let's make an amazing pappardelle with meat sauce here's the recipe first in your pan go ahead and start with a little bit of olive oil we're going to use this olive oil to go ahead and cook our vegetables before you put the meat in so what we're gonna do is get that olive oil get the pan heated and to about a medium and then go ahead and put 3/4 cups of a diced onion in there and about half a cup of diced bell pepper and what we're gonna go ahead and do is just get these sweated usually takes around maybe two minutes maybe even three minutes to get them sweated and just move them around so they don't just burn at the bottom of the pan they're gonna get covered in oil as well so once they get all sweated they're gonna look about like this once that is done the next step we're gonna go ahead and do is we're gonna go ahead and add one pound of ground Italian sausage so go to your local meat market or wherever you can get Italian sausage and get a pound of ground Italian sausage go ahead an get that in and mince it really well while it's in the pan you want to mince it really well because granite alliant sausage it's a little harder than ground beef to mince then take a half a pound of ground beef after you've minced that Italian sausage a bit and get that all mixed in there because that's a lot easier to miss so you want to get it make sure that before you even go any further on the next step of this that you got this all minced together just crush it all up get the meat the beef and the Italian sausage all minced so it's not in big giant chunks it's actually in smaller pieces will smaller just part of the whole sauce so we're actually having a meat sauce not a little meatball sauce with a little bit of beef here a little bit of Italian sausage its uniform so once you've got that done you see it's getting closer to being finished with cooking you see the pan is not extremely hot but it's hard enough to cook the meat and here's what it looks like here when it's finished cooking so now we've got our meat minced and finished cooking for the most part we have some bigger chunks in there you can break them down if you want but this is what everything looks like right here all right so now that we've got that done the next step here is to go ahead and one cool add 1/4 cup of a grated carrot so we're gonna add that carrot there and we're just gonna go ahead and mix it all in adds a nice little sweetness and offsets the acidity in that sauce there so get that carrot mixed in really not too much to that and then we're gonna have two cloves of garlic at this time not earlier because we never want we don't want to burn the garlic so we had our 2 cloves of minced garlic there and then 1 teaspoon of salt or you can salt to your liking but I had about a teaspoon of salt here and then go ahead and get that all mixed together and once that's all mixed together there here's what your mixture is going to look like your meat now the next thing we're going to go ahead and do is have one bottle of your favorite pasta sauce it's a very easy recipe so find your favorite pasta sauce or a good-quality one and add that to the mixture get that all mixed around together nicely top to bottom and then once you've got that taken care of you're gonna go ahead and add a half of a cup of water and once you've added the water you're gonna go ahead and add some 14.5 ounce can of beef stock or beef broth the reason for this is because we're gonna create a reduction we're gonna bring it to a boil and then we're gonna bring it all down all those flavors need time to come together if you just serve it now all the flavors aren't together you have all these individuated flavors and it's not one beautiful meat sauce that's in harmony so what we're gonna do is we're gonna get that all mixed together like it is now and then we're gonna go ahead and add one teaspoon of Italian seasoning and once we've got that put in there we'll go ahead get that mixed together really really easy recipe and that's what it looks like right now it's really watery so we're gonna bring it to a simmer and then eventually it's going to come up to a highboy what we're really trying to do is get to where a boil so we can bring it down to a simmer so that's what it looks like now its watery but it's gonna thicken nicely so get it covered first get it to that this to that that boil there like you see it may even go a little higher at times how you're gonna offset anything burning is you're gonna keep mixing it that's how you you got a ten pasta sauce you don't just watch it and then come back or put it on there and come back an hour later you actually have to tend it so what we're doing is we're going to tend it for I'd say maybe the next 30 minutes you know just keep stirring it on this boil until it reduces down it could even be an hour it just really depends as you can see there was some oil on the top of the sauce there that oil is from all the meat and a little bit of the olive oil we've added if you like the oil hey keep it sometimes people