welcome to my pantry friends you're at that 1870s homestead and my name's rachel and i'm so glad you're here with me today you know what if you hear those little cheap jeeps in the back that's our little chickens i'm glad you're here today and i'm thankful to a good sister in the homestead community amy fuel she reached out to me today and she was like rachel do you have a cookbook do you have something that tells me how you do this basically and no i don't i mean i have my personal cookbook and i've honestly started keeping it for my own records and then someday i hope to share with you guys my canning pantry montage maybe when i retire but until then i want to tell you about my methodology because i grow a really simple garden a really really simple garden and i'm able to do this and i call it my staples garden and maybe you've heard others use that terminology before but i really feel like i really hold true to that statement i mean i grow just the basics but growing just the basics doesn't mean it's boring you can do a lot if you just focus on growing those staple crops and i want to explain the method to my madness or the method to no madness let's keep it real growing a staples garden gets rid of all that noise all that waste out of your garden so you can just focus on what's important to build a pantry so i have my list here and we're going to talk about 10 things if you could only grow 10 things if i could only grow 10 things what would those 10 things be now i don't just only grow 10 things in my garden but there's not much more than this and i'll talk about the other handful but these 10 things are what i consider my true staples ready got your pencils peppers onions carrots tomatoes potatoes and that includes regular baking potatoes and sweet potatoes green beans peas zucchini cucumbers and cabbage other things that i grow every single year is beets spinach and greens whether it's lettuce or other grains so that is all i grow in my garden sometimes i grow corn sometimes i don't but it wouldn't be considered a staple to me so let's get into why are these my staples and what can you do to expand and like crazy explode your pantry with just focusing on these few items sweet potatoes sweet potatoes why because they keep so i harvested these last august september and they keep for a good year two years possibly i've had them store for two years easily canned sweet potatoes another great way excellent for mashed sweet potatoes sweet potato biscuits sweet potato pie whatever you want sweet potato black bean chili oh my gosh sweet potatoes are one of the most nutritious vegetables that you can grow for your family i love them it's basically dessert grown in the ground so not only is it good for you it tastes delicious but pretty basic i don't do a whole lot with it with respect to storing in my pantry so can sweet potatoes and stored same with green beans i have lots and lots of green beans a couple different varieties but i don't can these much many other ways i can plain green beans and i clean green beans with potatoes and green beans are just a staple vegetable in our house we serve it with so many dishes and knowing i have plenty of green beans filling our bellies is just a good feeling similarly to sweet potatoes is white potatoes yum yum yum white potatoes tons of white potatoes i will store those dry storage like regular potatoes and i'll also can them we love having them canned because it's quick go-to meals i can use it as mashed potatoes as potato salad potato pancakes thickeners and soups and stews so having potatoes will always be a basic it's good filling food right on the pantry shelf that if you need to extend meals that's going to be one of your tickets cabbage let's talk about cabbage it's one of my favorites guys and honestly if i had a root seller i wish i could store cabbage heads i just don't so i have to can my cabbage and i can my cabbage pickled it still has a wonderful crunch if you use pickle crisp and pickle your cabbage don't worry if you don't like the pickled flavor you can rinse that off and still use it as normal our pickled coleslaw we make coleslaw i'll fry this up and stir fry i eat it just straight out of the can honestly we love it i i say we because it's me and my daughter-in-law love it and it is just a wonderful crunch of freshness that you get to have in the wintertime when there isn't any fresh that you're growing currently on your farm so let me move on to something similar and that is pickles i'm just a huge pickle fan i love garnishes and so i grow all kinds of fun pickles these happen to be dill all of these are dill i grow a lot of the spicy honey pickles we have pickle relish i have done bro i know i've got bread and butter here somewhere bread and butter pickles are todd's favorite and we will just can every other year a huge batch of pickles and then i've got pickles for two years so think about that when you're growing a staples garden what are those things that you're always buying from the store to make the things fun that you eat whether it is condiments or garnishes and cabbage and pickles kind of fit in that realm for me so i'm just going to take a brief pause from the pantry because some of my staples i do store in my freezer for freezer purposes and we'll get into that back in the pantry carrots because i was about to tell you carrots on my pantry shelves but i store a ton of carrots just frozen for roasting carrots stew carrots just delicious purposes roasting broth anything that you can think of and i also do i know this is loud a lot of shredded carrots carrot cake muffins all those kind of