[Music] [Applause] [Music] [Music] what's up guys welcome back sandwich recipes have been getting a lot of attention on social media recently so i figured i'd share with you one of my favorites today i'll be showing you how to make this delicious meatball sub but before we do that please take a quick second to subscribe to the channel make sure you hit that bell to enable notifications as well alright guys meet me in the kitchen let's make it happen first things first we'll get started on our sauce and for that we need some basil some garlic onions some parmesan cheese a little olive oil and some crushed tomatoes super simple marinara sauce that you can make at home really quick way better than the stuff you get at the store in the jar the onions are optional but i like to add one half of a diced onion to mine you can use white or sweet yellow whatever works for you we're just going to dice it up nice and fine it's going to cook down and reduce quite a bit in the sauce so don't be too anal about it we're going to use our knife rock back and forth until we have a nice fine dice on the onion next we're going to do the same thing with the garlic we're going to smash peel and dice the garlic you could also use a garlic press or use the minced garlic if you have that in the jar in the fridge fresh is best for a sauce like this but use whatever you have on hand today i'm going with three or four fresh cloves of garlic but you can adjust this based on how much you want the garlic flavor to be present in the sauce just dice it up nice and fine it'll cook down and reduce in the sauce here in a moment and once we have the onion and garlic prep we can set that aside and now it's time to move on to our fresh herbs that we're gonna roll up one day i'll be mature enough to pass on that joke but today is not that day so what you want to do with your basil is roll it nice and tight and then slice it thin like you see right here that's the best way to do it or just break it up with your hands either way i want to add some fresh basil to the party because it's going to add tons of flavor to the sauce speaking of the sauce it's time to get the party started in the skillet over medium heat we're going to warm some olive oil to that we're going to add our onion and garlic you really don't want the heat to be too high right here you just want the onions and garlic to slowly sweat and release their flavor into that olive oil that's going to permeate throughout the rest of the marinara sauce it's all about building flavors one step at a time and speaking of flavor we need to get some seasoning in there we're going in with some italian seasoning and some crushed red pepper flakes followed by my all-purpose seasoning if you don't have that just use a little salt and pepper next we're going in with one heaping tablespoon of tomato paste that's going to add some great concentrated flavor and help thicken things up a bit give that a good mix and then we're going in with our crushed tomatoes quick reminder guys that all the specific measurements and ingredients for this recipe can be found in the description box below so don't forget to check that out next we're going to add in that basil that we diced up earlier along with the parmesan cheese taste as you go and adjust the flavor to your preference and once you have the sauce right where you want it you can cover it and set that on the back burner and just allow that to simmer on low and now that that amazing marinara sauce is done it's time to move on to the real star of the show which are these delicious meatballs and for those meatballs we got a little prep work to do we're gonna grate one half of an onion or one small onion and then we're gonna dice up some parsley as well personally this is my go-to method for adding onions to my meatball mixture i like this because you don't get the big chunks of onion in the meatballs but you still get the flavor next we're gonna dice up some parsley nice and fine about a quarter cup or so and set that aside and now in a medium-sized mixing bowl we're gonna add one pound of ground beef i like to use 80 20 and one pound of pork sausage now i know the pork patrol is lurking in the comments so before you ask yes you can leave out the pork and just use all beef for this recipe you could even use chicken or turkey whatever floats your boat now before we get to adding additional ingredients i like to first get in there with my hands and mix the two meats together then we're going in with one box of boars and garlic and herb cheese you guys already know how i feel about that stuff it's absolutely gold definitely give it a try if you see it at the grocery store followed by the onions that we grated earlier and of course that parsley two tablespoons of sour cream and one to two tablespoons of garlic paste then we're going in with some freshly grated parmesan cheese quick reminder guys that all the specific measurements and ingredients are listed for you below so don't forget to check that out a little italian seasoning and of course my ap seasoning which is basically a blend of salt pepper garlic and onion powder if you haven't tried that yet you can get that via the link in the description box as well last