Trinidad's - chicken is one of the most delicious chicken recipes you ever try but getting the color and the flavor just right is quite a challenge today I'll show you how first let me share some meal ideas with you it's a Sunday staple served with macaroni pie and delicious callaloo great for a quick weeknight dinner with just plain jasmine rice if you have time to make some stewed red beans the combination is quite nice and if you're as lucky as I am your mother-in-law will serve you with dal curry roti peas dal and curry duck this here is mummys favorite combination with mashed potatoes and chow mein this was a typical Sunday luncheon Ava's child along with some pepper shrimps for this recipe you can use a whole chicken let's cut up our legs and thighs cut up or wings next we will wash the chicken with the juice of a lime a lemon or vinegar and water rubbing to remove any slime you will also remove any excess skin or fat or that stuff that's inside the backbone of the chicken then we will wash it a second time with plain water and we will drain it well next we will season the chicken with chopped scallion sliced onion chopped or minced kalanchoe or support Montagna minced garlic chopped hot peppers and pimento peppers salt ginger if you using tomatoes of using and black pepper you also need some ketchup and a little bit of soy sauce but that's totally optional my sister-in-law is going to teach us to make her version of stewed chicken which is one of the most delicious sue chicken recipes I've ever tasted give it a good stir to combine and marinate it overnight or up to a couple of days covered in the refrigerator [Applause] in a fairly large pot over medium heat add oil when the oil is hot but not smoking add sugar and allow it to bubble froth expand and darken do not allow it to smoke and get black or you will have to start over this is the same technique I use on the stood up to sale video the pilau video as well as the stewed lamb on the blog because we're using an outdoor stove over very high heat there is a lot of Java involved let me show you how I do it on the stove using a heavy-bottomed pot over medium heat you're going to add your brown sugar and allow it to bubble dark and froth and expand as I've mentioned in my other videos it's going to take a little while so be patient and do not step away from your pot because it can burn easily at this point you can add the ketchup and soy sauce if you're using and then add the chicken and stir to combine go ahead and add your seasoning salt and black pepper if you didn't do this in advance keep stirring to coat evenly with the homemade Brown in you've just made you have so much to be proud of right now cover and cook for about 15 to 20 minutes allowing the chicken to release its juices stir in every five to ten minutes and cook until the liquid has evaporated I have found that the chicken I find here in New York releases much more liquid than the chicken use in Trinidad means of the chicken now that I use will require much less liquid or water after the initial water has evaporated once that initial liquid has evaporated we will go ahead and add more liquid and the amount of liquid we use will depend on how much longer we need to cook that chicken since this chicken did not release a lot of natural juices we will add sufficient amount of water to cover and to cook it long enough cover and cook an additional 10 to 15 minutes stir in every 5 to 7 minutes and cook until the chicken is fully cooked tender but not shredding and the sauce has thickened to your desired consistency tasting add more salt and pepper if required the amount of sauce left at the end of cooking is also a matter of personal preference if you wish to have more sauce then you just need to add a little more salt to get the desired taste if you found this video helpful and entertaining hit like and share with your friends if you would like to see more videos like this hit the subscribe button and let us know below what you love to eat with just you chicken
