[Music] [Music] hey meal prepper welcome back to sweet peas and saffron I'm Denise and I share easy meal prep recipes that will give you your time back during the week today I'm going to share some of my favorite low carb meal prep lunch recipes with you guys I'm not personally on a low-carb diet but I can imagine that it must be really hard to find lunch options and that meal prep would be super beneficial and helping you stick to your diet so I am happy to share these recipes with you guys today our first low-carb lunch recipe is egg roll in a bowl so this is a super easy one to prep I think that's the best part is how easy it is to prep and it's super delicious as well so we're gonna start off by sauteing some ground pork in a frying pan and once the ground pork is cooked through we're gonna make a space in the center of the pan and we're adding sesame oil garlic and ginger we're gonna saute it for about one minute until the garlic and ginger are fragrant and slightly softened and then we're going to add a bag of coleslaw mix so I'm using broccoli slaw but you can pretty well use any bags slaw that you would like and while it's cooking we're going to shake together a super simple sauce of liquid soy seasoning this might also be called Bragg's Liquid aminos and if you can't find this you can use tamari or soy sauce but it might change the carb count in this recipe we're also adding apple cider vinegar and monk fruit sweetener you can swap the monk fruit sweetener for your favorite low-carb sweetener we're going to drizzle the sauce all over the pan sprinkle with sesame seeds and portion it out into for meal prep containers you can sprinkle with green onions if you'd like and these keep in the fridge for up to four days I like to heat these until steaming hot and enjoy [Music] our second low carb meal prep recipe is the cheesy chicken and rice on my site so you might have guessed that the rice is not actually traditional rice but we're gonna use cauliflower rice to lighten it up and lower the carb count we're going to start off by making some cauliflower rice so we're adding half a head of cauliflower to a food processor if you don't have a food processor you can use a box grater and just grate your cauliflower so just pulse your cauliflower ten to fifteen times in the food processor until you get small rice like pieces we're going to add some olive oil to a skillet and add our cauliflower rice some salt and pepper and cook for about five minutes until very slightly softened now when meal prepping with cauliflower rice do not overcook because remember you're going to reheat this later and it will cook for a second time so it's okay if it's a little bit al dente when the cauliflower rice is cooked through to your liking you will portion it out into for meal prep containers next we're going to add a little bit more olive oil back to the skillet and we're going to add some broccoli florets cook your broccoli until slightly softened and add that to the meal prep container as well and last but not least we're going to work on our chicken so we're going to take some boneless skinless chicken breasts cut into 1-inch cubes and to the bowl we are adding onion powder garlic powder and salt and pepper we're going to toss in a little bit of olive oil and then we will saute until your chicken is cooked through add this to the meal prep containers and sprinkle with cheese reheat and enjoy okay our next low carb meal prep recipe is a Santa Fe chicken meal prep so again we are using cauliflower rice in this recipe we're gonna start off by sauteing our cauliflower rice in a skillet and we're going to add salt garlic powder and lime zest cook it until it's a little bit al dente and add two for meal prep containers next we're going to saute some red onion and bell pepper so just saute them until they are softened to your liking and add those to the meal prep container with the cauliflower rice last but not least we're going to work on our chickens so we have two boneless skinless chicken breasts which we have sliced in half horizontally so we have to thin portions of chicken breast per chicken breast if that makes sense to you fresh with olive oil and sprinkle with taco seasoning now if you are really following a low-carb diet you are probably going to want to seek out a low carb taco seasoning or make your own homemade version so we're going to cook our chicken in the skillet until it reaches an internal temperature of 165 degrees and then we will portion out into the meal prep containers with our vegetables sprinkle with cheese and cilantro if desired and this one is really great paired with some freshly sliced avocado which adds some extra healthy fats to the recipe our fourth and final low carb meal prep recipe is a low carb Indian chicken skillet now this is another cauliflower rice recipe so if you are like cauliflower rice out I get it I will leave you some links to some of my zucchini noodle low carb meal prep recipes in the description box below we're going to start off by sauteing some boneless skinless chicken thighs in some olive oil we will cook them through and transfer to a clean plate and now we're going to work on our cauliflower rice so we're going to start off by adding some water cumin curry powder onion powder garlic powder garam masala and salt we're going to saute those for a bit until they kind of mix in with the water and we're going to add some tomato sauce so not ketchup this is like a Posada like a pureed tomatoes if you're stuck you could also use tomato paste and you might need to add a little bit of water to thin it out so cook this down until it thickens a little bit and then add your cauliflower rice now the cauliflower rice in this video is a little over processed for my liking so feel free to process it a little less than this and mix it into the tomato sauce spice mixture in a couple of batches next we're going to add some green beans and you can use fresh or frozen and saute them until they are bright green and just barely cooked through we're going to portion our cauliflower rice out between for meal prep containers and we will add our chicken I also like to serve this with like a little bit of yogurt and that is our Indian chicken skillet I hope you guys loved this video and got some new low carb
