I'm going to make a really delicious and soft stick bread. lukewarm heavy cream(liquid whipped cream) 100g, lukewarm water 160g 55g lukewarm sweetened condensed milk Measure the ingredients and bring them out to room temperature 1 hour before use. 45g sugar, 7g salt, 6g dry yeast Mix until ingredients are melted. 20 g of melted butter Mix it well. Add 350g of Bread flour and mix until powder is not visible. Let rest for 20 minutes at a temperature of 27 degrees.(I use the oven slightly warmed.) Repeat folding and pressing the dough about 10 times to activate the gluten. After folding 9 times, it is in a dough state. It got smooth. Let it rest for 20 minutes at a temperature of 27 degrees again. Repeat folding and pressing the dough about 5 times to activate the gluten. I'm going to take some of the dough off and do a gluten test. It is OK if it stretches thinly without tearing! Let it ferment for 40 minutes at a temperature of 27 degrees. It is better to ferment the dough while checking the size to see if the dough rises twice as much as time. If the fermentation time is insufficient, the bread will be hard and tasteless. Punch the dough to release the gas. Divide the dough into 14 pieces.(Each piece of dough weighs 52g.) Round the divided dough. Let rest at room temperature for 15 minutes. During rest, damaged gluten is rearranged. Roll out the dough with a rolling pin to make it into a rectangular shape. Approx. 11cm wide and 9cm high Turn the dough over so that the smooth side is on the bottom, hold the end of the dough and roll it. Pinch the ends of the dough well to avoid loosening the seams of the dough. Lay out 7 doughs side by side on the oven pan. Let it ferment for the last time at a temperature of 27°C so that it almost doubles. (I fermented at 27°C for 50 minutes.) Brush milk over the dough. Bake in an oven preheated to 160 degrees for 18 minutes. Spread melted butter on top of the bread before it cools down. Glossy bread is beautiful. It's really soft.
