2 cups (240g) Plain flour. 2/3 cup (60g) Unsweetened cocoa powder. 1 tsp Baking powder. 1 tsp Baking soda. 1/4 tsp Salt. Mix well and set aside. 1 cup (240g) Milk at room temperature. 1 Tbsp (15g) Vinegar or lemon juice. Stir well and let it sit for about 5 minutes. You can use buttermilk instead of this mixture if preferred. 1/2 cup (113g) Unsalted butter at room temperature. 1 cup (200g) Sugar. Beat on medium speed for about 5 minutes until creamy. 1 large egg at room temperature. 1 tsp Vanilla extract. Mix until fully incorporated. Add the dry ingredients in three additions, alternating with the milk mixture. Mix at low speed (avoid overmixing). The batter should be thick and hold its shape. You can add an extra tablespoon or two of flour if needed. Piping bag fitted with a 1.3cm round tip - Pipe 6.5cm sticks of batter onto baking sheets lined with parchment paper. Leave plenty of space between each batter as they will expand during baking. Dip a spoon into water and smooth out any imperfections on the batter using the back of the spoon. Preheated oven: 180°C. Bake for about 12 to 15 minutes. Allow to cool completely before removing them from the parchment paper. 1 + 2/3 cup (250g) White chocolate. 1/3 cup (80g) Cream - about 35% milk fat. Microwave in 30-second intervals, stirring until smooth. 3 Tbsp (42g) Unsalted butter, chopped into small pieces. The heat from the chocolate will melt the butter.. Place in the fridge, stirring occasionally every 10-15 minutes until it reaches a thicker consistency. Refrigerate for about 1 hour to firm up. About 450g of Semi-sweet or milk chocolate. Place the cake on a fork and use a spoon to pour the melted chocolate over the cake. Tap the fork on the side of the bowl to remove excess chocolate, and place the cake on a baking sheet lined with parchment paper. About 70g of White chocolate. Store the cakes in an airtight container at room temperature or in the refrigerator if the weather is warm. Chocolate-covered mini cakes filled with white chocolate ganache.
