so this morning so weird my alarm goes off like ding-ding regular alarm sound I turn it off and then like 30 seconds later a song starts playing from iTunes off my phone and it's spy by the Moffitt's which is in my library but I literally have no idea why it played that and I was like freaking out I was like is the phone spying on me like why is it this song like I've never played them off it's in like the longest time hey everybody it's Lauren I'm hot for food of course and I am here every Wednesday cooking up vegan love making vegan recipes and this weekend is Super Bowl Sunday I don't care I literally forgot didn't know the only reason I care is because it's a great excuse to make fun food fun vegan comfort food which is my specialty this week I'm gonna share a simple easy vegan dip it's a classic one that vegan spinach dip that comes in that pumpernickel bread bowl I eat that all the time growing up my mum made the traditional version of course with lots of sour cream and mayonnaise but I'm gonna show you how to make it with tofu and zucchini mmm trust me it's gonna be delicious we're gonna season it it's gonna be amazing and it's gonna be light and healthy instead of heavy and gross and full of animal products so I'm gonna show you how that's made I didn't bother to check what teams are playing this Sunday so let's not talk about sports let's just get into the cooking here we go so the base of the spinach dip that I like to make uses tofu and zucchini we're gonna sautee the zucchini and onions and garlic in just a second but for the tofu you want to take about a cup of it crumbled and use like a medium firm or a firm and then you just really want to make sure you get it nice and dry without any excess moisture so the way I do this is I crumble it I kind of mess it up and then I put it into a nut milk bag and I squeeze out all the excess moisture you could also use a double layer of cheesecloth or if you have a tofu press you can use that but don't make fun of me I'm using my like dirty nut milk bag stain from making green juice it's not dirty it's just stains that's what you do not want mixing into your dip so you're gonna heat up a pan over medium-high heat and add some vegetable oil and then we'll just saute the zucchini onions and garlic until it's nice and cooked and soft and kind of browned up so maybe you're wondering why on earth is using zucchini for a spinach dip well this idea kind of sprung from when I made that carbonara sauce from zucchini so because zucchinis sort of starchy and when you blend it up it gets nice and creamy I thought it would be a better base to try than using like a vegan mayonnaise but you could make a version of this with vegan sour cream and vegan mayonnaise and I actually have that on my personal YouTube channel I have a video where I make that with somebody but this is just another alternate version I think it's a little bit lighter and it works and it's awesome so that's why I'm doing this so once everything's looking nice and caramelized and it's all cooked you can turn the heat off I would put this in another dish to let it cool down before we blend it and then we're gonna add this to a blender with all the other ingredients so add that tofu in add in the sauteed veg add in some non-dairy milk and lemon juice apple cider vinegar garlic powder onion powder and salt and pepper and now blend it until it's really smooth so that's all we need to do you need to thaw a package of frozen spinach overnight and I suggest using frozen spinach because in a package it's so much spinach compacted into like that little brick and it's just like what you use for this spinach dip so you don't need to cook it you just need to thaw it and then you need to drain it of all the excess water and squeeze the water through a fine mesh sieve and then kind of break it up by hand like this into a mixing bowl before you stir the sauce into it [Music] and now to this we're gonna add some fresh dill parsley and chives and dehydrated minced onion and now stir this up until it's really well combined so I like making this the night before just so it gets really really flavorful and then if you're lucky you can find a loaf of pumpernickel bread that's vegan friendly and we're gonna make a bread bowl out it is this is how you serve spinach dip like in the classic comfort food fashion so basically we're gonna cut out a circle and then you're gonna cut up all the excess pieces into cubes and that's what you're gonna be dipping with and I also like to serve it with veggie sticks but you can serve it with other crackers or whatever you want now don't put the dip into the bread bowl the night before do that right before you serve it otherwise it's gonna get too soggy so I'm sure you can figure out how to do this but just leave a nice edge around the loaf and cut out kind of like a circle with a point like that so we'll cut this up if you have any excess you can hollow out even more here just take out some chunks like that and then we're basically ready to go here [Music] oMG it's vacant spinach dip how good does this look it's so creamy you would never know what the base is like anyone who's not vegan at your party they're not gonna know don't tell them it's so oniony spinergy tang i actually took it to a barbecue in the summer with like my family my extended family everyone loved it the whole thing was destroy there was no bread left so make sure you eat that bread bowl don't waste that you get in there oh my god I mean the vegetables are just for decoration let's get real there prop vegetables mmm yay sports so whether you're watching the Super Bowl this weekend or not make this dip for a party a potluck whatever again don't help anyone it's vegan no one
