[Music] this is the three quart copper core saute pan sold at costco and branded by kirkland and this is the three quart saute pan revered by professional chefs in every culinary kitchen all over the world made by oakland the all clad pan retails for 360 dollars at william and sonoma the kirkland pan retails for 199 but you get all this with it elves not included [Music] so yesterday the ups guy shows up we're in the living room and my wife is angled in a direction where she could see out the porch window and she's watching and bringing these packages and she's got this look on her face like what did you order like what did i order i didn't order anything she's like yeah there's like a monster box on the porch and i'm like what i go outside and i see this monstrosity of a box and i could not believe that that was where my all clad pan was one bulk led pen was in that box i was like what the heck is going on at william and sono in the factory hey uh kevin can i talk to you for a second um we got a little problem here uh all of the packages that you send out about 50 of them come back damaged i really need you to be more careful i need you to pack a little more carefully and i need you to really make sure that the packages are packed right because we're losing a lot of money just over pack bigger boxes overstuff them what the all clad brand is literally the most revered pot and pan in the industry every culinary professional uses these or wants to use these they're simply the best in the industry but the question is do you really need them for your home kitchen and are they worth the money before today i didn't even own any oil clad pots or pans except for some strainers that you've seen on other episodes i just want to let you know that the pots and pans that i'm reviewing here today were purchased by me they weren't donated they're not sponsored this is a completely unbiased representation of these pots and we're going to try to figure out which ones are the best when i was buying all the stuff for this test kitchen my wife of all people suggested that i purchase either all clad pots and pans or la crusay and i didn't want to do that it's kind of like for the same reason why i don't wear chef clothing when i'm on this episode i want everything to be non-intimidating i want everything to be within reach so you can feel comfortable making the things on the show without saying oh he's a chef of course he can do it i want people to be comfortable making whatever i make on the show without any fear whatsoever now don't get me wrong i want you to be stretched out of your comfort zone like i really want that because it helps you to grow that's okay all clad pots and pans are very expensive but they're made here in the united states from the finest materials that you could possibly buy kirkland is made in china and you really don't know what kind of materials they're using in their pots and pans now i'm a big fan of costco products and usually when they put the kirkland label on their products eight or nine out of 10 times it's a really good product now i purchased this entire set from costco and i believe you can purchase from amazon as well for 199 dollars and that's like really next to nothing and now i think they're on sale for 169 dollars let's talk a little bit about the warranty that comes with these products so both of them are guaranteed for life all clad is not guaranteed for wear and tear and normal use if you clean it with brillo or if it's stained [Music] don't be one of those people that uses these comfortably for six years and just decides that they're dirty or scuffed up and you want to get a new set because we don't want costco to change their return policy it's a very noble and generous return policy just don't take advantage of it both sets here are five plies of metal in the center of those five plies is copper and copper is used to dissipate heat evenly so you get a uniform cooking temperature throughout the whole pan here is one of the differences in the specs so all clad you can put under a broiler and you can bring it up to a temperature safely up to 600 degrees won't warp it's designed for that now costco on the other hand these are only suggested to be brought up to a temperature of 380 degrees and they're really not designed to be put in the broiler that could be a deal breaker for me i mean i'd like to start off on the stove especially when i'm cooking something like duck or tenderloin and finish it off in the oven and i never put it in the oven for less than 450 degrees but realistically i can pick up a cast iron skillet with a lid to keep from splattering and take that cast iron skillet and finish it off in the oven and it'll be really easy to clean you just wipe it down stainless is not so easy to clean i don't care what brand it is it's going to require some elbow grease where it might be in your best interest to spend the 80 bucks and pick up a cast iron skillet from somewhere like amazon with a lid and be done with it full disclosure anything that i have linked down below at no cost to you i get a little tiny commission off of it but hey it helps to support this channel and it may save you from spending 400 bucks on a skillet online the all clad brand it pretty much got five star reviews the costco set on their website got mixed reviews one of the biggest complaints about the costco set and this could be a serious deal breaker is that a lot of people said that it warped the other complaint was that they were heavy but you know what