I'm not gonna see that I have a knife problem but I kind of have a nice problem I have a lot of knives and you don't need all the knives that I need but if if the house were on fire and I still had to make dinner tomorrow night these are the probably the knives that I'd want to make sure that I got out these are kind of to me kind of the the kit the very base kit but there's a couple of things here that might be considered special no I'm gonna leave that in here first and foremost chef's knife and the chef's knife typically ranges 10 to 12 inches for for most really effective models and a lot of people think oh that's a big scary knife but you really do need a blade of this length to to effectively slice through things to chop through things to use it as a lever this is the knife if there was one that you want to go into battle with is your chef's knife this is my favorite and it is made by a company called cut brooklyn CU t brooklyn they don't pay me to say that they don't give me knives but I'm a huge fan they're not a big company this guy makes these things like we sold like 15 a week is what his output is so you have to get on a waiting line for them I believe in tools that feel very very good and I believe that tools that you like to look at you'll also use more I like knives that have antique or reclaimed wood and the handles I like that kind of sense of design this is a the the metallurgy is not like a pounded forged knife though there's a lot of different ways to make you guys we're not gonna get into that right now but it is beveled on both sides it's got a relatively narrow heel which I like meaning it's not too much of a wedge of the knife this is the one the one knife if there was only one it thank goodness there isn't just one because I would also really really miss this utility knife a utility knife this really kind of just a baby chef's knife is is all that it is now some people like it a little smaller in which case it's a paring knife this is like this is too big for a paring knife almost too small for a utility but I use this I'm not gonna say 90 person I use this a lot and I use it a lot as a paring knife cutting like up up like this where you're choked up on the blade if you want a traditional paring knife that's fine I find this a little bit more useful again this is also made by cut Brooklyn not cheap however cheap knives do have a place in your board this is a very old boning knife notice it's a quite a thin blade Sweeps tool point it used to be it a little thicker but it's been sharpened a lot made by a company called Forstner the same people to make the turn ox Swiss Army knives it's a stamped blade it's not forged it's literally cut it's not I don't know this is probably a $60 knife maybe only a $50 knife but I reach for this whenever I am taking meat off of bone be it fish poultry whatever this is the one that I reach for and I wouldn't want to be without it you really need to have a serrated knife I think in your kit there are things that serrations do that you just can't do with a chef's knife cutting bread trimming up layers of a cake I'll require that this does not have to be an expensive knife either this one was made by a company that I used to work with and done anymore and since they kind of made me mad I'm not gonna even mention the name but you could also buy Fortuner same same brand it could be a stamped blade but there are some things that serrations are very necessary for although not a must-have oh my gosh Asian knives are such things of beauty this is a kind of knife it's a vegetable knife called a nakiri Japanese beveled on both sides meaning that it's it's a wedge like this instead of one sided wedge this is made by a master knife maker who's now Portland his name's Murray Carter Carter cutlery I have a lot of his pieces they are extraordinary if he was a time he was the only like American knife master in Japan and his metallurgy and his edges are are incredible so I have I have West Coast and East Coast in my collection the other ones that I want to point out a couple of things that people don't think about very often I sure do you like my cleaver this is a bone cleaver it's really old it was made by a company called oak leaf st. Louis USA a number 9 this I bought vintage and had an edge put back on it this is for hacking up stuff also very good for home invasion when it comes to cutlery you cannot ever forget the importance of a good pair of sheers there are a lot of jobs that I reach for these to do rather than a knife this is made by a company called Lamson sharp I like it because it's a good heavy-duty metal that holds a good edge has kind of micro serrations and comes apart for for easy washing snapping through you know bones if I'm gonna spatchcock a Cornish hen I'm gonna cut the back out with this not with a knife I'll cut out herbs I do a lot I would feel very strange in a kitchen if I didn't have a good pair of shears I do think that it's important to have actual shears rather than just scissors by the way this kind of stuff these kind of suck they don't come apart well they do I still think that kind of if they don't come apart and go back together he's like and I don't like plastic handles on on shears so I'm not I'm not a huge fan if they if they look more like scissors that's that's what I like I shouldn't talk about about this company because they make other things really really well but I just I don't think that's so that's kind of it if you told me I could only take two things from here if I could take three if I could take four I don't want to choose and you know what I don't have to because I've got about 100 knives and I'm gonna keep it that way [Music]
