Happy New Year everyone, I'm Xiao Gao Jie. Today, let's make nice looking fortune dumplings. The filling is chicken with shiitake mushroom and cabbage. Blanch the spinach first. You can probably get around 200 grams of spinach juice. The spinach juice is smooth, and the colour of the dough will nice and green. The amount of flour used is twice the weight of the spinach juice, 420 grams. Add salt and pour in the spinach juice. Stir into dough pieces, then knead the pieces into a ball. Knead it evenly. Rest the dough. The amount of flour and salt for white dough is the same as for green dough. But the amount of water should be reduced to 190 grams. The ratio of water to flour is around 45%. Also kneaded into a ball. Next, rest both doughs twice, and knead them twice as well. Each time rest for about 10-15 minutes, knead each dough for one minute. You can see that the green dough is evenly wrapped around the white dough. Wrap two doughs in plastic wrap to keep from drying out. Take a dough to work with. Continue to roll. Then use a sharp knife to cut out thin slices. Cut as evenly as possible. The cut dough retains the green and white shapes well. And you no longer need to flatten it. A little dusting flour.