fun things then i was going to tell you about onions and why onions are important we just got done processing all of our onions from last year and these have all been they were starting to sprout in the pantry so we've chopped them all up or sliced them and they are now gallons and gallons of bags of peppers and then i was going to tell you um onions then i was going to tell you about peppers and i have bags and bags and bags of peppers from last year's harvest whether they're sliced or chopped they're freeze-dried and mylar bags peppers go the distance so grow yourself lots of puppies i think that's it out of the freezer oh i did tell you peas are a staple and the only way i probably have to show you that is lots of peas and freezer bags for quick side dishes okay but let's get to the carrots on the pantry shelves tons of carrots and i like to do them a couple different ways this one you can probably see some spices in it that was made with like nor soup mix and then i love just plain canned carrots there are people that love canned carrots and people that don't love canned carrots we know how to cook canned carrots so they don't fall apart on you and it is just a staple for our family it's one of our go-to side dishes again just another super super nutritious food but carrots aren't just for canning plain carrots carrots go in almost all of my sauce and broth recipes so we're gonna get into why do you need to grow tomatoes onions and peppers as a staple this is all tomato based quart size sauces spaghetti sauce chili base creole tomatoes everything in these jars requires four of my staples tomatoes peppers onions and carrots they all go in all of these products and that's how i get bulk canning done just zucchini is going to be your best friend when it comes to canning a large pantry but what else can you do with all of those tomato products onions peppers everything i've got a huge variety here so this is where i'm telling you canning a staples garden is the opposite of boring it gives you the freedom to really grow your pantry so i have just tons and tons of pizza pizza sauce all of this is enchilada sauce all of that went in there right peppers onions tomatoes zucchini plain tomatoes tomato soup pickled tomatoes even though that's not my favorite i will admit more tomato soup we got lots of zucchini relish just tons of zucchini relish i have pineapple zucchini back here going on to the onions what all can you do with onions we've got caramelized onion jam um no sorry maple onion jam caramelized onions french onion soup let's get back to tomatoes i've got salsa verde uh come down here stuffed bell pepper soup tomato sauce i already talked about those ones tomato ketchup diced tomatoes come on down more salsa just tons of salsa oh i forgot to mention let me go grab one thing from the quartz and green tomato curry oh if you haven't canned this you will be forever grateful if you learn how to can all the leftover green tomatoes at the end of the season and they will ripen in their house during the fall green tomato curry and green tomatoes salsa verde oh lord have mercy lifesaver completely changing up your pantry giving your family like a ton to choose from i didn't mention barbecue sauce cherry barbecue sauce made with our cherry juice and our tomatoes i was about to wrap up the video and i almost forgot one of my primary staples i was talking about peppers and all the tomato products but what about peppers stand alone notice how much cowboy candy i have here just tons and tons of cowboy candy i have cases at my feet of cowboy candy peppers in all forms and varieties another just amazing way you're talking about pizza night taco night nacho night oh my goodness like my daughter-in-law just called from south carolina and so it was like could you please send some cowboy candy it is just those things that make a sustainable life not boring we have so much fun using the food that we grow and it doesn't have to be boring it can just truly be that spice of life and there's so much else that i could talk about right i mean you see there's so many products i haven't mentioned let's the greens that's just my cabbage leaves and my broccoli leaves that i harvest and make my own homemade greens from but that comes out of my staples garden guys i could go on and on and on and hopefully you can see nothing here is unique tons of jellies and jams that i didn't even mention because those are just perennials that come back every year so that if you haven't started an orchard or fruit um fruit grow started because it will add to your pantry too but yeah i just wanted to let you know you don't have to go crazy focus on the basics nail those basics and with the basics you can do some pretty amazing things and eventually you can have a pantry as big as mine if not bigger i know you can i was once where you are and i didn't have much of anything i didn't have anything that one day and over the years i just grew and grew with my knowledge and my practice and here i am today so thanks guys thanks amy for the inspiration i'm always willing to share and encourage others i'll talk to you guys on the next video somebody's gonna say but i didn't talk about all the meat yeah you did and i didn't talk about the broth and i didn't talk about corn i didn't talk about lard and i didn't talk about beans like i can't cover it all but if you could if they could grow their own meat like like yeah but this was focused on the garden and ten things limited to ten if i could only grow ten things but i would highly recommend they do it all we've grown quite accustomed to corn lately yes we have
