Had the pleasure of eating here when I was in Sicily a month or so ago.
It is as amazing as it looks! We waited in a big line for close to an hour but it was so entertaining watching him have fun creating the sandwiches that it flew by. You can go inside and order a sandwich custom made, or you can queue up outside and he makes you whatever he feels like. From time to time he gives out snacks to those waiting (had some of the herb/oil/garlic cheese that he gave out as well as a slice of mortadella that he threw at me!)
The sandwich was easily the best I've had in my life, me and my girlfriend split one (PLENTY for two as they are HUGE) and it was โฌ5 total! As someone mentioned in the comments above it is called Caseificio Borderi in Siracusa (I think it is located on Ortigia Island but I cant quite remember. I would highly reccomend!
He used the meat to contain other stuff that would have otherwise just fallen out....the man is a genius. He just completely changed my sandwich game.

I'm in heaven...Italian food is by far my favorite; simple, rustic, delicious. I freakin loved the idea of puting the lime rind in the sandwhich for that extra zesty kick!