like it it's a it makes the pasta and the sauce and everything go nicely together or do what I'm doing here and drain off about three-quarters of it or you can drain off all of it if you'd like it's it's completely up to you and then once you get that oil drained off there go ahead and get your sauce just keep mixing your sauce around there and you'll see it's starting to get thicker the key is the mixing remember but also at the end there's another key to this as well then you want to add about a third of a cup of Parmesan cheese after about cooking it for maybe half an hour 45 minutes after it's gotten a lot thicker and that Parmesan cheese just gonna add a nice punch to it adds a really beautiful flavor as well so then it's gonna start looking like that start getting nice and thick all right cook it a little longer till it gets thicker because you want that sauce to be nice and thick all right excellent so we got our sauce nice and thick here now look at those little lava bubbles there but it's not done yet you can serve it now if you'd like but the thing about pasta sauce is time is the essence it makes it delicious that's what makes it special so we got some fixed sauce here what we're gonna go ahead and do now is uh we can either take it off now or let it cook a little longer here we go this is just a tad longer what I'm gonna do now is now that it's pretty much to the point to where it can be served I'm gonna cover it and I'm gonna put it in the fridge for about four hours you can serve it if you'd like but after four hours you guys know what it looks like you need to do overnight four hours doesn't matter but look at that see now it's really thick you have your thick sauce and the free stuff something to it it makes it so all those flavors come together nicely gives some time to marinate so it's a it'll add gosh it'll bring up the flavor profile and it got to three times probably even more so there's your sauce and what I got here is a bag of pappardelle what you want to do is go to a place that sells quality pasta looking the color of that pasta it's beautiful right it's gonna make all the difference in the world if you really want to impress people we're just giving yourself with a good good pasta put some money into it believe me it is all worth it so the next thing we're gonna go ahead and do is that get our water together fill up your pan about set say maybe two-thirds full I use filtered water don't use tap water filtered water is always better why ruin it with tap water I'll go ahead and add some salt I like to add about a teaspoon of salt but you can add salt to your liking to salt that pasta once you've went ahead and done that the next thing you want to do is go ahead and bring it to a boil and then add your pasta now when you're cooking your pasta you know the rule you want to get it to al dente so it's hard to the tooth you know so when you bite it you can just feel a little bit of tightened texture to it otherwise just gonna be a sloppy mess and also we're gonna cook it here a second time coming up and you're gonna see what we're gonna pan cook it with the pasta sauce so you're gonna see how it's gonna cook a little more so you don't want to have it overcooked so remove it the pasta when it's done and go ahead and put it into a pan or some a bowl and then in another pan what you're gonna go ahead and do is add your sauce to it you can be the cold sauce it doesn't matter but you can add it to the hot pan here and then we're gonna get the pan to the point to where it's actually getting the sauce that reconstituted you know back to its nice texture it's a little bit of a wetter texture then we add our pasta and we're gonna go and just add pasta to how much we think we need you can always the beauty of this is you can always add more sauce or more pasta to compensate and then we go ahead and just flip it around there get that pasta covered with that sauce and then if as you can see see now I'm going okay maybe I could use a little more of this maybe I could use a little more that so maybe I'll add a little bit more sauce or maybe you'll add a little bit more pasta and you just gauge it however you want it to be if you want it to be a little more saucy hey gray if you want if you need a little more pasta great it's completely up to you go ahead and flip it around or just move it around Tong's and then just mix it around and what you got there is look at that beautiful beautiful sauce beautiful meat sauce a pappardelle pasta it's beautiful comes together next is you just want to go ahead and take your tongs and get it into your bowl just get it nicely into your bowl like this get it ready to serve however you want to present it what you're gonna do is you're gonna have meat at the bottom of that pan there so you can always just scoop a little that meat from the bottom of the pan on top of it here and there you go beautiful beautiful pasta so easy to make so delicious I mean this is something you go to a restaurant in order and say I want that so thank you so
