to barbecuepitboys.com. Today' we're cooking
up some mashed potatoes with steak and bourbon gravy. It's real easy. All right, first thing we're gonna do is we're gonna boil up
some taters, all right. We've got about maybe 15 pounds
of potatoes going on there. You know all about boiling potatoes right? So we want to get this started, oh yeah. Now we're gonna be serving up some steaks. This is all about the
steaks, taters and gravy. Now of course, we got some veges to chop and cook, and prepare. Here we've got three bulbs of garlic. You know how to make roasted garlic right? Just slice off the top
of the bulb like that, and you dredge it with
some good olive oil. We need these roasted
garlic for the taters. Man, you wanna take this step and do it. Oh, it tastes real good. Those mashed taters, all right. Now, we'll put it in direct on the grill, and we're just gonna cook. Now our recipes are gonna be calling for some sliced onion and some garlic. You know all about cutting veges right? We don't have to show you this. Now, let's start preparing the gravy. Got one of those roasting
pans right there. What we're gonna do to
start off this gravy is we got three or four
slices of bacon, all right. We wanna add some bacon to this gravy, give it a nice smoky, salty
taste of that bacon in there. You wanna take the time to do this. Man, here I've got some good cooking oil. I'm gonna add it to the pan first and this is so the bacon
doesn't stick to the pan. Go right in. We're just gonna partially cook. It takes a few minutes. Simple enough right? Now for this gravy, we need
one stick of butter, all right. Well melt it down. Now if you've never had mashed potatoes, steak and bourbon gravy,
definitely gonna check this out. It's so good eating at the pit. Now here I've got some
diced onions, all right. Just about, maybe a half a cup, 3/4 cup. We're gonna throw in there
and we're gonna cook it down. Look at that. I also throwing in some mushrooms. You got about half a pound
of mushrooms going in there. Look at that, add some salt. Some fresh ground black peppercorn. Smells good. Here's the magic. We got some bourbon. You're gonna need to add
about half a cup of bourbon. Use your favorite bourbon, oh yeah. Yes, it looks good. Now we're gonna make a roux
out of this, all right. You know how to make that right? You just add some flour, and
just cook it just a little bit. Yeah, become like a paste. Oh yeah. This is gonna help thicken your gravy too. Now here I'm adding about five quartz of beef stock, all right. Use your favorite stock. We need a lot of gravy for this recipe. We're just gonna let
it simmer a little bit. Now we've got some fresh pit corn going on the grill back there. We're gonna be cooking
that for about an hour. We also have a piece
of sirloin steak here. This is about the tastiest
piece of beef you can get, nice piece of sirloin. What we're gonna do with this. We're gonna sear it on the grill 'cause we're gonna be
adding this to the gravy. Oh man, got a nice simmer
going on there, yeah. Just throw that steak on the
grill right over the coals. You wanna cook it about medium rare. Now checking on those potatoes. They're done perfect, oh yeah. The steak ready to come off the grill. Like I said, we got it medium rare. What we're gonna do here
is we're gonna chop up this steak into small pieces. Dice it up good. All right, steak has been chopped. Now what makes this not your mama's gravy is it's gonna be full of chopped steak. Oh yeah. Lord have mercy, oh yeah. Now we're gonna simmer this. Oh man, maybe about 15, 20 minutes. All right, now we're gonna
make some steak sauce. You gotta have good steak
sauce for your steaks right? So to get started, we're gonna
throw one stick of butter in this black iron pan to melt. Here Big is throwing in some olive oil. Into that, we're adding about
one teaspoon of minced garlic. Never enough garlic. Then we'll season it up with a bit of salt and some fresh black peppercorn. Then we're gonna melt it down. All right, now magic to this
sauce is gonna be apple beer. All right, now you can
use what beer you want but we're making an apple
beer steak sauce here so you throw in one bottle. Man. Now we got about one Vidalia
onion here, nice sweet onion, and we're gonna poach these
onion rings in there for a bit. Oh yeah, baby. Now, our steak sauce is
gonna have some mushrooms. We're gonna be putting about a pound of sliced mushrooms in there. Look at that, cooked down a bit. Now we're gonna thicken it. You can use flour and water. Here we've got some corn starch and water. You know how to thicken your
gravy and your sauces right? Just add a little bit, keep
stirring, heating it up, and it will starting to thicken. Simple enough. Corns coming along fine. Now it's time to make
some mashed potatoes. You want to drain off that water. Man, we're having some
steak and mashed potatoes. All right, we're gonna
mash these down here. Of course these aren't
ordinary mashed potatoes. Heavy's throwing in those
three bulbs of roasted garlic. We're throwing in a stick of butter. Here we've got some sour cream. Of course some more salt,
fresh ground black peppercorn. Touch it with a little bit of milk. You can make it as creamy
or sticky as you want. Man, you're hungry or what? Now last but not least, we've got a pound of
shredded cheese going in, and use your favorite cheese. These taters are done. - What's your day? - [Narrator] Now one last thing. Who wants a garlic bread? All right, so we're gonna
make up a spread here, and to start out with three
more sticks of butter. Yeah, it's like we're doing
a butter commercial here now. That we were not. Yeap, this spread needs
three sticks of butter. Because it's garlic bread, you got one tablespoon of minced garlic. Now this is a garlic butter spread you definitely gotta check out. Now to this spread, we're
putting in one tablespoon of Worcestershire sauce. You're gonna need one tablespoon
of your favorite hot sauce. Here we'll add a teaspoon of black pepper. Man, this ain't regular
old garlic bread now. A little pinch of salt. Mix it up good. Now on your favorite load of bread, we're gonna be spreading it on thick. Oh yeah. You know all about making
garlic bread right? Now we'll top off each loaf with some grated Parmesan cheese. We'll throw 'em on the grill, and toast 'em to the way you like 'em. All right, nothing left to do now. Cook up some steaks. Here we got some Porterhouse going on. Cook 'em the way you like. Oh yeah. The steaks are done. I say it's time to eat. Oh yeah. Put some steak and bourbon
