what's up guys and welcome back to tackling the world this week I'm going to be doing lots of cooking and showing you guys what we usually eat lately I've been really obsessed with chickpeas so there's probably going to be a lot of chickpeas this week actually haven't done any grocery shopping so I'm kind of just using what's in the fridge and right now we have a lot of mushrooms we have tortillas so I'm going to try to make some mushroom tacos got the onion and the garlic in here and let's put some seasoning some cumin some anchel little bit of black pepper and some soy sauce put our mushrooms in there nicely shredded give it a mix then we'll let it marinade for like I don't know 30 minutes maybe got the oil nice and hot let's cook these mushrooms mushrooms shrink quite a bit these actually shrunk already when they were soaking and the marinade heating up the tortillas right now now and something else I'm going to make is guadas with weat Lae we have the star wheat Lae we'll see how it is looks delicious there you go mushroom tacos us should like salsa on mine but we don't have any salsa but we did have leftover P right M that's really good yeah the texture and the taco is really good it's a nice and yeah I like that a lot as well it's kind of smokey mhm I um ano chili ano chili that's why which is also a type of fungi isn't it yeah it is MHM comes from corn going to do a little bit of a h soda basically it's like the concert conate some Str really nice I would love to find it fresh here but it's very delicate flavor it's not very strong I taste a lot of the uh actually this tortilla this tortilla has a really nice flavor when it's not um C chili crisp and we use hot sauce we use a barnacle Foods hot sauce I bet would have been good in here obviously yeah these are pretty bomb see you guys on the next meal don't know what it is though all right we are making some banana pancakes and we got two bananas smooshed in here an egg and a little dash of salt just going to mix that going to put like two tablespoons of cottage cheese in here should be good mix mix mix mix little bit of baking baking powder got like four tablespoons of flour and mix it since it's like a banana pancake it's also pretty good with like little pieces of dark chocolate the only thing is we don't actually have any butter or oil hopefully these turn out okay don't stick too much but trying to do two at a time to speed things up oh oh tree just fell huh if a tree falls in the forest and we hear it it fell it fell perfect this is how I like to eat my pancakes with a little bit of yogurt my favorite Nut Butter waffle cone flavor or some berries doesn't really matter which berries we got raspberries right now though we're just sharing a plate make less dishes you know and I still got more Pancakes on the pan but we're a little hungry so we're just going to start eating now I like really thick yogurt so it doesn't look as pretty as it could be if I made it runny these are Big raspberries those are huge raspberries healthy pancakes hey they came out without oil mhm we're going to get the second one didn't get to show you guys really the meals yesterday we were kind of really busy we've been driving around looking at some properties um kind of realizing that if we want something within our price range it's going to be kind of a house that's falling apart um we looked at one that had so much potential but the prodct project would be so intense it would probably be gutting that thing to the bones um assuming the that the structure is fine we don't actually have a report on it so someone hasn't lived there for like 10 years so you can imagine how bad it is and right now not sure we really want a massive project like that right now we're just kind of looking if something Peaks our interest we'll check it out we're not really in a rush so we'll see hopefully in a year or so we'll have a house but today is tako's birthday so I'm going to go buy a couple things for him he wants enchilada so I got to get those ingredients Tada very pretty just going to put it in the fridge and we'll eat it later I've roasted the things I need for the salsa which is Tomos onion garlic and sanos of course and so I'm just going to let this cool cuz I don't want to blend it when it's like really hot not good for the blender and also you end up choking on really hot steam that's really spicy I've also diced up some fresh onion a little bit of lettuce and I got the chicken cooking going to get a little festive there's a piñata I bought it when I was in Mexico figured this would be handy in the van it's pretty small nice Pata I said this before it's better to lightly fry a tortilla then bake them in the oven you want to lightly fry it so don't fry it to the point where it turns into a tosta or else it's going to be crunchy and it's not going to roll you just want it to fry enough so it changes a little bit of color a little crispy edges is fine but yeah just light fry so it stays together oven enchiladas to me are always so dry and crumbly and I don't enjoy them got the enchiladas finished topped with some fresh onion and lettuce oh my