acid is all about balancing flavor it's about balancing with fat balancing with salt and really helping flavors pop i came up with this solid axis the way i thought about it was like an x y axis where one axis goes from light to creamy and the other axis goes from tender to crunchy so you never really want to combine the creamiest dressings with the most tender lettuces because they'll get overwhelmed we're gonna make miso mustard dressing which is one of the creamier dressings the wonderful gift of mustard is that it's a great emulsifier it encourages emulsions to happen and to stick and those are creamy delicious [Music] and things can just shake it all up and see where we are the best way to know if it's going to work on your salad is to use some of the ingredient that you're going to do so we're going to mix this with some cabbage and carrots later so let's taste it with our carrots [Music] makes you do a dance pretty good sign [Music] the first step really to almost any vinaigrette that has shallots in it is to macerate your shallots and macerating is just a fancy word for soaking in acid really what it does is it takes away the dragon breast and that just hangs out the shallots have been sitting for 15 minutes they don't really smell as fiery [Music] herbs are so delicate they will get overwhelmed by too much of anything so this is the perfect thing to just dress with a little bit of olive oil and lemon one of the things that breaks my heart is mixing salad with tongs please just get your hands in there there's no other way to feel that everything is dressed evenly it's so so good and refreshing and fresh it just feels like spring in your mouth
