Hello, this is Hidamari. Today, I will make strawberry shortcake. Make the sponge cake first. Whisk together the eggs and sugar. Warm it up with hot water. Warm until the egg mixture reaches about 30-35°C. By warming the egg mixture, the sponge cake will rise. Heat and melt the butter that will be added later. Whisk until the dough remains in shape even if it overlaps. Remove clumps of cake flour. Gently mix by scooping from the bottom. Mix butter and some of the dough. Mix so that the dough and butter blend together. Make syrup so that the sponge cake does not dry out. Slice once the sponge cake has cooled completely. Slice into 3 pieces with a thickness of 13mm. Make whipped cream that connects sponge cake and strawberry. Whisk until stiff enough to leave streaks when mixed with a spatula. Beat the syrup until the surface of the sponge cake is moist. Spread the whipped cream evenly. Arrange the strawberries. Cover with whipped cream to fill in the gaps between the strawberries. Add the freeze-dried strawberry powder to the remaining whipped cream. It's creamy and delicious with a strong strawberry flavor. Cut off the four sides to trim the shape.
