three of my kids got covid and this week I am on Deadline I have two finals and praise the Lord it is spring break because we need a little bit of breathing room so the first thing that I'm going to do today and this is what I do when I feel overwhelmed put on a trashy podcast and declutter some visual spaces another thing I do is make a schedule for the day so when we are particularly busy there's a lot going on a lot of appointments a lot of deadlines I make a schedule unique for each day and I do that by listing out every single thing that I need to get done and then looking at what you know it's the whole glass ball thing what is going to shatter when it hits the floor and what's not and I really just focus on the shatter things and so I prioritize my day prioritize my list and allocate time slots to each activity so estimate how much time each task will take and then allocate a certain number of hours being realistic about how long they take and then breaking those tasks into smaller steps using the whole time block method which I will link to in the video description and delegating what's not going to get done and just being okay just being okay with the things that are going to stay on the floor for a little while and then think about some things that I can do that are going to make life easier and so right now that is just quick simple meal ideas so I'm going to run to Aldi do some meal prepping do my shopping and prep some of those foods for the rest of the week and into next week I'm going to prep some sheet pan fajitas to put in the freezer so I just cut up my bell pepper red bell pepper yellow bell pepper green whatever you can find and an onion um a couple of boneless skinless chicken breasts and then you can just put them in a Ziploc bag with some olive oil and your favorite seasoning I found this recipe on Pinterest and I thought we would try it out it is a banana strawberry oatmeal bar and I had some bananas that I needed to use up so why not make it so I mashed two bananas with my little helper I cut up six strawberries and put them in the bottom of a Pyrex dish I sprayed this by the way the Pam and then I added in two cups of oats and 2 tablespoons of peanut butter and 1/4 cup of honey and then you stir everything together this is all you need you don't need an egg you don't need anything else stir it together and then I baked it at 350 for about 20 minutes and they turned out really really well I put them in the freezer and we will have them next week when we need them along with just a really quick blueberry muffin [Music] bread another thing that I like to think about is can I recreate this at home my my daughter loves Little Bites they get expensive and the ingredients aren't great so I try to make them at home and it takes me less than 10 minutes to whip up a big batch somebody randomly gave me a bag of Gayla apples last week and they were super mealy and so I thought I would just prep some applesauce with them and my kids actually just ended up eating this as a snack hot it was delicious I'm a bad YouTuber so I don't have an end product for you this is why I've never made a career off of YouTube guys anyway I just chopped up the apples there were five or six of them and then I added a little bit of orange juice from some oranges I had lying around a quart cup of water I put them in my little crock pot all day and then just mashed them with a fork simple and delicious what do you have in your house today that you can use up make a plan for it stick it in the freezer make some applesauce make some banana bread what can you do so that you're not wasting groceries because the most expensive food that you buy say it with me is the food that you throw away this is a question that I have regularly started to ask myself and it is what can I do to day to help future me and future me can be this afternoon next week next month next year and it can be a simple as making breakfasts for next week and sticking them in the freezer so that way when my kids get up they have something to eat and I don't have to think about it it may mean how can I use a produce before it goes bad it can mean doing something as simple as putting out the salad bowl for dinner later or the pot that I'm going to cook pasta in or it can be big things like putting extra into savings investing um making the time to work out and take care of myself what can I do today to make life easier for me [Music] [Applause] [Music] tomorrow [Music] [Applause] [Music] sometimes we just have to give ourselves a massive amount of Grace and give other people a massive amount of grace too because we know what we're dealing with but we don't know the heavy things that other people are carrying carrying around in their backpacks and something that I have to remind myself of is you know if I didn't quite hit the mark at least I tried at at least I tried to meet those goals I did the work I put in the effort I put in the time and I got somewhere it may not be the place that I thought I would end up at the end of the day but I got somewhere because forward movement is still movement okay I'm just going to tack this on to the end of this video I know it's random but I wanted to show you how I roast frozen vegetables and they turn out perfect every single time and frozen vegetables are so much more costeffective if we're eating them raw we get fresh but for the most part if I'm cooking them it's frozen and so this is just I believe they call this a Normandy blend it's broccoli cauliflower and then yellow and orange carrots and I spread them out on a pan the key is you have to spread them far apart because there is moisture and you want that moisture to evaporate in the oven so I'm using two I guess these are 8 oz bags 12 oz bags and I'm going to drizzle them with olive oil and some Danos seasoning you can use any seasoning you like but Danos is very flavorful and low sodium and then you're going to cook it on a high heat for about 20 minutes I sauteed some chicken breast and made some rice and then put it all in a bowl together but thank you for hanging out with me I would love to know what are
