Hello and welcome to my channel! 1kg beef liver. Be sure to remove the skin, it's not difficult. Cut out the gears. Cut the liver to the desired thickness. Any liver will be tender with this recipe. Add 2 tablespoons of baking soda. Mix well. Leave for 40-60 minutes. 1 onion. 50g butter. Fry onions until soft. 2 green peppers. 1-2 red peppers. Add the peppers and fry for 3-5 minutes. 2 tomatoes. Peel. 1 tablespoon tomato paste. Fry for 1-2 minutes. Add tomatoes. 1 ½ teaspoons salt. Fry covered for 5 minutes over medium heat. 1 cup (180g) bulgur wheat. 250ml of water. Bring to the boil and cook covered on a low flame. Until the liquid has evaporated. Rinse the liver well from baking soda. Pat dry with a paper towel. 3 tablespoons cornmeal (or wheat flour). 1 ½ teaspoons salt. 1 teaspoon Herbes de Provence. Black pepper. 400g onion. Heat a pan with oil for frying. Fry the onions over medium heat until soft. Salt. Black pepper. Add oil to fry. Coat the liver in flour. Fry on one side over medium heat for 2-3 minutes. Then turn around. Fry for another 2-3 minutes. If the pieces of liver are thick, pierce a piece of liver with a fork. If the juice that comes out is not clear, turn and cook a few minutes longer. Dip the liver in water so the flour doesn't burn while frying. Dip the liver first in flour and then in water. Just don't let it drip onto the pan. I use a paper napkin.