these pans are heavy so if you're not looking for a heavy pan you may want to look elsewhere definitely don't pick up either the old clad or the kirkland bland some of the people actually said that this warped while they were cooking on an induction top or a ceramic top and that would definitely be a deal breaker because if it warps you can't it won't cook induction works by contact now we're gonna do a little test later to see if we can get any of these to warp let's talk a little bit about width and height the all-clad pan is eleven and a quarter eleventh pound eleven and a quarter inches wide in diameter and the height of it is about two and a half inches the costco pan is just a little bit bigger it's eleven and three quarter inches in diameter and the height of it three inches the all clad brand comes in at 65 ounces or a whopping 4.2 pounds or 1.853 kilograms the costco pan is 81.6 ounces 5 pounds 0.18 or 2.314 kilos heavier i'm going to turn these on at the same time set them at the highest temperature and i'm going to start my timer at one minute i'm going to measure the temperature in the center of each one of these pans i want to see which one has the highest temperature then at two minutes i'm going to go around in a clockwise fashion in each pan and see if there is uniform heat around the pan the center of the old clay pan is 171 and the center of the costco pan is at 143. so the all plaid pan comes up to temperature faster than the costco pan right now it's at 188 this is at 153. could it be because that pan is a little larger possibly 230 227 247 250. here 201 211 217 13 more uniform one more time 230 242 266 255 205 214 223 216. costco pan is a little bit more uniform i cooled both pans down in the sink i'm gonna put my pans back onto my induction cooktops put it on the highest setting for each one and i'm adding four cups of water to each pan and i'm starting my stop watch i want to see which one comes up to boil first so at 5 minutes and 15 seconds this is pretty much boiling that is starting to boil the all-clad pan comes up to temperature faster the interesting thing here is when i hit the temperature on the handle the handle is 140 degrees here the handle is 150 degrees at the base and then on the handle part itself 77 degrees 75 degrees so really at this point they're extremely safe to touch for both so nobody wants to spend time cleaning pots so let's do a little experiment here i'm gonna make something in these pans that would probably get me murdered in the parking lot of my restaurant by my dishwashers let's start with a little pat of butter in each pan all clad here costco there a little bit of olive oil parmesan cheese oh yeah sriracha and for good measure about a teaspoon or two of sugar i'm just gonna let that burn a little and see which one takes the least amount of time to clean this is really cool to the touch the base of the handle here is 213 degrees base of the handle here is fifteen degrees this handle the costco handle is 74 degrees the all-clad handle is 77 degrees but this pan is a lot harder it's at 400 430 that's 400 degrees so both pans the handles seem to be cool to the touch so that's not an issue in either one there's only one product that old clad makes that gets consistently negative reviews online and that's their cleaner people say it's overpriced and this stuff over here bar keeper's friend seems to work just as good for one-tenth of the price or whatever one-fifth of the price after giving up in the sink what i did was i added some bar tenders keeper bar keepers friend to each pan hot water and i'm boiling it just to see if i can loosen some of that crud up at the bottom because it is unbelievably difficult to take off so i did manage to get them clean it took at least 15 minutes to clean each one it was really uncomfortable boiling them with the bar keepers friend really made the difference but on the all clad i had to use this scraper to get it off actually used it on both seemed like there was more gunk build up on the ball clad in all fairness look if i spend 400 on this i want it to be clean and i got to tell you it's really uncomfortable to be cleaning this thing it was a lot of work so the last thing i want to try to do is i want to try to get this pan which is one of the pans from the costco set to warp right now it's totally flat i want to see that if i could jack the heat up on this thing and leave it at a high temperature with just some oil in it to see if it's actually going to distort the pan this has been hovering at around 440 to 450 degrees now for the past five minutes i haven't seen it warp when i went online and i looked at all the negative reviews that said that the pan was warping they were all about five months ago their quality customer service really speaks for itself my suspicion is that they dealt with it and it's fixed i can't get this pan to warp no one would want to show off an all-clad pan in their kitchen more than me would i even use them in my restaurant absolutely not their lifetime warranty only really covers manufacturer's defects like the rivets the handle breaking i don't know it won't cover wear and tear how can you even say no to this pan it's so much cheaper i mean the whole set is 170 it actually cleaned a little easier than the old clad it's bigger i don't know to me this is a clear winner i would save my money and i would not buy the old clad i hate to say it but that's what i believe and even at 460 degrees i forgot to turn it off while i was filming my conclusion no
