeah what are these special quartz this whole pot full and now you could um we don't use a lot of tomato juice but if you use tomato juice you can make this go a lot faster by draining off some of that tomato juice and cannon and sarah over at living traditions does that oh yeah so oh wow that's a lot almost a can or bath water bath canner pool now i we were just talking off camera because we have our ingredients to share with you but i told him i really think that we should boil this down first before we season it so but you want to add the onions yeah yeah so we have about three cups of finely minced onion i want to get it in now that way as something yeah that way they soften and cook down okay and then we're going to toss it on the stove bring it up to a nice boil yep and let it rock for a few hours and see well yeah we'll see how long it takes how long it takes to get thick yeah might take a long time right right but we have lots of good ingredients to share with you so stick around and we'll be back for that all right guys look here so see this this line right here was about where we started at and we've cooked it down quite a ways it's nice and thick now so we are ready to add our seasonings let those cook together surprise we are making three different barbecue sauce flavorings so that's what we're gonna get to all right so we are going to leave specific measurements for each of the ingredients that we have that we're adding um i'll give you a ballpark guess as we add them this is molasses about one cup of molasses and this is for the entire batch so so this is the entire batch cooked down next up we have about two cups of honey barbecue sauce and get that nice sweetness worcestershire third of a cup maybe mustard powder three tablespoons garlic powder three tablespoons just under half of a pint of cowboy candy and about three tablespoons of nutmeg two cups of apple cider vinegar a third of a cup of lemon juice now last for the base recipe some liquid smoke now we didn't measure this out at all yet because we don't know how much to put it in because this stuff can be like super powerful depending on what you're putting it in so we're just gonna have to taste as we go and probably recommend you guys do the same start with a couple dashes and then we'll we'll do a little bit of taste we don't want overpowering smoke flavored we just want like a little subtle hint you know and what we're going to end up doing so this is our base recipe this is [Music] a third of what we made is going to stay in this pot another third is going to transfer into this pot another third into this pot so we'll end up with our base recipe and then two special recipes that rachel will tell you about here in a minute it just has some extra added ingredients to give it a different flavor profile okay so that i don't know if it was a fluke that we had power yesterday or if todd broke the electricity with the blending and purine but we are back in and out in and out with a brown out of our power so sorry about the lighting but let's get to the basics so three pots of barbecue sauce this one base recipe leave it alone we're just gonna bring it back up to heat so i can can it these two went down to the pantry and we said what do we want to flavor it with and we always buy like specialty flavored barbecue sauces and i've only ever made barbecue sauce once before and it was good but it was just a basic one so we said well we gotta avoid going and buying those special ones so some mustard butter is gonna go in one so you know those yummy south carolina mustard vinegar base barbecue sauces we love them and cherry so michigan always has you know cherry barbecue sauce and all the specialty stores so we're going to do cherry juice in one which i'll have to cook down a bit more and this mustard butter [Music] this is spicy so it's going to bring up the heat of this barbecue sauce quite a bit [Music] all right yum now to the back one we will add the pint of cherry juice can you smell it um tart it's from our own michigan cherries so they are a tart cherry it's not a sweet cherry so we'll see we'll see what we make this is where i love preserving my own groceries from my garden from the harvest because i can make it my way i can make it like i want you guys probably have that favorite barbecue sauce so just start with a base and then mix in that can of grape jelly or that something yummy that's gonna take it over the top all right so we are going to heat these back up and then we will be right back when it's time to can them so see you guys in a little bit what i've chosen to do to make it easier and so many of you have given me this tip before of using something to pour it off into the jars so this is the plain barbecue sauce so good can't wait to make like some smoked chicken with it like the whole house smells like barbecue sauce now [Music] it kind of seemed like the liquid smoke really dissipated it did i don't really get that too much too much of that maybe it was something that we should have added like right before canning i was figuring five set out six so we'll see somebody asked a question the other day and i didn't know how to answer them if your head space like that jar is only like three quarters is that still safe not really we'll probably put this one in the fridge okay we'll see or blend it with if there's not enough of the others no you should really have the appropriate headspace sorry geez you should really have the appropriate headspace for what you're canning you definitely can't go over i just didn't it was okay to go under yeah no not really it'll still siphon and stuff or something well i don't know don't ask me those kind of questions i don't know i don't know like the safety rules as to why i just know that you really shouldn't okay so if someone asks again i'll tell them no don't do it yeah i'm not a um oh i wanted to do this though with you guys so you see right i've got three types of barbecue sauce they all look the same how am i gonna know what it is when it comes out of the canner so i'm gonna pre look at me making a mess i'm gonna pre-label all my lids with a magic marker before they go in the canner and that will hold up in the canning process so and i'll show it to you at the end of the video so you can see and it's an easy way to if you're canning like multiple things but like when i do my tomato sauce and there's three different blends to label it before you put it in the canner okay moving on to the mustard mustard butter barbecue [Music] you guys don't even know how good this feels to get this much barbecue sauce i think the last time i ever made it maybe it was you know a half a dozen pints or so because i've never had this size of a yield of tomatoes before right and last but not least i did rinse out my pitcher just because i don't want i don't want the mustard mixed with my cherry so um see how much of this we get and i think since i have quite a bit of the plane left over and i had a almost full jar of mustard we might be able to squeeze out two extra jars now we are using my tall all-american canner double stacking water bath though so that's the nice thing about this i can double stack the pints water bath it in one round because i need my other canner because as you can see i have another project waiting in the wings canning carrots today have a video on that already but todd is going to take this outside and show you guys our outdoor kitchen since we are officially in a brownout phase again we got to run this thing outside yeah we don't want to run our air today when when power is like this that can damage some things [Music] here we go just need some water what what do you got there oh this is our camp chef camp chef explorer i think it is picked this up at cabela's or bass pro shops a couple years ago it was on sale we got like 99 i think normally on amazon they're like 129 or something so it was a good deal just runs off propane doesn't have any igniter you gotta like light it with a little stick lighter really handy in the summer when it's hot and you're gonna be like so we got this going we got carrots coming up next maybe something else today too depending on rachel her energy levels if you can do all that stuff out here it really saves on your house [Music] i got my carrots just about all jarred up and then we'll get
