hello everyone this is wong hing today let's make tofu skin roll or ubarrow also known as fu pigeon you may have seen this dish at dim sum restaurant served in a bamboo steamer that may have a different feeling or serve as a cold appetizer let's get started saute mushrooms over low medium heat until aromatic it's important to cook mushrooms this way to release its umami flavor then continue to saute the carrot and celery until the carrots start to soften a little i added cabbage to the mix for the crunch but you can use other vegetables of your choice such as purple cabbage or hikama [Music] season with some soy sauce and a small pinch of sugar which is optional some white pepper and a drizzle of sesame oil you can see i didn't add any other broth or liquid as i wanted to keep it moist and crunchy for the filling then transfer to a clean plate and let it cool place tofu skin on a clean surface and connect two half moon shaped skin to make a larger circle and seal with some flower paste now if you have the full round shaped skin you can actually skip this step i added another layer in the middle to secure the connection and use the flower paste to connect all the openings place the filling on the side closer to you and try to mount them into a pile like this then bring the bottom layer and fold it over apply some pressure by pulling the filling with the tofu skin towards you to keep them intact bring both sides to the middle and spread the glue paste over to secure the seal and then slowly roll it into a lock if the tofu skin appears to be too dry you can always wipe them down with a damp paper towel to soften it before use this type of tofu skin or yuba is available at many asian grocery stores at the freezer [Music] section [Music] now place this lock onto another tofu skin and repeat the same step remember to apply the glue paste to seal all the openings poke a few holes using a cake tester or fork so it won't puff up too much when we fry it later these holes also help absorb the sauce better when we braise it [Music] heat up the oil in a 10 inch non-stick pan carefully place in the tofu skin roll and fry both sides until golden brown [Music] [Music] to make the braised mixture simply saute ginger until aromatic with oil and add in the water or vegetable stock then season it with soy sauce and sugar to create a more flavorful braise i then added some cinnamon stick and star anise bring the mixture to a rolling boil carefully place in the tofu skin roll and cook each side for about 5 minutes cook until the outer layer starts to wrinkle and turn softer like this then transfer the tofu skin roll to a chopping board and let it cool you can refrigerate it and serve as a cold appetizer for the sauce simply add some cornstarch slurry to the broth we just used to thicken it slice the tofu skin roll into your desired thickness i slice mine into about 1 inch thick [Music] then transfer them to a serving platter and you can serve ss or with the sauce you just made there you have it tofu skin roll of fu patreon is done i hope you give this delicious tofu skin roll a try today if you like this video be sure to subscribe to my channel thanks for watching and have a beautiful day
