Hello everyone and welcome to Cocina con Carmen! Today we are going to make baked vegetables, which are super easy to make and very delicious. We can use them to accompany meat and fish, or as a starter. Since prepared this way they are super delicious. And if we don't have an oven, we could also make them in an air fryer. So if you want to make them, I leave you the ingredients below in the description and at the end of the video. And we start! In my case I am going to use 1 zucchini, 1 aubergine, 1 red pepper and 1 sweet potato. Although you can really use the vegetables that you like the most. We will start by cutting the ends of the zucchini, then cut them in half... Cut each half into 3 parts, and each part into small sticks. Finally, we add a little salt to each cane, and put them in a container while we continue with the recipe. Next, we will do the same with the eggplant. So we cut off the ends... We cut it in half. We divided each half into 3, then into sticks. And finally, we add a little salt, and reserve it. Now it is the turn of the sweet potato, although you can also use 1 potato. We peel it and cut the ends... we divide it into three parts... we cut them into sticks, we add a little salt and we reserve it. In the case of the pepper, we cut the ends... We divided it into 3, we removed this part, we cut it into sticks, we added a little salt... and here we already have all the vegetables cut. Now we are going to prepare the seasonings. So in a container we are going to put 125 grams of breadcrumbs, 3 tablespoons of grated cheese, which in my case is Grana Padano, 1/4 teaspoon of ground pepper, 1/2 teaspoon of garlic powder, and 2 tablespoons of parsley. chopped. Mix everything well... And you would be ready. And to season our vegetables, first we put them drained in a container, and we add a little extra virgin olive oil. We mix them... We pass them through the condiment mixture with our hands, and we place them on a baking tray, with baking paper. Although as I told you at the beginning, it can also be done in an air fryer. We will do exactly the same with the rest of the vegetables, until they are all seasoned and placed on the tray. Once prepared they go to the oven. We place the tray at medium height, and we will let the vegetables cook, in the oven already pre-heated with heat from above and below at 220 degrees Celsius or 430 degrees Fahrenheit for about 30 minutes, or when you see that they are ready. After time, carefully we are going to put them on a plate to serve them. And as you can see, our baked vegetables have been great.
