[Music] well here we are back at day two for another really good recipe this is the second day for our thanksgiving five day thanksgiving recipe week and each day is going to be a different recipe to help people that haven't ever maybe put a thanksgiving meal on the table just to give them either an idea or to help them out to give them some some good recipes and not to spend a lot of money because you can put a good meal thanksgiving meal on the table without spending a whole lot of money to do it now yesterday the video was a slow cooker turkey breast and it's just a really good turkey breast delicious and it's a good way to cook it easy don't have to worry about it and today is going to be the cornbread dressing to go with it so the thing about cornbread dressing it is so easy to put together and then you just stick it in the oven what takes the longest is just making your cornbread up just like you would any other time and then you can either boil up a good old fat hen and get the meat off that and use that broth for your dressing or you can use a [Music] chicken [Music] so [Music] turkey or something that you want to really wool up and get the meat off of so you can have turkey dressing instead of chicken and dressing but we've always used a big old hen but i can tell you right now that hens are far in between right now find at stores we do have fresh chickens so that's what i go with um and hens are pretty expensive too so i say just use a good especially dark meat you don't even have to buy you can use a whole chicken you can just use chicken thighs you can use if you got a bunch of maybe drumsticks in the chicken legs in the freezer you need to do something boil them up and use them for in your chicken and dressing they'll make really good broth but anyways that's all you got to do is just get your broth ready your chicken ready and then um getting your dressing together is just really easy peasy just easy to cook so we're gonna get started on that and first thing we're going to do is we're going to be making our cornbread and getting it in the oven and then we're going to put our dressing together so y'all hang around and let's make some good good old cornbread dressing okay we're going to start mixing up our cornbread for our cornbread dressing and this is just my everyday go-to cornbread recipe very easy very simple i've got a cup and a half of cornmeal and i've got a cup of flour all purpose flour [Music] i'm going to put i like to get a good rise on my cornbread so i'm gonna put three tablespoons of baking powder i'm gonna put a teaspoon of salt we're just going to stir the dry ingredients up a little bit now you can put you just a little bit of sugar in there but this is not a necessity so i'm going to put just about a good teaspoon and that's about it but that's not something you have to have in there now if you just want to use this recipe for a good pan of cornbread and you like sweet cornbread you go ahead and put you a tablespoon or so of sugar in there i've got a fourth a cup of oil you can use vegetable oil canola oil whatever kind of oil you use now i've got four tablespoons of melted butter i got one egg now you need and i always tell y'all the liquid always depends but i've got a cup and a half of buttermilk here and i had to make some buttermilk because i didn't have any on hand so i just took a cup and a half of regular milk and put me about a a good teaspoon of white vinegar in there so i'm not gonna pour all of it in there at once we're just gonna stir this up good you can always add two but you can never take away so we're gonna add a little bit more buttermilk and i've got my cast iron skillet it's a pretty sure it's a 10 inch it may be a 12 i can't remember i've got it in the oven my oven is on 425 and i'm heating i put about a couple tablespoons of oil in my you can use bacon grease you can use large you can use butter put it in your skillet put it in the oven and let your skillet get good and hot i'm gonna put just a little bit more milk till it gets to the consistency that i like i don't want it too thick because you'll end up with a dense cornbread but you don't want it thin either so that looks pretty good so there is your cornbread for your dressing it's about that easy so now i want to get my skillet out that it it's good and heated up and we're gonna get our cornbread batter in there i got this whisk at walmart the other day i don't go on walmart very much but i had to go in there for some reason and um of course i always go where the utensils and the pots and pans are so i just had to look but they had this on the side it's got a scraper so you strike the side of your bow with it so i thought that was pretty neat it wasn't expensive pretty good deal our skillet is good and hot just got it out of the oven so we're just going to pour our cornbread batter in here you can't really see my bow i'm kind of lopsided a little bit and you see how it's already bubbling and cooking that cornbread that means you're going to get a good scald on the bottom of that cornbread and be good it'll be good and crunchy of course we're making dressing out of this but if you were making it to eat that gets you a good crunchy bottom on it okay i'm going to get this in the oven now when i if you have a a big um a bunch company coming over you're going to want to double this recipe this right here is going to feed it's going to feed 10 people but if they're going to go back for seconds and you've got a few more in that you you probably want to double this recipe that we're fixing to make so let's get this in the oven real quick and get it cooked cornbread good getting done 4 25 about 20 minutes makes me want to just get a big hunk of it slather some butter on it but i can i gotta save it for dressing but boy it smells good first thing we want to do is we want to get a few things ready for our dressing so we're gonna get a stick of butter a whole stick of butter that's what's going to make that dressing so good we're going to let this melt i've got a cup of celery and about a little over a cup of onions cut it our butter's melting so we're going to add our celery and our onion to our stick of butter and we're going to let this cook long enough for your onions to get a little bit translucent and your celery to get you know soften up a little bit so i'm going to stir this around let it get coated in that butter and while this cooking i'm going to get the rest of my stuff together [Music] you want to have your a pretty good size mixing bowl i'm going to let my cornbread cool off because you can't really handle it right now it's too hot i went to the freezer and usually what i do is um if i have any leftover bread still bread or biscuits which we hardly ever have biscuits left over but sometimes we do i'll stick