but not least we're gonna add a little heat to the party by going in with some crushed red pepper flakes those are optional and then we're going in with two beaten eggs now you want to get in there with your hands and fold all those amazing ingredients together i promise you these are going to be the best meatballs you've ever had you guys got to trust me on this one now we're going in with some italian breadcrumbs you can use whatever breadcrumbs you like i usually use italian or parmesan flavor doesn't really matter fold them in a little bit at a time until your meatball takes a nice shape like you see right here it's a good idea to pop this in the refrigerator for at least 30 minutes or so to allow everything to kind of come together that way your meatballs hold together a little bit better after that we're gonna go ahead and break these down into individual meatballs and you can really make these any size you want you can make them larger if you want to or smaller for the purposes of a meatball sub though we're gonna make them pretty small probably about an ounce and a half per meatball if you want to be super consistent you can use something like an ice cream scooper but i like to do them by hand now that we have our meatballs shaped up it's time to hit them with one last bit of seasoning i'm going down with some more all-purpose seasoning but feel free to use whatever you like if you have something in your pantry that you enjoy i used to use mccormick's hamburger seasoning and that used to get the job done back in the day and now my friends for the fun part it's time to actually cook something so in a cast iron skillet over medium high heat we're going to add some avocado oil and sear off these meatballs now we're doing this for a number of reasons one it's gonna add some color when you get that nice crust on the outside which is also gonna provide some flavor and texture making the best meatballs you've ever had as i promised earlier as you can see my friends we have a beautiful color developing on these meatballs i like to sear them on all sides and then we're going to remove the meatballs and finish cooking them in that fantastic marinara sauce giving them an opportunity to soak up all that flavor as well meatballs are done at about 160 to 165 degrees internal temperature once they're done you can cover them and set them aside while we make our sandwich and you guys know we gotta jazz that up a little bit so i'm gonna make a quick garlic butter spread to go on the bread for the meatball sub and for that all you need is one stick of melted butter followed by one tablespoon of garlic paste a little crushed red pepper because why the hell not a little salt and pepper and some of that fresh chopped parsley from earlier about a quarter cup of grated parmesan cheese get in there with a spoon or a spatula and mix all that together and that my friends is a quick little garlic butter that's going to go on our bread and make yourselves a fantastic meatball sub i'm just using one of these hoagie rolls that i got from the grocery store at the local bakery use a serrated blade to cut through the hoagie roll there we go you don't want to cut all the way through you want to do about like you see right here that way we can position those fantastic meatballs on the sandwich i'm gonna spread this garlic butter on both sides because we're here for a good time not a long time and butter makes everything taste that much better i'm gonna pop that in the oven for about five or six minutes our meatballs are done they're looking fantastic these things freeze really well so this is a great meal prep option also you can vacuum seal them pop them in the freezer or you can freeze them individually you can do the sauce separate whatever you want to do all of this stuff reheats really well so great recipe for meal prep we're going down first and foremost with the layer of that marinara sauce followed by those fantastic meatballs i'm gonna fit about four or five on here but it really depends on the bread and how hungry you're feeling there we go we got them nestled in there and then i'm going down with some mozzarella cheese feel free to use whatever cheese you want but mozzarella is pretty traditional with a meatball sub we're going to pop that under the broiler until the cheese melts beautifully like you see right here and now we're going to take things up another level with some freshly grated parmesan cheese or pecorino romano whatever floats your boat let me know in the comments what your favorite sandwich is this has to be in the top three we're gonna go ahead and plate this up and get ourselves a money shot and a taste test because i'm getting hungry i can't wait to dig in going down with some more of that fresh chopped basil maybe a little parsley if you're feeling frisky brace yourself for a trademark money shot look at that cheese pull here comes the cross section my friends and this is a sandwich for the books right here oh man say it with me guys looking good going in for the taste test here is the moment of truth i can't wait for you guys to try this one this recipe is absolutely money guys let me know what you think in the comments that is my recipe for meatballs and a