favorite enchiladas oh damn this looks good and you cut the lettuce real fine this time hey thanks Is It restaurant quality yes it's very nice one time I did that to the green onions really finely and he told me that I had what it took to work in a restaurant oh yeah my mouth salivates M oh yum M the green salsa is like nice and tart it's pretty spicy too next time I'll try it with mushrooms too with that filling I made yeah so good going to finish these up and then for dinner we're actually going to be eating out instead of cooking something for breakfast we're going to have a little Turkish eggs Inspire dish got a little greek yogurt put in a little garlic little bit of dill and mix it up I'll probably put a little squeeze of lemon too and just a little bit of lemon got our little poach t oo that one fell quickly to this with chili crisp and voila you got Turkish inspired eggs wo beautifully poached egg it's refreshing yogurty it's creamy thick and chili crisp little spicy perfect just got back from the gym so I'm going to make some lunch tacu is going to be gone for a few hours so we'll probably eat this for dinner as well and I'm going to make what's called Mary me chickpeas I think the original recipe was chicken but I've been really into chickpeas still have more chickpeas so might be in chickpeas for a couple days I pretty much make all my beans from scratch so I end up with a pretty big batch got the garlic and the sundried tomatoes going in here little bit of oregano same company where I get my beans from I've added the chickpeas and some chicken stock well technically it's not chicken I don't know how we ended up grabbing this sometimes we end up with weird vegan ingredients but they're usually not bad added some heavy whipping cream and some Parmesan cheese and since I forgot to add chili to it I'm going to put a little cup chili crisp get asked like what we put this in and we kind of just put it in everything we have a fresh bread loaf right now from the bakery so trying to make things that we can enjoy with it this is a really good dipping meal it's funny everyone always expects chefs to be eating like amazing six course meals every single day but for the most part I do the cooking at home also chefs who have worked 12h hour days and getting home at midnight they typically don't want to be cooking any fancy meal they just want to eat and go straight to bed when I took a cooking class in high school our teacher told us that her husband's always getting told how lucky he is to have married someone who is a professional chef essentially like she went to school for it and everything and she was saying that the day before she had just fed him mac and cheese with tuna cuz that's all the time that she had to cook surprise talk to made it back early no I'm just I just came to grab my headphones forgot another jar done it's good yeah the sundried tomatoes are nice in here mhm easy quick delicious those are the kind of meals we like to make all right it's dinner time and we're making a chickpea dish today we're making like a hersa chickpea kind of bowl throwing in some shallot garlic and to throw in some perpe good amount of it top some tomatoes in now it's cooked down we're just going to add our chippies mix them in and let them get hot chickpeas are looking pretty good so let's make these bowls get some of our wild rice some of our [Applause] chickpeas little bit of arugula kind of a weird aruga but that's all they had in store some cucumbers this like a yogurt tahini just going to put it in the middle some red onions and these are pickled red onions okay here it is M looks delicious got little Trader Joe's n too the Frozen one is the best one spicy delicious dinner MH healthy it's another one of those quick meals too doesn't take too long to make the chickpea we just got back from the gym we are starving so I'm just going to throw together some quick kimchi fried rice sorry for the noise the dishwasher is still going going to throw some garlic in some mushrooms that we have throwing some kimchi in I've said this before in the past but neither of us really have a preference for a small cut of kimchi just ends up making a bigger mess in the van usually so we just throw it in chunky and directly in oh there goes you JN and throw in my riceing some kimchi juice finished it off with a little sesame oil and just a touch of soy sauce M yum oh kimchi fried rice that looks good so nice you got to pop the egg oh yeah pop the egg for the can oh yeah and fried rice is such an easy meal yum yum yum oh man we've gone through our jar of kimchi I know we almost were going to buy the massive massive one but we didn't think we could do it but we finished this in less than a month so going have to buy the bigger one make it last we didn't make a video there yet huh mm-m on the next one it will take you to that Korean Mar Market that makes those kimchi jars it's really good yeah we'll take you to some um cheap beats in Monterey maybe like two nice ones just in case you have a little date or anniversary or some special I think that's going to be everything for this video thanks for