them in the freezer just for my cornbread dressing but what i got here are some uh buns they're brioche buns that need to be used so they were in the freezer so i'm going to use them in my dressing and you need a whole sleeve of saltine crackers so i'm going to let this cool so i can handle it pretty good here in a minute and i'm going to finish my onion and my celery okay my cornbread cooled off really good so all i did was go in there and just crumble it up with my hands real good now i'm going to take my leftover bread or biscuits toast whatever you got and i'm just going to crumble that up in there now i'm going to give you a little tip and this is something we've done in the lunchroom too you can make your cornbread up say a week ahead you can even get it crumbled up good put your leftover biscuits or bread or whatever and your crackers in there put it in a container or a food grade bag of some time kind and put it in your freezer or if you just want to get it ready two days ahead of time you can put it in your refrigerator and you've got that step done and that's just one more thing that you don't have to worry about because i tell you once you get all this done it's just it's just so easy to get together and get it in the oven for some wonderful cornbread dressing so i'm going to finish breaking this bread up my celery and onions are just about done then we're going to get our sleeve of crackers put in here and then we'll start mixing this up i've got to get my seven cups six to seven cups of broth and put you a can of cream of chicken soup in there if you want to you don't have to i use my cream of something soup mix that i use and that's what i put in mine but just put you a can of cream of chicken soup in there and that's gonna it just gives that dressing a really good flavor too so let me go check on my celery and onions and we'll get the rest of it in here okay we are ready to get this stirred up i crumbled up my sleeve of saltine crackers i'm going to get them in the bowl if you have to find some big faces you can just crumble them up a little bit more i've got my broth with my cream of my cream of chicken soap in it so i'm gonna go ahead and pour that in there i'm not gonna pour all of it all at once i've got four beaten eggs and i need to get my celery and onions in here and remember we cooked this in a whole stick of butter so that butter is going to be going in that dressing too so your celery your onions and your stick of butter [Music] i think i'm gonna give this a good stir before i put my sage and stuff in it so make sure you get it all that moist and real good everything stirred real good so i can tell that i need some more my my broth because i want this to be really moist so that's looking good now we're just going to add our seasoning we're going to put let's see i'm going to put about a tablespoon of sage in there and this right here is uh poultry seasoning there's one teaspoon two teaspoons i'm gonna put a teaspoon or about a half a teaspoon of pepper and it depends on how salty your broth is you need to be careful about saltiness so i'm just gonna put just a little bit of salt in there stir that up now some people like a lot of sage in their dressing and if you do you can put you a little bit more i don't i just want that little hint of sage and that's all i want in my dressing but that's just just put that in to your taste and that's just how simple that is put that together so now we're going to get it in our baking dish and i've got a a deep-sided 9x13 bacon dish i'm gonna put this in sometimes if it seems like it's gonna be over full i'll make my just a little bitty dish too and maybe take that little dish of dressing to maybe somebody that's elderly or something that or somebody that may want some chicken and dressing now also don't forget that you've got your chicken or the meat off a hen or off a turkey whatever and you're gonna add that to your dressing you can save you a handful to put on top of your dressing once you get it in the pan if you want to or you can just put it all in there until this makes a pretty good pan of dressing just get that stirred up good there's my baking dish and i'm going to get as much in here as i can and then i may make a little bitty pan to give to somebody let's see how that works i got my oven set on 350. well it's preheating it right now we're not going to cover this we'll just stick it in the oven 350 and i'll put the timer for about 30 minutes and then i'll check it so my the rest of my dressing like i said i'll put it in a separate pan maybe to give away or share i'm going to take the rest of my chicken and i'm just going to kind of put it on top of the dressing dress it up just a little bit and then we're going to get this in the oven and we'll check in about 30 minutes so it's been 45 minutes i went and checked the dressing at 30 minutes and it just wasn't done enough for me in the middle so after 45 minutes the dressing is good and done now this like i said was a 9x13 and then i put some in a littler pan to to share with somebody the pan i usually use is about a 15 oh i forget the measurements it's 15 long i can't remember how wide but anyways of course if you double this recipe you're going to need two good sized pans for your dressing but anyways there is your southern cornbread dressing to put at your thanksgiving table this is of course a southern necessity at our table and you've seen how easy it was to put together and like i said whether if you use a chicken or turkey either one is going to work so i hope you all like this recipe and i want to show y'all something it's behind the scenes dirty dishes now these are clean dishes but this is what y'all don't see you come in from work and you cook supper and make dressing this is really what our sinks look like i know a lot of times some of the videos it's a very clean kitchen with no dirty dishes and ain't gonna happen in my kitchen but anyways i hope y'all like this recipe um like i said a lot of y'all are new at this or new at putting a thanksgiving meal on the table this is easy and i hope you'll try it down south we have cornbread dressing i think in different states they have stuffing and it's all good but anyways i'll put the recipe below in the description box and uh of course the first video was cooking a slow cooker turkey breast and it turned out great so this is my second video second day on the thanksgiving menu and it is cornbread dressing so our third day for the thanksgiving meal is going to be homemade macaroni and cheese and i think i'm going to do some kind of potato i'm not sure yet so y'all come back another day probably friday it's going to upload the macaroni and cheese and we'll just keep going from there until we get to our desserts so goodbye everybody and god bless
